The first pumpkin pies were nothing like we make today. The most available sweetener was maple syrup, REAL maple syrup. I decided to try adding that to these pies and what a difference! This is my husband's favorite pie, using actual pumpkins that we grow. Using REAL maple syrup is key to the flavor. For extra special times, I serve with maple-sweetened whipped cream.

1 small sugar pumpkin
¾ cup packed brown sugar
1 ¼ teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
¼ teaspoon ground cloves
⅛ teaspoon ground allspice
½ teaspoon salt
⅔ cup real maple syrup
1 ¼ cups half-and-half cream
1 teaspoon all-purpose flour
3 eggs
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 375 degrees F (190 degrees C)
  • Cut up pumpkin, and remove seeds. Place in large baking pan, and cover with foil or lid. Bake for 1 hour, or until very tender. Remove from oven, and set aside to cool. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Scrape pumpkin into a food processor; puree until smooth. Measure 1 1/2 cups pumpkin puree. In a large bowl, mix together 1 1/2 cups pumpkin, brown sugar, cinnamon, ginger, nutmeg, cloves, allspice, and salt. Stir in maple syrup, half-and-half, and flour. Mix in eggs one at a time. Pour filling into unbaked pie shell.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until center is set.

1 cup chopped sweet onion
2 cups chopped spinach leaves
4 wedges Laughing Cow light swiss cheese, room temperature
1 (15 ounce) can pumpkin puree
1 1/4 cups fat-free liquid egg substitute (like Egg Beaters Original)
2 teaspoons chopped garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees. Spray a 9" pie pan with nonstick spray and set aside.
  • Bring a large skillet sprayed with nonstick spray to medium-high heat on the stove. Add onion and, stirring occasionally, cook until softened and slightly browned, about 6 minutes.
  • Transfer cooked onion to a large bowl and set aside. Remove skillet from heat. If needed, wash and dry. Spray with nonstick spray and return to medium-high heat. Stir occasionally, cook until softened and lightly browned, about 4 minutes. Add spinach and cook until wilted and excess moisture has evaporated, about 2 more minutes.
  • Transfer spinach mixture to the large bowl. Add cheese wedges, breaking them into pieces as you add them. Mix thoroughly, until cheese has melted and is evenly distributed. Add all remaining ingredients to the bowl and mix well. Evenly transfer mixture to the pie pan.
  • Bake in the oven until firm and lightly browned on top, about 1 hour.
  • Allow to slightly cool. Cut into 8 slices and enjoy!

Cheesecake ranks as "Supreme" among desserts. I prefer the kind that does not have a crust, such as "New York" style. I find the 9 inch cheesecakes make too much for my needs, so I like the 7 inch size. This Cheesecake will serve 10-12 slices and that is plenty for most of my occasions. I offer this as a very nice alternative to the "Pumpkin Pie". This recipe improves after a couple days in the fridge, so it is definitely a "make ahead" thing. I really like that! If I can make it ahead..."All the Better". I hope you include this wonderfully delicate dessert for one of your Holiday Meals.

1 pound(s) cream cheese 2 (8 oz packages)
1/3 cup(s) sour cream
3 tablespoon(s) butter,unsalted,melted,cooled
1 cup(s) pumpkin puree
2/3 cup(s) dark brown sugar
2 large eggs plus 1 yolk
2 tablespoon(s) all purpose flour
1 tablespoon(s) cornstarch
1 teaspoon(s) pumpkin pie spice
1/4 teaspoon(s) salt
1 teaspoon(s) vanilla extract

Steps:

  • Grease a 7 inch springform pan with butter. Wrap the outside of pan with two layers of heavy duty foil. Scrunch to form tightly around the pan. Fold down sides to not extend above the pan.
  • Before you start the batter, put a tea kettle of water on the burner to bring to a boil. This will be used to bake cheesecake in a water bath (Bain Marie).
  • Place all of the ingredients in a food processor and blend until homogonous (totally smooth). It is best to have ingredients at room temperature for this recipe.
  • Fill the prepared pan with the batter.
  • Select a baking pan with sides lower than the cheesecake pan and a little wider that the cheesecake pan. Place a non-colored tea towel that is folded to fit perfectly flat in the bottom of the pan.
  • Place the springform pan with the batter on top of the tea towel.
  • The water you have put on to boil should be boiling by now. Pour boiling water in the outer pan to come at least half way up the outside of the inner pan (the cake pan).
  • Carefully place the two pan combo in an oven heated to 325 degrees. Bake without opening oven for 1 hour and 25 minutes. Turn off oven and don't open the door for 1 hour more. After the total 2 hours and 25 minutes, crack the oven door and leave the cake to cool for an additional hour.
  • Remove the cake from the oven and remove the cake from the water bath...also remove the outer layer of foil. Be careful not to drip water on the top of the cheesecake.
  • Chill at least 4 hours in the fridge before serving. Keep covered with a dome. Do not place plastic on top of cake.
  • Use a wet knife to slice cake and a pie server to lift from the springform bottom. Serve with a dollop of whipped cream.

1 cup white sugar
.66 cup pumpkin
1 teaspoon lemon juice
¾ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 cup chopped walnuts
1 (8 ounce) package cream cheese
2 tablespoons butter
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 10x15 inch jelly roll pan.
  • In a large bowl, beat eggs until fluffy. Beat in sugar until fluffiness resumes. Stir in pumpkin and lemon juice. In a separate bowl, combine flour, baking powder, salt, cinnamon and nutmeg. Fold dry ingredients into pumpkin mixture. Spread in prepared pan; sprinkle with nuts.
  • Bake in preheated oven 15 minutes. Sprinkle a kitchen towel with confectioner's sugar. Turn cake out onto towel while still hot. Carefully roll cake in towel, long ends together, and let cool completely.
  • To Make Filling: In medium bowl, cream together cream cheese, butter and confectioners' sugar. Stir in vanilla.
  • Carefully unroll cooled cake and remove kitchen towel. Spread cake with filling and re-roll. Refrigerate until ready to serve.

1.5 cups graham cracker crumbs
1.75 cups sugar
0.5 cups margarine
8 ounces cream cheese
2 units eggs
0.75 cups milk
5 boxes vanilla instant pudding
2 cups pumpkin
1 dashes cinnamon
1 dashes nutmeg
1 containers whipped topping
0.75 cups pecans

Steps:

  • Combine graham cracker crumbs, 3/4 sugar and margarine. Mix well and press into a 9 X 13 baking dish.
  • Combine cream cheese and 1 cup sugar. Add eggs and beat until light and fluffy. Pour cream cheese mixture over graham cracker mixture.
  • Bake at 350 degrees for approximately 20 minutes until lightly browned. Remove from oven and cool completely.
  • Combine milk and Jell-0 brand vanilla instant pudding. Mix well, and then add pumpkin, cinnamon and nutmeg (to taste). Fold in one cup Cool Whip whipped topping. Spread over cooled crust.
  • Top with remaining Cool Whip topping and sprinkle with chopped pecans. Refrigerate for at least 3 hours before serving.
