½ cup finely chopped PLANTERS Pecans
¼ cup butter, melted
4 (8 ounce) packages PHILADELPHIA Cream Cheese, softened
1 cup sugar, divided
1 teaspoon vanilla
4 eggs
1 cup canned pumpkin
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Dash of ground cloves

Steps:

  • Preheat oven to 325 degrees F. Mix ginger snap crumbs, pecans and butter; press firmly onto bottom and 1 inch up side of 9-inch springform pan.
  • Beat cream cheese, 3/4 cup of the sugar and the vanilla with electric mixer until well blended. Add eggs, one at a time, mixing on low speed after each addition just until blended. Remove 1-1/2 cups of the batter; place in small bowl. Stir remaining 1/4 cup sugar, the pumpkin and spices into remaining batter. Spoon half of the pumpkin batter into crust; top with spoonfuls of half of the reserved plain batter. Repeat layers. Cut through batters with knife several times for marble effect.
  • Bake 55 min. or until center is almost set. Cool completely. Refrigerate 4 hours or overnight. Cut into 16 slices. Store leftover cheesecake in refrigerator.

3 eggs
1 cup canned pumpkin
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Dash ground cloves

Steps:

  • MIX ginger snap crumbs, pecans and butter; press onto bottom and 2 inches up side of 9-inch springform pan.
  • BEAT cream cheese, 3/4 cup of the sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition, just until blended. Reserve 1 1/2 cups of the plain batter. Stir remaining 1/4 cup sugar, pumpkin and spices onto remaining batter.
  • Spoon 1/2 of the pumpkin batter over crust; top with spoonfuls of 1/2 of the reserved plain batter. Repeat Layers. Cut through batters with knife several times for marble effect.
  • BAKE at 325 degrees F for 55 minutes or until center is almost set if using a silver springform pan. (or, bake at 300 degrees for 55 minutes or until center is almost set if using a dark nonstick springform pan.) Loosen cake from side of pan; cool before removing rim of pan.

Filling
4 8-ounce packages cream cheese, room temperature
1 2/3 cups sugar
1 1/2 cups canned solid pack pumpkin
9 tablespoons whipping cream
1 teaspoon ground cinnamon
1 teaspoon ground allspice
4 large eggs
1 tablespoon (about) purchased caramel sauce
1 cup sour cream

Steps:

  • For Crust:
  • Preheat oven to 350°F. Finely grind ground cookies, pecans and sugar in processor. Add melted butter and blend until combined. Press crust mixture onto bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides.
  • For Filling:
  • Using electric mixer, beat cream cheese and sugar in large bowl until light. Transfer 3/4 cup mixture to small bowl; cover tightly and refrigerate to use for topping. Add pumpkin, 4 tablespoons whipping cream, ground cinnamon and ground allspice to mixture in large bowl and beat until well combined. Add eggs 1 at a time, beating just until combined. Pour filling into crust (filling will almost fill pan). Bake until cheesecake puffs, top browns and center moves only slightly when pan is shaken, about 1 hour 15 minutes. Transfer cheesecake to rack and cool 10 minutes. Run small sharp knife around cake pan sides to loosen cheesecake. Cool. Cover tightly and refrigerate overnight.
  • Bring remaining 3/4 cup cream cheese mixture to room temperature. Add remaining 5 tablespoons whipping cream to cream cheese mixture and stir to combine. Press down firmly on edges of cheesecake to even thickness. Pour cream cheese mixture over cheesecake, spreading evenly. Spoon caramel sauce in lines over cream cheese mixture. 8 graham cracker sheets (5 ounces), finely ground (1 cup)
2 tablespoons unsalted butter, melted
2 tablespoons sugar
2 pounds cream cheese, room temperature (four 8-ounce bars)
1 1/2 cups plus 2 tablespoons sugar
Pinch of salt
1 teaspoon vanilla extract
4 large eggs, room temperature
1 cup solid-pack pumpkin puree
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg

Steps:

  • Crust: Preheat oven to 350 degrees. Line the bottom of a 9-inch springform pan with a parchment round.
  • Stir together graham cracker crumbs, melted butter, and sugar in a medium bowl. Press crumb mixture firmly onto bottom of pan. Bake until set, about 10 minutes. Transfer pan to wire rack to cool completely.
  • Filling: Reduce oven temperature to 325 degrees. Wrap exterior of 9-inch springform pan containing crust with a double layer of foil. Set a kettle of water to a boil. Steps:

  • Preheat the oven to 325°F (160°C). Grease a 9 x 13-inch (22 x 33 cm) baking dish with nonstick spray. Place a 12-inch (30 cm) sheet of parchment paper in the baking dish crosswise to create a sling.
  • In a food processor, pulse the gingersnap cookies until finely ground. Add to a large bowl with the melted butter and mix to combine. The cookie crumbs should look like wet sand.
  • Transfer the cookie crumb mixture to the prepared baking dish and press against the bottom in an even layer. Place in the freezer while you make the filing.

