PRUNE WHIP OR PRUNE FOOL

This is very easy and good. Serve as a dessert by itself or spoon over ice cream or a slice of cake. Preparation time is included in the cooking time. Does not include chilling time.

1 lb prune, pitted
1 cup white sugar
4 egg whites, beaten stiff
1 cup whipping cream

Steps:

  • Mix prunes and sugar and cook together in a double boiler until very prune mix is tender-- mush the prunes so sugar will mix well as the mixture cooks.
  • After the prunes are cooked, put mixture into blender and blend well, then cover and refrigerate.
  • When prune mixture is thoroughly chilled, fold in the beaten egg whites.
  • Cover and return to the refrigerator until needed.
  • When ready to serve, put prune mixture into small bowls.
  • Whip the cream until it forms peaks, then spoon onto each dish of prune whip and serve.
  • Note: you may wish to serve this as a "fool" -- an English dessert -- by folding the whipped cream into the mashed fruit.

This is from the 1950's. I used to make it with my Grandma! To be politically correct, prunes are now being called dried plums--but they taste just as good!

3 egg whites (save the yolks for the custard)
1/4 teaspoon salt
6 tablespoons sugar
1 (8 ounce) jar prune baby food
1 tablespoon lemon juice
1 cup milk
3 egg yolks
3 tablespoons sugar
1/2 teaspoon vanilla

Steps:

  • Beat together 3 egg whites with salt.
  • Add the 6 Tbsp.
  • sugar and beat until stiff.
  • Fold in the prunes and lemon juice.
  • Place in a casserole dish and place the dish in a pan of water.
  • Bake at 350F for 30 minutes.
  • Custard: Scald the milk in a double boiler.
  • Beat together egg yolks, sugar and vanilla.
  • Add this egg mixture slowly to the milk.
  • Continue cooking to thicken.
  • Serve the prune whip with the custard on top.

TANGY PRUNE WHIP

This is delicious though an unusual dessert that my children really enjoyed (just don't tell anyone you made it with PRUNES!). So light and fluffy, it's perfect after a big meal or when you just want a 'taste'. Please note that raw egg whites are called for so ONLY use fresh eggs that have no cracks. Always wash your eggs well before cracking them open. Please note that times may vary with each cook as we all work differently and that a 1st time recipe usually takes extra care.

1 cup prune, cooked and pitted
3 tablespoons prune juice
1 dash salt
2 tablespoons lemon juice
1/8 teaspoon lemon zest
1/2 cup sugar
3 egg whites
heavy cream, whipped

Steps:

  • Put prunes *(cooked & pitted), both juices, salt, lemon zest and sugar into the blender. Cover and process on high for 20 seconds or til smooth.
  • In a large bowl, beat egg whites til stiff but not dry.
  • Fold the prune puree into the egg whites.
  • Spoon into serving dishes and chill.
  • Serve with a dab of whipped cream on top!
  • *If prunes are not cooked, put them into a saucepan with water to cover. Bring them to a boil then turn heat down to a simmer and allow them to stew for approximately 15 - 20 minutes. Prunes will be soft, plump & juicy. They can easily be refrigerated in the liquid (prune juice!) in an air tight container/jar.
  • **Recipe time given is for prepared prunes. Cooking time shown is for chilling.

1 ⅓ cups pitted prunes
⅓ cup water
⅓ cup white sugar
1 teaspoon lemon juice
1 teaspoon vanilla extract
6 egg whites
¼ teaspoon cream of tartar

Steps:

  • In a medium saucepan, simmer the prunes in water until soft, drain and puree. Combine the puree in a saucepan with the sugar and heat until the sugar dissolves. Add the lemon juice and vanilla.
  • Beat the egg whites until frothy, add the cream of tarter, and beat until stiff. Fold the prune puree into the egg whites.
  • Pour into a buttered and sugared 2 quart baking dish and bake in a preheated 300 degrees F (150 degrees C) oven until nicely browned. Refrigerate and serve chilled with whipping cream.

1 cup vegetable oil
3 eggs
1 ½ cups white sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup buttermilk
1 ¼ teaspoons vanilla extract
1 cup prunes, pitted and chopped
1 ½ cups chopped pecans
¾ cup butter
¾ cup buttermilk
1 ½ teaspoons dark corn syrup
1 ½ cups white sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt or tube pan.
  • In a medium bowl, mix together flour, soda, salt, allspice, cinnamon and nutmeg. Set aside.
  • In a large bowl, combine oil, eggs and 1 1/2 cup sugar. Beat 2 minutes at medium speed.
  • Add flour mixture, alternating with 1 cup buttermilk, starting and ending with dry ingredients. beat well after each addition. Stir in prunes, pecans and 1 1/4 teaspoon vanilla.
  • Pour into greased and floured bundt or tube pan and bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick comes out clean when inserted in the center.
  • Make large, deep holes in hot cake and pour topping in holes and on top of cake a little at a time, giving it time to soak in.
  • For the topping: In saucepan, over medium heat, cook butter, 3/4 cup buttermilk, corn syrup and 1 1/2 cup sugar until sugar and butter melt. Remove from heat and add 2 teaspoons vanilla and stir.

