1 small onion, finely chopped
1 jalapeno pepper, seeded and minced
3 garlic cloves, minced
1 boneless beef chuck roast (2 to 3 pounds)
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (8 ounces) tomato sauce
1/4 cup lime juice
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
6 flour or whole wheat tortillas (8 inches)
Optional toppings: Torn romaine, chopped tomatoes, sliced avocado and sour cream

Steps:

  • Place onion, jalapeno and garlic in a 4-qt. slow cooker. Sprinkle roast with salt and pepper; place over vegetables. In a small bowl, mix tomato sauce, lime juice, chili powder, cumin and cayenne; pour over roast., Cook, covered, on low 6-8 hours or until meat is tender. Remove roast; cool slightly. Shred meat with 2 forks; return to slow cooker. Serve beef on tortillas with toppings of your choice.

1 beef top sirloin steak (1 pound), cut into thin strips
1/4 teaspoon pepper
3 tablespoons reduced-sodium soy sauce, divided
3 teaspoons olive oil, divided
1 medium red onion, cut into wedges
3 garlic cloves, minced
1 jar (7 ounces) roasted sweet red peppers, drained and cut into strips
1/4 cup dry red wine or reduced-sodium beef broth
6 tablespoons fat-free ranch salad dressing
6 flour tortillas (8 inches)
1-1/2 cups torn iceberg lettuce
1 medium tomato, chopped
1/4 cup chopped green onions

Steps:

  • In a large nonstick skillet coated with cooking spray, saute beef, pepper and 2 tablespoons soy sauce in 2 teaspoons oil until meat is no longer pink. Remove and keep warm. , Saute the onion and garlic in remaining oil for 1 minute. Stir in the red peppers, wine and remaining soy sauce; bring to a boil. Return beef to the pan; simmer for 5 minutes or until heated through. , Spread ranch dressing over one side of each tortilla; sprinkle with lettuce, tomato and green onions. Spoon about 3/4 cup beef mixture down the center of each tortilla; roll up.

Shredded Beef Wraps image

These are SO good! They make a really nice casual dinner, and are a fantastic wrap to take for lunch (fold both ends in before rolling if taking in a lunchbox.) I use Roast Shredded Beef ( Recipe #457009 ) and Honey Mustard Mayonnaise ( Recipe #460263 ). My whole family love them! We use sun-dried tomato flavoured tortillas, and they really add to th eflavour, but if you can't get them, just use regular ones. The measurements for the filling are approximate, basically just sprinkle small amounts on, to your own tastes.

1 large tortilla, Mission Sun-Dried Tomato flavour
3/4 cup roast shredded beef, Roast Shredded Beef
1/4 cup low-fat cheese, shredded
1/4 cup carrot, shredded
1/4 small tomatoes, sliced
1/8 small red onion, sliced
1 small handfull snow pea sprouts
2 tablespoons honey mustard mayonnaise, Honey Mustard Mayonnaise

Steps:

  • Place tortilla on work surface.
  • In the centre, spread the Roast Shredded Beef.
  • Layer the other ingredients on top of the beef (refer to pictures for details).
  • Fold up bottom, then fold sides over, to make a wrap.

I needed an appetiser that was easy to transport and used leftover roast beef. Searched zaar and found papergoddess' Beef & Onion Wraps. Tweaked it for our taste, added additional ingredients and came up with this. They were inhaled. You could substitute deli roast beef or prepackaged beef lunchmeat if you don't have leftovers. Cook time is refrigerator time.

1 cup shredded leftover roast beef
3 green onions (chopped, include some green)
1 (8 ounce) package cream cheese
2 tablespoons milk
1/8 teaspoon liquid smoke
1/3 cup shredded sharp cheddar cheese
4 burrito size flour tortillas

Steps:

  • Bring Cream Cheese to room temperature.
  • Add the milk and blend with hand mixer.
  • Blend in green onions, shredded beef, Liquid Smoke, and cheese until thoroughly mixed.
  • Spread mixture evenly on the 4 tortillas, roll up tortillas, wrap in plastic, and chill for approximately 2 hours.
  • Cut tortillas in 1 1/2 inch slices and serve.
  • Note: Can also use deli beef or prepackaged beef lunchmeat (such as Budding's 2. 5 ounce package).

2 pkg 16oz jack daniels pulled beef
1 jar(s) hamburger sliced pickles, or chop pickle spears
1 pkg mission jalapeno cheddar tortillas (6 ct.)

Steps:

  • 1. Cook Jack Daniels Pulled Beef packages. Follow heating instructions on the package. Allow to cool for 2 minutes.
  • 2. Add beef to one side of a tortilla (amount desired). Do not fill all the way to the edges. Leave room for wrapping. Add desired amount of pickles. I usually add 4-6 depending on size.
  • 3. Wrapping: You are going to wrap it like a burrito. Begin with the side that has the beef. Fold in the sides and then begin folding the beef side in all the way to the other side.
  • 4. Cut diagonally in the middle. Repeat all the above steps. And you are done! Enjoy :)

150g thin-cut frying steak , very thinly sliced
1 tsp mild chilli powder
2 good pinches of ground cumin
2 garlic cloves , finely chopped
2 tsp sunflower oil
1 yellow pepper , deseeded, quartered and sliced
1 red onion , thinly sliced
2 tomatoes , chopped
400g can black bean , drained
good handful fresh coriander
4 value soft tortilla wraps

Steps:

  • Put the steak in a bowl with the spices and garlic, and stir well. If you have time, leave to marinate for a couple of hrs. Heat the oil in a wok, then tip in the beef and fry for just 1-2 mins, until it changes colour but is still on the rare side. Remove the beef to a plate.
  • Add the pepper and half the onion, and stir-fry in the juices - add a splash of water to get things going and stop it burning. Stir in the tomatoes and beans, and heat through with plenty of seasoning, then stir in most of the coriander.
  • Meanwhile, heat the tortillas. The best way is directly on the gas flame, as it gives them a lovely charred flavour. Stir the beef into the beans and heat briefly. Serve with the tortillas and the reserved onion and coriander.