  • Mix canned pumpkin, oil, and sugar together, either by hand or with a mixer on low.
  • Add in eggs, one at a time, combining thoroughly after each.
  • Add vanilla.
  • Whisk together flour, baking powder, baking soda, salt, and spices.

8 whole graham crackers
1/2 cup hazelnuts, toasted
1/4 cup sugar
1/4 cup butter, cut up
2 (8 ounce) packages low-fat cream cheese, softened (Neufchatel)
1 cup sugar
2 tablespoons cornstarch
2 teaspoons vanilla extract
1/2 cup reduced-fat sour cream
2 large eggs, plus
2 large egg whites
3/4 cup white chocolate chips
1 (15 ounce) can canned solid-pack pumpkin (not pumpkin pie mix)
3/4-1 teaspoon ground cinnamon
1/2 teaspoon ginger
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg

Steps:

  • Toast nuts: Spread in baking pan.
  • Bake, in 350 oven, 8-10 minutes until lightly browned and papery skins begin to flake.
  • Turn hazelnuts out onto a towel and rub off skins.
  • Leave oven at 350.
  • Wrap foil over bottom and halfway up out side of 8-inch springform pan to keep butter from dripping out.
  • Lightly coat the 8-inch springform pan with cooking spray.
  • Crust: break crackers into a food processor.
  • Add hazelnuts, sugar and butter.
  • Process until fine crumbs form.
  • Press firmly over bottom and 1 1/2 inch up sides of prepared pan.
  • Filling: Beat cream cheese in a large bowl with mixer on high speed until smooth.
  • On low speed, beat in sugar, cornstarch, vanilla, and sour cream, scrapping down sides of bowl often, until well blended.
  • Add eggs and egg whites; beat just until mixed.
  • Melt the chocolate chips according to the package directions.
  • Add 1 1/2 cups of cheese mixture and stir until well blended.
  • Stir pumpkin and spices into remaining cheese mixture until well blended.
  • Reserve 1/4 C; pour rest into crust.
  • Pour the chocolate mixture onto pumpkin pumpkin batter in a thick ring about 1/2 inch from sides of pan.
  • Top with dollops of reserved 1/4 C pumpkin batter.
  • Run a knife through both batters for a marble effect.
  • Don't overdo or the effect will be muddied.
  • Bake 1 hour 15 minutes or until wooden pick inserted 2 inches from center of cake comes out clean.
  • Carefully run a knife around inside edge of pan to release cake.
  • Cool on a wire rack, then cover and refrigerate in pan at least 4 hours or up to 1 week.
  • Can be frozen up to 3 months.
  • Thaw in refrigerator 2 days before serving.
  • To serve: remove pan sides.
  • Place on a serving plate.

1 pastry crust, 9 inch (refrigerated or your own recipe)
3/4 cup fat-free sweetened condensed milk, divided
1 (8 ounce) package fat free cream cheese, softened
4 ounces reduced-fat cream cheese, softened
1 tablespoon vanilla extract
1/4 teaspoon salt
2 large eggs, divided
1 large egg white
2/3 cup canned unsweetened pumpkin puree
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice

Steps:

