ITALIAN FRESH PRUNE PLUM BREAD



Italian Fresh Prune Plum Bread image

When fresh prune plums are in season, you won't find a better quick bread. You can freeze the second loaf.

1 cup butter, at room temperature
2 cups granulated sugar
4 eggs
1 teaspoon grated orange rind
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon cream of tartar
1/2 teaspoon baking soda
3/4 cup sour cream
1 cup chopped hazelnuts or 1 cup walnuts
3 cups diced blue Italian plums

Steps:

  • Preheat the oven to 350°F
  • Lightly grease two 9 x 5 inch loaf pans.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, and beat well after each addition. Add the orange rind and vanilla.
  • In a separate bowl, combine the flour, salt, cinnamon, cream of tartar and baking soda. Add the dry ingredients and sour cream alternately to the creamed mixture, beginning and ending with the dry ingredients.
  • Stir in the nuts and plums. Divide the batter between the two loaf pans.
  • Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the pans cool on a rack for 10 minutes, then turn the loaves out of the pans and cool completely on the rack. Makes 2 loaves.

I bake this bread weekly and use a variety of fruits available in the junior baby food lines. The recipe came from a friend, who made it for our Christian Mothers' Club. 2 tablespoons shortening
1/2 cup sugar
1 egg
1/2 cup milk
2 jars (2-1/2 ounces each) prune baby food
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans

Steps:

  • In a small bowl, cream shortening and sugar. Add the egg, milk and prunes; mix well. Combine the flour, baking soda and salt; add to creamed mixture just until moistened. Stir in nuts., Pour into two greased and floured 5-3/4x3x2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to a wire rack.

2 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 1/2 teaspoons salt
1/2 cup sugar
1 cup whole wheat flour
1 egg, slightly beaten
1 cup sour milk or 1 cup buttermilk
1 cup prune, stewed and chopped
1/2 cup prune juice
2 tablespoons shortening or 2 tablespoons butter, melted and slightly cooled

Steps:

  • Preheat oven to 350 F.
  • Sift flour; measure; add baking powder, soda, cinnamon, salt and sugar; sift again, add whole wheat flour and mix thoroughly.
  • Combine egg, sour milk or buttermilk, prunes, prune juice and melted shortening or butter; pour into flour mixture and stir just enough to moisten the dry ingredients.
  • Do not beat.
  • Turn into a greased loaf pan (about 9-1/2"x5-1/2") and bake for about an hour, until a knife comes out clean when inserted in the middle.
  • *Note on stewing prunes: Wash prunes and place in a saucepan with several lemon or orange slices; cover with cold water.
  • Bring to a boil and boil briskly for 45 minutes to 1 hour.
  • Sweeten to taste by adding up to 1/4 cup of sugar for every 1 cup of prunes in the last 5 minutes of cooking.

I found this recipe online and altered it slightly to my taste. You can use raisins or chopped prunes as I have in the image. Great for a quick breakfast or snack. NOTE: I omitted nuts because my kids won't eat them!

3/4 tsp baking soda

1/4 c cream cheese, softened
1/4 c butter
3/4 c granulated sugar
1/4 c unsulphured molasses -i use grandma's original
2 large eggs
5 oz pureed prunes-baby food
1 tsp vanilla extract
1/3 c almond milk
1 Tbsp lemon juice
2 c all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
1/4 c each crushed chocolate chips, and nuts and peanut brittle

Steps:

  • 1. Heat oven to 350^. Spray 2 loaf pans 8x4-inch with non-stick spray and place a piece of waxed paper cut to size on the bottom inside pan -spray paper.( tear off piece of waxed paper, place pan on paper and trace around bottom of pan, fold paper to make and cut out 2 pattern pieces)-set aside.
  • 2. Cream butter and cream cheese and gradually add the sugar and molasses and cream well. Add eggs, prunes and vanilla.Blend well.
  • 3. Combine almond milk and lemon juice. Let thicken, set aside. Combine flour, baking soda,salt and baking powder. Add flour mixture alternately with the milk mixture, beginning and ending with dry ingredients.Blend well after each addition. Use low speed.
  • 4. Stir in nut,chocolate chip, peanut brittle mixture. Pour batter evenly into the two pans. bake for 50 to 55 minutes or when tests done with wooden tooth pick and has pulled away from sides of pan..do not over bake. Remove from oven and loosen sides with knife ,if necessary. Remove from pans and cool on wire rack and brush top and all sides with butter. Enjoy!

4 eggs

2 teaspoons grated lemon rind
2 cups fresh prunes, diced or 2 cups dried prunes, soaked and diced

Steps:

  • Preheat oven to 350°F.
  • Lightly grease and flour two 9 x 5 x 2 1/2-inch loaf pans.
  • Wash and dry the plums, but do not peel, dice into small pieces.
  • If using dried prunes, soak them in warm water for about 15 minutes pat them dry and dice them.
  • In a large bowl, cream butter, sugar and vanilla until fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Sift together flour, salt, cream of tartar and baking soda.
  • Blend yogurt and lemon peel, add to creamed mixture alternately with dry ingredients.

