2-3/4 cups sugar
6 eggs, room temperature
1 teaspoon vanilla extract
3 cups all-purpose flour
3/4 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup canned pumpkin
WALNUT SAUCE:
1 cup packed brown sugar
1/2 cup heavy whipping cream
1/4 cup corn syrup
2 tablespoons butter
1/2 cup chopped walnuts
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the dry ingredients; add to creamed mixture alternately with pumpkin, beating just until combined. , Pour into two greased and floured 9x5-in. loaf pans. Bake until a toothpick inserted in the center comes out clean, 65-70 minutes. Cool for 10 minutes before removing form pans to wire racks to cool completely., For sauce, combine brown sugar, cream, corn syrup and butter in a saucepan. Bring to a boil over medium heat, stirring constantly. Reduce heat; cook and stir 5 minutes longer. Remove from the heat; stir in walnuts and vanilla. Serve warm over the cake.

Steps:

  • Preheat oven to 300 degrees F.
  • Spray the loaf pan heavily with vegetable spray and sprinkle with the wheat bran, shaking the pan to coat on all sides--this will prevent sticking.
  • In a bowl whisk together the almond flour, sugar substitute, baking powder, pie spice, and salt. In another bowl, beat the eggs and then whisk in the pumpkin and vanilla. Combine the dry and wet ingredients and stir until combined. Pour the batter into the prepared pan and stir to combine.

Pecan Streusel Ingredients:
1/4 cup firmly packed light brown sugar
1/4 cup all-purpose flour
1 teaspoon cinnamon
2 tablespoon cold butter
1 cup chopped pecans
1/2 cup cinnamon chips (optional - you can find these seasonally at some grocery stores or online from King Arthur's Flour)
Maple Brown Sugar Glaze Ingredients:
2 tablespoon butter
4 tablespoons milk
1/2 cup brown sugar
2 tablespoons real maple syrup
pinch salt
1 1/2 - 2 cup powdered sugar (I ended up using just 1 1/2)
cinnamon for sprinkling

  • Toast pecans: Preheat the oven to 350 degrees F. Spread pecans out on a baking sheet, and bake for 4-6 minutes or until fragrant, stirring and flipping nuts once in the middle. Spread the nuts out on a plate to cool. Leave the oven on for the cake. Make the creamy pumpkin pie filling: In your electric mixer, or with a hand mixer, beat the cream cheese until smooth. Add the sugar and beat until fluffy and smooth. Add the pumpkin, egg, and vanilla extract, cinnamon, nutmeg, ginger, and allspice and mix until combined. Set in fridge while you make your cake. Make the streusel: Combine the flour and brown sugar in a medium bowl and using two knives or a pastry cutter, cut in the butter until you have crumbly streusel. Mix in the cinnamon chips (if you're using them) and 1/2 cup of the cooled toasted pecans (if they haven't completely cooled, stick 'em in the fridge for a bit first - you don't want to mix warm nuts into this and melt your butter, since it should stay cold). Save the rest of your nuts for decorating the finished cake. Set the streusel aside. Make the pound cake: Beat the butter and cream cheese on medium speed for about 2 minutes or until it's creamy. Gradually add sugar and beat 5-7 minutes until light and fluffy. Add the eggs one at a time, beating only until yellow disappears after each one. Stir in the vanilla. Whisk the flour and salt together in a bowl and add to creamed mixture gradually, beating on low speed after each addition and scraping down the sides of the bowl as needed. Pour/dollop 1/3 of the batter into greased and floured 10-inch tube pan and use a spatula to smooth it right up against the sides of the pan and level it. Dump your streusel into your pumpkin pie mixture and fold it together a few times to loosely mix - you're not trying to combine them completely. Fill a 2-cup ovenproof measuring cup with water and place in oven with cake (this keeps it moist!). Bake the cake at 350 degrees for 1 hour 30 minutes to 1 hour 55 minutes (the original recipe said 1 hour and 10 minutes, but this was way too short for me. Nevertheless, you should start checking early and often just in case. This is a good practice, also, because you may have to cover the top with foil if it's getting too brown). To test for doneness, insert a wooden skewer in a few different areas of the cake and pull it out. You want it to come out with just a few moist crumbs (no liquid batter, but not completely clean either). Let the cake cool on wire rack for 10 minutes before running a knife around the edge of the pan. Remove the cake from the pan by topping the pan with a plate and carefully inverting it. Then invert the cake again onto another plate so that it's right-side up. Let cool completely (at least 1 hour). Make the Maple Brown Sugar Glaze: Combine the butter and milk in a small saucepan over medium heat. When the butter melts, whisk in the brown sugar, syrup, and salt, whisking until the brown sugar melts. Remove the pan from the heat and whisk in the powdered sugar, starting with 1 cup and adding more to thicken per your preference (taste as you go to ensure you don't oversweeten). Drizzle the glaze over the top of your cooled cake. Sprinkle the cake with toasted pecans immediately (the glaze sets quickly) and dust with cinnamon. Serve immediately. I recommend making this recipe in the food processor; the texture does not come out quite right any other way.   • Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening; lightly flour (or spray with baking spray with flour). In 1-quart saucepan, heat condensed milk and chocolate chips over medium-low heat, stirring occasionally, until chocolate is melted. Remove from heat; set aside.
  • In medium bowl, mix flour, baking powder, baking soda, pumpkin pie spice and salt until blended; set aside.
  • In large bowl, beat 1 1/2 cups butter, the granulated sugar and brown sugar with electric mixer on medium speed about 2 minutes or until well blended. Add eggs, one at a time, beating well after each addition. On low speed, beat in flour mixture in 3 additions alternately with pumpkin until well blended (batter will be thick).

