Steps:
- Preheat the oven to 425 degrees F.
- Heat a cast-iron skillet over medium-high heat.
- For the sauce: Stir up the sour cream, horseradish, mustard, chives, dill and garlic in a small bowl and adjust salt to taste.
- For the burgers: Arrange the bacon on wire-rack-lined rimmed baking sheet or slotted pan. Bake until very crisp, 12 to 14 minutes.
- Combine the beef with grated onion, salt and pepper and Worcestershire sauce and score into 4 portions. Form 4 patties of the beef mixture thinner at center than edges for even cooking. Cook patties in a little oil, about 7 minutes, turning occasionally. Then melt 2 slices of cheese on the patties for a minute or so.
- While the patties cook, toast the English muffins. Lightly butter bottoms and add thinly sliced dill pickle chips.
- Place burgers on buttered side of muffin and top with 3 half-slices of bacon, watercress and horseradish sauce.

PUB-STYLE BURGER SAUCE
This recipe comes from America's Test Kitchen and the only change I made is using minced green onion instead of chives since chives are harder to find and more expensive. I always have green onion as well as other ingredients on hand.

Steps:
- 1. Heat oil in frypan, add onions, and cook over med high heat until browned, about 10 min.
- 2. Add beer and cook until the beer has reduced almost completely, about 10 min, season with the salt and pepper.
- 3. Season patties and grill to desired doneness, for us that's 6 to 8 min or so.
- 4. Top each burger with cheese the last few min of cooking to melt.
- 5. To assemble, slather dijon mustard on buns and top burgers with onions.
OLD FASHIONED PUB BURGER
Steps:
- Step 1) Mix ground chuck with the salt, pepper, and Lipton onion soup mix until thoroughly mixed together. Form into 8 equal patties about 4.5 oz. each, and set aside to rest.
- Step 2) Next, finally dice the onions and place 1/3 of the onions in the bottom of your frying pan with about 1 Tbsp. of butter and saute for about 1 min.
- Step 3) Add three of you hamburger patties to the pan and fry for 5 minutes, flipping the burger only once. (*Note- it is a good idea to move the burgers around a little in the pan to prevent burning the onions and sticking to the pan) after you flip over the patties, continue to cook for an additional 5 min and add cheese with 1 min left on last side. Serve on a lightly toasted bun and add toppings of your choice...Enjoy.
- **Repeat steps 2& 3 to finish the rest of you hamburgers scraping out any onions left in the bottom of the pan from the last set.

PUB BURGER
We love Philly steak sandwiches so I made a burger that comes close to that favorite sandwich with a twist here and there. At the end of my recipe it repeats my last direction but I can't seem to get rid of the last 2 sentences at the bottom!

- Heat gas grill to medium high heat and brush grill racks with oil.
- In a medium bowl whisk together sour cream, mayonnaise, and whole grain mustard, cover and refrigerate until ready to use.
- Peel and cut onions into quarters and slice about 1/4 inch thick. Remove seeds from green peppers slice similar to onion. Slice mushrooms 1/4 inch thick.
- Melt butter in skillet on medium heat stir in 1 tablespoon oil, add sliced onions, cook 5 minutes, stir frequently. Add green peppers, mushrooms, garlic, 1/2 teaspoon salt, 3/4 teaspoon black pepper and chili paste. Reduce heat and cook for 5 minutes, stirring occasionally. Reheat when ready to top burger.
- Brush cut sides of buns with oil. In a large mixing bowl, mix together the ground chuck, 3/4 teaspoon salt, 1/2 teaspoon pepper and steak sauce. Mix completely but don't over handle. Divide into 4 equal portions and shape into patties slightly bigger than the bun. Grill patties 4 minutes, turn, top with cheese, and grill 4 to 5 minutes or until desired doneness. Place buns cut side down on outside edge on grill rack to toast lightly. Reheat onions mixture.
- Spoon 1 tablespoon mustard spread on bun bottoms and divide rest of spread in equal portions on bun tops Place patty on bun bottom, spoon on sautéed onions mixture, add bun top and serve.
