Great as a traditional Thanksgiving bird side dish! Easy to prepare ahead of time and pop into the oven when ready.

1 (15 ounce) can pumpkin puree
1 (12 ounce) can evaporated milk
1/4 cup butter, melted
1/2 cup sugar
4 eggs
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves

Steps:

  • Set oven to 350ºF.
  • Mix all ingredients together in a large mixing bowl.
  • Pour into a lightly greased 2-quart baking dish.
  • Bake for 45 minutes or until set.

This wonderful casserole is the best 'breakfast casserole' I have ever eaten. It could easily be served at any time of day. I first ate it at a Wedding Shower and could hardly wait for the bride's mother to get the recipe for me from the Aunt who lived in another state. I am posting the recipe exactly as I received it...however I would personally increase the salt to 1 teaspoon instead of the 1/4th teaspoon since I remember adding salt when I ate it before.

3 cups frozen hash browns
3/4 cup shredded monterey jack pepper cheese
1 cup cubed cooked ham
1/4 cup green onion, well chopped
4 well beaten eggs
1 (12 ounce) can evaporated milk
1/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Grease 2 quart rectangular baking dish.
  • Arrange potatoes evenly on bottom of baking dish.
  • Sprinkle with cheese, ham, onions.
  • Combine milk and eggs and seasonings.
  • Pour over potatoes and cheese.
  • Refrigerate over night.
  • Bake at 350 for 40-50 minutes until set.
  • Let rest 5 minute.

1 (21 ounce) can pumpkin puree, the large can
2 tablespoons sugar
2 tablespoons butter, melted
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 dash pepper
2 eggs, slightly beaten
1/2 cup pecans, chopped
1/2 cup light-brown sugar, firmly packed
1/4 cup maple syrup
1/2 cup pecan halves

Steps:

  • Preheat oven to 350 degrees. Lightly grease 1 quart casserole.
  • Combine pumpkin, sugar, butter, nutmeg, salt, pepper, eggs and chopped pecans in large bowl, Mix well, and turn into casserole.
  • Make Glaze: mix brown sugar and syrup in small saucepan. Heat while stirring, until sugar is dissolved; then bring to a boil. Remove from heat and cool slightly.
  • Arrange pecan halves around the edge of casserole. Cover pumpkin and pecans with glaze; bake 40 minutes.

3/4 cup shredded Monterey Jack cheese

1 teaspoon cinnamon

1/4 cup unsweetened coconut
1/2 cup pecans
3 tablespoons butter, softened

Steps:
