1 boneless pork shoulder butt roast (3 to 4 pounds)
1 teaspoon rubbed sage
1 teaspoon salt, divided
1/4 teaspoon pepper
1 can (20 ounces) unsweetened crushed pineapple, undrained
2 tablespoons minced fresh gingerroot
18 Boston or Bibb lettuce leaves
Thinly sliced green onions, optional

Steps:

  • Rub roast with sage, 1/2 teaspoon salt and pepper. Place in a 4- or 5-qt. slow cooker. Top with pineapple and ginger. Cook, covered, on low until meat is tender, 6-8 hours., Remove roast; shred with 2 forks. Strain cooking juices. Reserve pineapple and 1 cup juices; discard remaining juices. Skim fat from reserved juices. Return pork and cooking juices to slow cooker; stir in remaining 1/2 teaspoon salt. Heat through. Serve in lettuce leaves with reserved pineapple and, if desired, green onions., Freeze option: Freeze cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

1 (5 lb) pork butt, sliced in half
1 cup teriyaki sauce
1/2 cup sweet and sour sauce
1/2 cup hoisin sauce
2 tablespoons of sliced gingerroot
5 garlic cloves, mashed and minced
salt and pepper
1 leaf bibb lettuce, to serve

Steps:

  • Add pork to a slow cooker with teriyaki sauce, sweet and sour sauce, hoisin sauce, sliced ginger, garlic, salt, and pepper. Cook on low for 6-8 hours with the lid covered, until cooked to your liking. Chop with a knife until shredded. Serve on a large platter with Bibb lettuce leaves.

3-4 pounds pork shoulder roast
1 (12-ounce) jar HERDEZ® Roasted Pasilla Chile Mexican Cooking Sauce
½ white onion, sliced
1 garlic clove, sliced
2 bay leaves
6 ounces beer
½ cup low sodium chicken broth
Salt and pepper, to taste
For Lettuce Wraps:
Leaf lettuce leaves, cleaned and dry
Shredded carrots
Finely sliced red cabbage
Lime wedges

Steps:

  • Place pork, HERDEZ® Roasted Pasilla Chile Mexican Cooking Sauce, onion, garlic, bay leaves, beer and chicken broth in slow cooker. Cook on LOW 8 to 10 hours. Remove pork and shred meat. Add salt and pepper to taste.

2 tablespoons sugar $
2 1/4 teaspoons kosher salt
1 (2 1/2-pound) boneless pork shoulder, trimmed
1 tablespoon grated peeled fresh ginger
2 tablespoons sherry or white wine vinegar
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted chicken stock (such as Swanson)
1 tablespoon gochujang (Korean chile paste)
1 1/2 teaspoons lower-sodium soy sauce
1/4 cup thinly sliced green onions $
30 Boston lettuce leaves (about 2 heads) $
1 cup thinly sliced radishes $
Lime wedges (optional)

Steps:

  • 1. Combine sugar and salt in a small bowl. Place pork in a large bowl; rub evenly with sugar mixture. Cover and refrigerate overnight. 2. Preheat oven to 300°. Place pork on a rack set inside a roasting pan. Place pan in oven; bake 4 hours or until a thermometer registers 210°, basting occasionally with drippings. Remove from oven; let stand 30 minutes. Shred pork with 2 forks. 3. Combine ginger and next 5 ingredients (through soy sauce), stirring with a whisk. Stir in onions. Reserve half of sauce. Toss shredded pork in remaining half of sauce.