1/3 cup (80 ml) sugar
1 Tbs (15 ml) plus 1 tsp (5 ml) baking powder
1 1/2 cups (375 ml) skim milk
1 egg
3 Tbs (45 ml) butter, melted
1 tsp (5 ml) vanilla extract
36 pitted prunes, chopped (about 3 cups, 750 ml)
30 whole shelled almonds, chopped

Steps:

  • Combine all-purpose flour, whole wheat flour, sugar and baking powder in a large bowl. In a separate bowl combine the milk, egg, butter and vanilla and beat slightly with a fork. Stir into the flour mixture until combined - do not over mix. Fold in prunes and almonds. Spoon into a 9x5 inch (22x12 cm) loaf pan that has been sprayed with cooking spray. 100 g rolled oats
1 1/2 teaspoons bicarbonate of soda
50 g coconut oil
2 eggs
150 g good flavoured honey
175 g wholemeal flour
1/4 teaspoon ground cinnamon

  • Preheat the oven to 180C/250F/Gas mark 5. Base line a 2 lb loaf tin with greaseproof paper. Place the prunes, oats, bicarbonate of soda and coconut oil in a bowl and pour over 125ml of boiling water.
  • Meanwhile in a large bowl, whisk together the eggs and honey until well combined. Stir in the flour and ground cinnamon and then finally the prune and oat mixture.

Bread mixture
3 cups 1/2-inch cubes firm white bread
2 cups half and half
4 large eggs
3/4 cup finely grated Parmesan cheese
2 tablespoons thinly sliced fresh sage
2 tablespoons chopped fresh parsley
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Filling
1 pound thick-sliced bacon, cut into 1-inch pieces
2 cups chopped onions
1 pound tart green apples, peeled, cored, cut into 1/2-inch cubes (about 3 1/3 cups)
2 cups jarred peeled whole chestnuts (about 14 ounces)
1 cup 3/4-inch cubes peeled celery root (celeriac)
4 teaspoons chopped fresh thyme
1 cup dry Sherry
1 1/2 cups low-salt chicken broth
1 cup (packed) pitted whole prunes

Steps:

  • For bread mixture:
  • Preheat oven to 350°F. Place bread on large rimmed baking sheet. Bake until almost firm, about 7 minutes. Cool on sheet. Whisk remaining ingredients in large bowl to blend. Stir in bread. Cover and chill until bread absorbs custard, at least 3 hours.
  • For filling:
  • Preheat oven to 400°F. Sauté bacon in large ovenproof skillet over medium-high heat until fat renders, about 7 minutes. Drain all but 2 tablespoons fat into small bowl. Add onions to bacon and fat in skillet and sauté until soft, about 10 minutes.
  • Add apples, chestnuts, celery root, and thyme. Sprinkle with salt and pepper. Sauté 5 minutes to blend flavors. Add Sherry. Boil until juices thicken to syrup consistency, about 2 minutes. Add broth and bring to boil. Place skillet in oven and bake uncovered until apples and celery root are tender, about 20 minutes. Mix in whole prunes and 2 tablespoons of reserved bacon fat. Season to taste with salt and pepper. (Bread mixture and filling can be prepared 1 day ahead. Keep bread mixture refrigerated. Cover filling and refrigerate.)
  • Preheat oven to 325°F. Spread filling in 3 1/2-quart ovenproof casserole or 13x9x2-inch glass baking dish. Spoon bread mixture evenly over, covering completely. Bake pudding until puffed, golden brown, and firm to touch in center, about 45 minutes. Let stand 10 minutes before serving.

6 -8 cut up prunes
1/2 cup coconut flakes

Steps:

  • Mix the first 6 ingredients. Add flour, oats, milk, prunes and coconut and stir until mixed well.
  • Pour batter in greased loaf pan, sprinkle with some oats and bake for about 35-45 minutes at 375 degrees.

Based on a recipe from BH&G's cookbook, Bread Machine Bounty. The default measures are for the 1 pound loaf, and I've placed the 1 ½ pound measures in parentheses. My photo shows a 1 pound loaf. Cooktime reflects my Panasonic; your machine could make it in a lot less time! Tip: I always stir my flours before measuring; this seems to give me the most consistent results. I also check the dough during the kneading cycle to see if more liquid is necessary; for this bread, I added several tablespoons of extra water to get a nice elastic dough.

1-1/4 cup all purpose flour
1 cup oats ground fine to a flour consistency in your blender
1/2 t baking soda
1 t baking powder
1/2 t salt
1/2 t ground ginger
1/4 t allspice
1 t cinnamon
1/4 t ground cloves
1/2 t cardamom
1/2 t coriander
1/2 cup dried cranberries
1 egg + 1 egg white
1 cup prunes + 1/2 cup orange juice blended to a smooth puree
1/2 cup plain non-fat yogurt or goat milk yogurt
1/4 cup low-fat milk or soy milk
1/4 cup Grade B maple syrup
2 T walnut or canola oil

Steps:

  • Preheat oven to 350. Lightly grease a loaf pan with 1/2 tsp canola oil. Combine all dry ingredients in a medium bowl. In large bowl, lightly beat the eggs, then add all other ingredients and stir by hand until well combined. Add dry ingredient and stir by hand until combined. Pour into prepared loaf pan, smoothing out the top. Bake for 35-40 minutes, until toothpick inserted in center comes out clean. Provides 14 slices, 140 calories per slice.

2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon allspice ground
1 teaspoon cinnamon ground
3/4 teaspoon cloves ground
1/2 cup butter or margarine
1 cup sugar
3 eggs
1 cup buttermilk
1 (12-ounce) package pitted prune prunes
3/4 cup walnuts black walnuts chopped

Steps:

  • Heat oven to 350° F. In a medium bowl, sift together flour, baking soda, allspice, cinnamon and cloves set aside. In a large mixer bowl, cream butter or margarine and sugar until light and fluffy. Beat in eggs, scraping bowl occasionally. Add flour mixture in three parts alternately with buttermilk, scraping bowl as needed. Fold in prunes and nuts. Pour into two greased 7 1/2 x 3 1/2 x 2 1/4 -inch loaf pans. Bake for 50 to 60 minutes or until tests done. Remove from pans cool on wire racks. When cool, wrap in foil and store in a cool place.Note: Dipping scissors in water makes cutting prunes easier. Serve bread with whipped cream cheese.