  • Thoroughly spray 10-inch tube pan or 12-inch Bundt pan (I use the bundt pan)with Cooking Spray.
  • Beat Shortening, Butter, and sugar. Beat until wet and then beat in Caramel and pumpkin.

  • In separate bowl combine flour, baking powder, salt, and spices; stir to combine.

• 1⁄2 cup (1 stick) unsalted butter, softened
• 1 1⁄4 cups sugar
• 3 large eggs
• 1 cup canned pumpkin purée
• 1 teaspoon pure vanilla extract
• 1⁄3 cup milk
• 1 cup miniature semisweet chocolate chips
• 1 cup chopped walnuts

Steps:

  • 1. Preheat the oven to 350 degrees Fahrenheit. Coat the inside of a 9-inch by 5-inch loaf pan with nonstick cooking spray and dust it with flour. 2. Combine the flour, baking soda, baking powder, cinnamon, salt, cloves and nutmeg in a medium mixing bowl. 3. Combine the butter and sugar in a large mixing bowl and cream with an electric mixer on medium-high speed until fluffy, about 3 minutes, scraping down the sides of the bowl once or twice as necessary. 4. With the mixer on medium-low speed, add the eggs, one at a time, scraping down the sides of the bowl after each addition. Stir in the pumpkin purée and vanilla. Stir in the milk. 5.Turn the mixer to low speed and add the flour mixture, 1⁄2 cup at a time, scraping down the sides of the bowl after each addition. Stir in the chocolate chips and walnuts. 6. Scrape the batter into the prepared pan and smooth the top with a rubber spatula. Bake the cake until it is firm to the touch and a toothpick inserted in the center comes out clean, 55 minutes to 1 hour. Let the cake cool in the pan for 5 minutes, invert it onto a wire rack, and then turn it right side up on a rack to cool completely. TIPS Store uneaten cake in a cake keeper at room temperature for up to three days or in the refrigerator, wrapped in plastic, for up to one week.

CAKE:
2 and 1/2 cup granulated sugar
1 cup canola oil
4 large eggs
3 cups all-purpose flour
2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 and 1/2 teaspoon pumpkin pie spice
1 can (15 ounce) solid pack pumpkin
GLAZE:
4 tablespoons butter,
6 tablespoons brown sugar
6 tablespoons granulated sugar
2 teaspoon vanilla extract
4 tablespoon milk
3 to 4 tablespoon confectioners sugar
1 cup pecans

Steps:

  • CAKE:
  • Preheat oven to 350 degrees F.
  • Spray a tube pan with non-stick spray.
  • Stir together flour, baking soda, salt, and pumpkin pie spice.
  • To the bowl of a mixer, cream sugar and oil.
  • Add eggs one at a time, beat wel after each addition.
  • Add pumpkin and mix.
  • Slowly add flour and beat on low until it is incorporated.
  • Pour into prepared tube pan.
  • Place tube pan on cookie sheet and bake 75 minutes or until done.
  • Cake is done when wooden inserted into the center of cake comes out clean or with dry crumbs.
  • Allow cake to cool 30 minutes on wire rack before inverting to serving tray.
  • GLAZE:
  • Toast pecans in a pan on medium until fragrant. Remove from heat.
  • Heat butter, brown sugar, granulated sugar, vanilla, and milk in a sauce pan on medium heat. Stir constantly. When mixture reaches a boil, boil 1 minute exactly. Stir constantly. Remove from heat and stir in confectioners sugar to thicken. Stir in pecans. Pour over slightly cooled cake.

  • Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening; lightly flour. In medium bowl, mix flour, pumpkin pie spice, baking powder, baking soda and salt; set aside.
  • In large bowl, beat butter, brown sugar and granulated sugar with electric mixer on medium speed until creamy. Add eggs, one at a time, beating on low speed after each addition until blended. Add pumpkin and 2 teaspoons vanilla; beat on medium speed until blended. On low speed, beat in flour mixture alternately with 1/2 cup milk until smooth. Stir in 1 cup of the chocolate chips. Spoon batter into pan.
  • Bake 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour. In medium bowl, mix all glaze ingredients until smooth and thick. Drizzle glaze over cake. Sprinkle with remaining 1/4 cup chocolate chips.

1 tablespoon vanilla
1 (15 ounce) can pure pumpkin
3 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 tablespoon cinnamon
2 teaspoons ground ginger
2 teaspoons ground cardamom
1 teaspoon ground nutmeg
1 teaspoon ground clove
1/2 teaspoon ground coriander
1/2 cup (1 stick) unsalted butter
1 teaspoon vanilla
1 tablespoon milk
1 cup powdered sugar
1 teaspoon chai spice mix (reserved from above)

Steps:

  • Preheat oven to 325°F. Grease and flour a 10-inch (12 cup) round bundt pan. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until light and fluffy. Add eggs, one at a time, beating until each one is well incorporated. Add vanilla and pumpkin and beat on low speed until just incorporated.
  • In a large mixing bowl, whisk together the flour, baking powder and baking soda. Set aside.
  • In a small mixing bowl, whisk together the cinnamon, ginger, cardamon, nutmeg, clove and coriander. Reserve 1 teaspoon of the chai spice mix for the glaze and whisk the rest into the flour mixture.
  • Gradually add flour mixture to the butter mixture, beating at low speed until just blended after each addition. Spoon the batter into the prepared bundt pan.
  • Bake for 60-65 minutes or until a long wooden pick or knife inserted in the center comes out clean. Cool in pan on a wire rack for 15 minutes before inverting onto the wire rack to cool completely (about 2 hours).
  • Once the cake is cooled, make the glaze: in a medium microwave-safe mixing bowl, melt the butter. Whisk in the vanilla and milk. Gently whisk the powdered sugar and chai spice mix into the melted butter mixture until just combined and then quickly whisk for about 30 seconds until glaze is smooth and of drizzling consistency. If glaze is too thick, add a little more milk. If glaze is too thin, add a little more powdered sugar.
  • Immediately drizzle glaze over the top of the cake.

2 teaspoons baking powder

1 cup dark plump raisins (optional)
4 ounces cream cheese, room temperature
1 cup powdered sugar
1/4 cup unsalted butter, room temperature

Steps:

  • Batter:.
  • Preheat oven to 325°F; position rack in lower third of oven.
  • Grease and flour a 10-inch tube pan or a 12-cup Bundt cake pan. Set aside.
  • In a medium mixing bowl, combine flour, baking powder, soda, salt, and spices; set aside.
  • In a large mixing bowl, use an electric mixer to cream the butter. Add the sugars a half-cup at a time beating well after each addition. Beat in Bourbon whiskey or vanilla and continue beating for about 3 minutes - until light and fluffy (scrape the bowl often while mixing).
  • Beat the eggs with a fork in a small bowl; add to sugar mixture, one-fifth at a time. With your rubber spatula, scrape down sides of bowl as you mix.
  • Add pumpkin and beat on medium speed until smooth. Reduce speed to low and slowly beat in the dry ingredients until smooth and well blended. Using a wooden spoon, stir in the raisins (optional).
  • Spoon batter into the prepared pan. Gently spread batter evenly around pan. Bake for 55 minutes, or until a wooden toothpick comes out clean when inserted into the center.
  • Cool for 15 minutes; remove from pan onto a serving plate. Cool completely.
  • Glaze:
  • Combine cream cheese, powdered sugar, butter, and vanilla in medium bowl. Using electric mixer, beat until smooth. Drizzle glaze over cake and sprinkle with walnuts. Serve warm or at room temperature.

  • 1. In a mixing bowl, blend sugar and oil. Add eggs, one at a time, beating well after each addition. Mix flour, baking soda, cinnamon, nutmeg, salt and cloves; add to egg mixture alternately with pumpkin. Transfer to a greased 12 cup fluted tube pan.