  • Prepare and bake the Pastry Crust in a 9-inch round removable-bottom tart pan.
  • Cool crust completely on a wire rack.
  • Preheat oven to 300º.
  • Combine 1/2 cup condensed milk and the cream cheeses in a medium bowl; beat at medium speed of a mixer until smooth.
  • Add vanilla, salt, 1 egg, and egg white; beat until combined.
  • Spoon 1/2 cup cream cheese mixture into a small bowl; add 1/4 cup condensed milk, 1 egg, pumpkin, cinnamon, ginger, and allspice, stirring well with a whisk.
  • Pour remaining cream cheese mixture into prepared crust.
  • Pour pumpkin mixture over cream cheese mixture; swirl together using a knife.
  • Bake at 300º for 50 minutes.
  • Turn oven off; cool tart in closed oven 45 minutes.
  • Remove from oven; cool completely on a wire rack.
  • Cover; chill.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3 Tbsp. brown sugar
1 tsp. vanilla
1/2 tsp. ground cinnamon
1/2 cup canned pumpkin
1 cup (about 1/3 of 8-oz. tub) thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350°F.
  • Spray 16 muffin pan cups with cooking spray. Unroll 1 pie crust onto lightly floured surface; cut into 8 rounds with 3-inch cookie cutter. Use to line 8 prepared muffin pan cups. Repeat with second pie crust.
  • Gather pastry trimmings; press into ball. Place on lightly floured surface; roll out to 1/4-inch thickness Use cookie cutter or sharp knife to cut pastry into small leaf shapes. Place on baking sheet; place in oven along with the filled muffin pan cups.
  • Bake 8 to 10 min. or until pastry leaves are lightly browned. Remove baking sheet from oven. Continue baking crusts 3 to 5 min. or until golden brown; cool in pan 5 min. Remove crusts and leaves to wire racks; cool completely.
  • Beat cream cheese, sugar, vanilla and cinnamon until blended. Add pumpkin; mix well.
  • Spoon cream cheese mixture into one side of pastry bag fitted with star tip, then fill other side of bag with COOL WHIP. Use to fill pastry cups, in swirled pattern as shown in photo, with both mixtures. Top with pastry leaves.

1/2 stick unsalted butter (4-tablespoon)
3 tablespoon sugar
1/4 teaspoon salt
FILLING:
5 (8-ounces) packages cream cheese (2.5 pounds)
1 1/2 cups sugar
5 large eggs
2 large egg yolks
3 tablespoon all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon dry ginger
1/4 teaspoon cloves
1/2 cup sour cream
1 cup canned 100% pumpkin
MAPLE GLAZE:
1/2 cup Grade A maple syrup
1 teaspoon lemon zest
1/4 teaspoon cracked black pepper
1/4 cup chopped Fisher® Pecan Halves

Steps:

  • Preheat oven to 350°F. Wrap the outer bottom and sides of a 9-inch springform pan tightly with 2 pieces of aluminum foil. Make the crust: Place pecans in the bowl of the food processor and pulse until they form coarse crumbs. Add the butter, sugar, and salt to the crumbs and pulse until well blended. Transfer to the bottom of the springform pan and press into an even layer. Place the pan in the center of the oven and bake the crust for 12-15 minutes or until the crust is golden brown. Your kitchen will smell wonderfully of pecans! Set aside to cool. Make the filling: Place cream cheese in the bowl of an electric mixer fitted with the paddle attachment. Beat the cream cheese on medium speed until fluffy, 2-3 minutes. Add the sugar and continue mixing. 1/2 teaspoon cinnamon
Pinch of cloves, ginger, and nutmeg

Steps:

  • preheat your oven to 350 F, springform pan, and a deep baking pan your springform fits in. Crumb up the graham crackers in the blender or tossing them in a baggie and pounding.mix the graham cracker crumbs with the room temperature butter and then press into the bottom of the spring form In a mixing bowl, add the room temperature cream cheese, sugar, sour cream, vanilla, and eggs, and whip with a hand held blender until smooth. Now add the dash of salt and lemon zest and let sit while you make the pumpkin filling. In a small mixing bowl, stir together the pumpkin puree, brown sugar, cinnamon, and dashes of cloves, ginger and nutmeg. Now pour half of the cheesecake filling into the springform pan. Dollop that with about three-fourths of the pumpkin mixture, and then ladle the rest of the cheesecake batter on top. Drop the last bits of the pumpkin over the top of the cheesecake and then swirl and marble by pulling a toothpick forward and back and side to side a couple of times. so place the springform pan in the deep baking dish and heat up about 4 cups of water until just about boiling. Place the deep baking dish holding your cheesecake into the oven and then pour the hot water around the outside of the springform pan into the deep baking dish just until about 1-inch of the bottom of the pan is full. Set your kitchen timer for 60-minutes remove the cheesecake from the oven let your cheesecake rest for at least 30-minutes. Run a knife around the outside edge of the cheesecake

1 cup canned pumpkin

dash ground cloves

Steps:

  • Heat oven to 325°F.
  • Combine gingersnap crumbs, nuts and butter; press onto bottom of 13x9-inch pan.
  • Beat cream cheese, 3/4 cup sugar and vanilla with mixer until blended. Add eggs, 1 at a time, beating on low speed after each just until blended. Remove 1-1/2 cups batter; set aside. Stir remaining sugar, pumpkin and spices into remaining batter.
  • Pour half the pumpkin batter over crust; top with spoonfuls of half the plain batter. Repeat layers; swirl gently with knife.
