Time 20m

Number Of Ingredients 5

2 sleeves, ritz crackers
1 - 11.5 oz package, semi sweet or milk chocolate chips
1 tsp crisco, shortening
peanut butter - i use crunchy
crushed nuts ( optional )

Steps:

  • 1. Spread about a teaspoon of peanut butter on 1 sleeve of crackers.
  • 2. Top with the other sleeve of crackers.
  • 3. In a microwave safe bowl, melt the chocolate chips and Crisco. Stir several times to blend well. You may need to microwave for a couple seconds in between when dipping the crackers to keep the chocolate soft.
  • 4. Dip crackers, covering well and place on cookie sheets covered with wax paper. ( I then sprinkled with some chopped pecans.) Chill to set and store in air tight containers. Note: I find that using clean fingers to swirl on the chocolate works well. Also, kids and big kids, love to join in the fun...as they get to lick off their fingers when done...lol!

I make these quite often and they are so good and easy. I first ate these at a family reunion and could not find out who made them so I looked around until I found the recipe.

Number Of Ingredients 9

1 c pecans, chopped
1 can(s) eagle brand milk
1 c dates, chopped
1 box ritz crackers
ICING:
8 oz cream cheese, room temperature
1/4 c butter, softened
1 tsp vanilla extract
1 box confectioners' sugar

Steps:

  • 1. Cook pecans, dates and milk over low heat until thick. Cool. Put a spoonful on each cracker. Place on a cookie sheet and bake for 8 min. at 350 degrees. Cool.
  • 2. ICING: Mix cream cheese, butter, vanilla and confectioner's sugar until smooth. Blend well. Ice every cracker. I make one stripe down each cracker. This makes them look prettier but you will have some icing left-over. I also rather use Town House Original Topper crackers because they have an indentation on top.
