- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
- Prepare streusel topping by combining flour, dark brown sugar, espresso powder, cocoa powder, pumpkin pie spice, vanilla extract, and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs. Set aside.
- Prepare the cake batter by whisking flour, espresso powder, pumpkin pie spice, baking powder, baking soda, and salt together until thoroughly combined. Set aside.
- Cream butter and white sugar together in a large bowl with an electric mixer until light and fluffy. Mix in eggs one at a time, beating well after each addition. Mix in pumpkin puree and vanilla. Stir in 1/3 of the dry ingredients, mixing until just combined. Mix in 1/2 of the cooled coffee and 1/2 of the heavy cream, stirring until just combined. - Preheat the oven to 400 degrees F (200 degrees C). Spray a 10-inch fluted tube pan (such as Bundt®) with cooking spray. Coat with cinnamon sugar.

PUMPKIN SPICE SYRUP (FOR COFFEE OR TEA)
I purchased from World Market a 16.5 oz. bottle of Pumpkin Spice Syrup by Torani with the inscription "Authentic Coffehouse Flavor" for $5.99. According to the ingredient list, it was basically caramel sauce with nutmeg. That's it...caramel sauce and one spice with no pumpkin whatsoever and expensive. Though it was tasty, in order to get a good infusion of the spice, quite a bit needed to be added to each serving. The recipe below is basic. Vanilla may be added and can imagine pumpkin puree or caramel sauce being a good addition, as well.

- Combine the flour, brown sugar, pumpkin pie spice and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
- Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
- Whisk together the flour, baking powder, baking soda and salt in a small bowl.
- Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
- Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle half of the crumb topping over the batter. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the remaining crumb topping. Drizzle the dulce de leche over the top.
- Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.

PUMPKIN SPICE CASHEW COFFEE CREAMER
Rich and creamy vegan non-dairy pumpkin spice coffee creamer! It's so simple - just cashews, pumpkin, spices, maple syrup, and water. Cozy up!

- Place cashews in a bowl. Cover with water and let soak overnight. Alternately, use the quick-soak method by boiling the water first. Soaking time will be reduced to 20-30 minutes.
- Strain and rinse cashews. Discard soaking water. Add soaked cashews to the pitcher of a blender (preferably high-speed like Vitamix). Add 1 1/2 cups water, 2 tablespoons maple syrup, pumpkin puree, pumpkin pie spice mix, and salt. Puree until completely smooth, about 1 minute on high.
- Taste and add more pure maple syrup if desired. I don't like super sweet coffee creamer, and I find that about 3 tablespoons total is my sweet spot. No pun intended.
- The following step is completely optional, but if you'd like an extra smooth creamer, you can strain it through a nut milk bag or a fine-mesh sieve lined with cheesecloth (the nut milk bag is much easier). But I usually skip this step.
- Use the creamer right away, or pour it into an airtight container and refrigerate until ready to use. I stir about 2-3 tablespoons into each cup of coffee. Keeps for about 5 days. It may separate a bit in the fridge; simply give it a shake before using.
PUMPKIN PIE SPICE COFFEE
As I can't have neither dairy nor soy and rice milk cannot be steamed, I thought of another way to get a creamy "cappuccino". If you have fresh organic eggs which are safe to eat raw or warmed, make this as suggested. If not, just use steamed milk or soymilk on top of your coffee! But I found this to be a great protein post work out snack.

- Brew coffe as you're used to. It should be really steaming hot. Stir in molasses.
- Place egg, rice milk and pumpkin pie spice in a blender and blend until foamy.
- Slow speed down and slowly drizzle in the steaming hot, sweetened coffe.
- As soon as all coffee is incorporated in the egg mixture, give it another whirl at high speed.
- Serve immediately.
- If made with steamed milk, stir half of the spice and molasses into the coffee and heat the other half of the spice with the milk. Steam milk and top coffee with steamed spiced milk.
