ABSOLUTELY THE BEST AMISH BEEF STEW

Absolutely the Best Amish Beef Stew image

This is just what its name implies...the absolute best beef stew ever. It is wonderful in the colder weather and really warms you up. I got the basic recipe from an old Amish cookbook and tweeked it a bit. My family loves it with home baked bread, so I always make Amish White Bread, recipe #26526 to go along with it.

Time 3h15m

Yield 6-8 serving(s)

Number Of Ingredients 16

2 -3 lbs boneless beef cubes
2 tablespoons shortening
1 large onion, sliced
4 cups boiling water
1 tablespoon salt
1 tablespoon lemon juice
1 tablespoon sugar
1 tablespoon Worcestershire sauce
1/2 teaspoon pepper
1 1/2 teaspoons paprika
1 dash allspice
1 dash clove
6 carrots, peeled and cut into chunks or 1 lb peeled baby carrots
6 potatoes, peeled and cut into chunks
1/2 cup cold water
1/4 cup flour

Steps:

  • Melt shortening over high heat in a large pot or dutch oven.
  • Add beef cubes and brown over medium heat, stirring occasionally, about 15-20 minutes.
  • Add onions, boiling water, salt, lemon juice, sugar, worcestershire sauce, pepper, paprika, allspice and cloves.
  • Simmer, tightly covered, for about 2 hours, stirring occasionally.
  • Add vegetables and simmer another 30 minutes (covered), or until tender.
  • Note: if your lid is not tight on the pot, you may not have enough liquid left to just about cover everything after you add the veggies.
  • If this is the case, add more water to barely cover ingredients.
  • Mix cold water and flour together and blend until smooth.
  • Push meat and veggies to the side of the pot and add flour mixture slowly, incorporating into liquid.
  • When gravy thickens, stir all ingredients gently to distribute gravy evenly.
  • Simmer another 5 or 10 minutes and enjoy!

Time 3h30m

Yield 4-6 serving(s)

Number Of Ingredients 25

2 slices bacon
1 lb beef top round steak, trimmed and cut into 3/4-inch chunks
1 tablespoon flour
1 tablespoon McCormick's Montreal Brand steak seasoning
1 tablespoon smoked paprika
1/2 lb white onion, chopped
4 carrots, cut into 1 1/2-inch pieces
2 celery ribs, cut into 1 1/2-inch pieces
3 garlic cloves, finely chopped
1 (12 ounce) bottle dark beer
1 cup strong black coffee
1 cup nonfat beef broth
1 tablespoon Splenda brown sugar blend
2 tablespoons ketchup
1 tablespoon HP steak sauce
1/2 teaspoon Worcestershire sauce
1/4 teaspoon crushed red pepper flakes
1 lb yukon gold potato, peeled and cut into 3/4-inch chunks
1/2 lb green beans, trimmed and halved
1/2 lb mushroom, halved
1/2 lb turnip, diced
2 bay leaves
1 tablespoon cornstarch
1/4 cup water
1 teaspoon herbes de provence

Steps:

  • Cook the bacon in a nonstick Dutch oven set over medium heat until crisp. With a slotted spoon, transfer to a paper towel to drain. Remove all but 2 teaspoons of the drippings from the Dutch oven.
  • Meanwhile, pat the beef chunks dry with paper towels; Put the beef, flour, paprika and Montreal steak spice and flour in a large zip-close plastic bag. Shake the bag until the beef is evenly coated with the flour.
  • Heat the drippings in the Dutch oven over medium-high heat. Add half of the beef and cook until browned on all sides, about 5 minutes. Transfer to a plate. Repeat with the remaining beef.
  • (Don't worry if it looks like it is overcooking -- once you add the veggies the crust on the bottom of the pan will scrape up easily and will add flavour and richness to the stew!).
  • Crumble the bacon; set aside.
  • Add the onions, carrots, celery, turnip, mushrooms, green beans and garlic to the Dutch oven. Cook, stirring frequently to scrape up the browned bits from the bottom of the pot, until the onions are golden, about 3 minutes. Stir in the beef, bacon, beer, coffee, beef broth, ketchup, HP sauce, Splenda Brown sugar, Worcestershire sauce, bay leaves, crushed red pepper, and bring to a boil. Reduce the heat and simmer, partially covered, 2 hours. Add the potatoes and simmer until the beef and potatoes are fork-tender, about 40 minutes.
  • Add more beef broth if it becomes too dry as the potatoes cook.
  • Gradually mix the corn starch with water in a seperate cup until smooth. Add to the simmering stew. Stir until thickened.
  • Mix in Herbes de Provence 15 minutes prior to serving.

CLASSIC BEEF STEW

Classic Beef Stew image

Aromatic and satisfying, a comforting bowl of beef stew always hits the mark on extra chilly nights. Here, seared pieces of marbled beef simmer away until fall-apart-tender in broth, with punchy aromatics added to it like tomato paste, Worcestershire sauce, red wine, and fire-roasted tomatoes for a subtle smokiness.

Time 3h25m

Number Of Ingredients 14

2 pounds beef chuck (preferably grass-fed), cut into 2-inch pieces
Kosher salt and freshly ground pepper
Unbleached all-purpose flour, for dusting
3 tablespoons extra-virgin olive oil
10 ounces frozen pearl onions, thawed, drained, and patted dry
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
3/4 cup dry red wine, such as Cabernet Sauvignon
2 cups low-sodium chicken broth
1 can (14.5 ounces) fire-roasted diced tomatoes
4 carrots (8 ounces), peeled and cut into 1 1/2-inch pieces
3 Yukon Gold potatoes (1 pound), peeled and cut into 1 1/2-inch pieces
1 cup frozen peas (optional)
Chopped fresh parsley leaves, for serving

Steps:

  • Generously season beef with salt and pepper. Dust with flour and shake off excess. Heat a Dutch oven or other heavy-bottomed pot over medium-high, and swirl in 2 tablespoons oil.
  • Add half of beef in a single layer and cook, turning a few times, until browned in places, 5 to 7 minutes. Transfer to a plate, leaving fat in pot. Brown remaining beef; transfer to plate.
  • Preheat oven to 350°F. Swirl remaining 1 tablespoon oil into pot, still over medium-high heat. Cook onions until golden, 3 to 4 minutes. Add tomato paste and cook, stirring frequently, until caramelized, 1 minute. Add Worcestershire sauce and wine; boil until mostly evaporated.
  • Return beef and any accumulated juices to pot with broth and tomatoes. Bring to a boil. Cover pot, transfer to oven, and cook 1 1/2 hours. Remove pot from oven and stir carrots and potatoes into stew. Cover and continue cooking in oven until beef is fork-tender and vegetables are easily pierced with the tip of a knife, about 1 hour more. Stir in peas; return to oven for 5 minutes more, just to heat through.
  • Ladle stew into shallow bowls, sprinkle with parsley, and serve. Cooled stew can be transferred to an airtight container and refrigerated up to 2 days, or frozen up to 3 months.

HERBED BEEF STEW

Herbed Beef Stew image

This is the best beef stew I have ever tasted and I am a huge fan of stew and have eaten a ton of it over my life. I found this recipe in a Light and Tasty catalog several years ago while at the dentists office. Of course I couldn't steal the recipe out of it but I immediately went on the hunt for it as soon as my root canal had calmed down and it was well worth the hunt. Everyone who tastes this stew begs for the recipe. I hope you all enjoy it as much as we do.