1 1/2 cups pitted prunes prunes
1/2 cup sugar
4 teaspoons lemon juice fresh
1/2 teaspoon cinnamon ground
1/4 teaspoon salt
1 tablespoon unflavored jello
2 tablespoons water cold
4 eggs white
1 teaspoon vanilla extract
Heavy cream, whipped

Steps:

  • Cover prunes with water and simmer 15 minutes or until tender. Combine 1/2 cup liquid from cooking prunes, sugar, lemon juice, cinnamon, and salt in a saucepan and bring to boil continue to boil about 2 minutes. Remove from heat. Soften gelatin in cold water and stir into hot liquid, until dissolved. Beat egg whites until stiff. Pour hot liquid over egg whites and beat well. Add vanilla and prunes mix thoroughly but lightly. Portion fluff into 10 dessert cups. Chill until firm, about 2 hours. Top with whipped cream.

1 package (1/4 ounce) active dry yeast
1 cup warm milk (110° to 115°)
1/2 cup butter, softened
1/2 cup shortening
3 large egg yolks
3 tablespoons sugar
1 teaspoon salt
4 cups all-purpose flour
FILLING:
2 cups pitted dried plums (prunes)
1/2 cup water
1/2 cup sugar
2 tablespoons lemon juice
1/4 cup butter
1/2 teaspoon ground cinnamon
GLAZE:
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
2 to 3 tablespoons water

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the butter, shortening, egg yolks, sugar and salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Cover and refrigerate overnight., In a large saucepan, cook plums in water 12-15 minutes or until liquid is absorbed. Mash; add sugar and lemon juice. Cook for 8-10 minutes over low heat until thickened. Cool and refrigerate., Turn dough onto a lightly floured surface; divide in half. Roll each portion into a 3-in. x 9-in. rectangle. Dot with butter; sprinkle with cinnamon. Spread about 1/3 cup plum filling down the center of each. , Fold a third of the dough lengthwise over filling. Fold remaining dough over top; pinch seams to seal and tuck ends under. Place seam side down in two greased 15x10x1-in. baking pans. Cover and let rise in a warm place for 2 hours or until doubled. , Bake at 350° for 25-30 minutes or until golden brown. Remove from pans to wire racks to cool. Combine the glaze ingredients; drizzle over loaves.

2 cups pitted dried plums (prunes), halved
1 cup water
2 tubes (8 ounces each) refrigerated crescent rolls
1 can (15 ounces) coconut-pecan frosting, divided
2 tablespoons butter, melted, divided
1/2 cup confectioners' sugar

Steps:

  • In a saucepan, bring plums and water to a boil. Cover; remove from the heat and let stand 10 minutes. Drain; reserving juice. , Unroll one tube of rolls and press into a greased 13-in. x 9-in. baking pan. Spread with half of the frosting. Cover with plums. Combine 1 tablespoon butter and 1 tablespoon reserved plum juice; drizzle over plums. , Roll out remaining rolls into a 13-in. x 9-in. rectangle. Place over plums. This was the cake I asked my mother to bake me for my birthday each year. Most people would turn up their noses at any food with prunes in it, but oh are they wrong! This cake is wonderful. When my mother had to go to the nursing home, I found her recipe written in the back of an old cookbook. I was so excited and have been baking it ever since. In fact, then I started making it for her. By the way, I lost my Little Mama when she was 95 years old. She was a wonderful cook and passed it down to me.

½ cup water
2 cups all-purpose flour

Steps:

  • Combine prunes and water in a small saucepan over medium-high heat. Bring to a boil, reduce heat to low, and simmer until prunes are tender, about 5 minutes. Drain and set aside.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as a Bundt®).
  • Mix flour, 1 1/2 cups sugar, allspice, baking soda, nutmeg, cinnamon, and salt together in a mixing bowl. Combine vegetable oil, 1 cup buttermilk, and eggs in a separate bowl; pour them into the flour mixture. Mix until fully incorporated. Use an electric mixer to blend in the drained prunes; the mixer will break them up a bit. Stir in the chopped pecans.
