Prosciutto, Cantaloupe and Butter Sandwich with Basil Drizzle image

Number Of Ingredients 12

2 cups loosely packed fresh basil leaves
1 cup fresh parsley leaves
1/2 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes
1 clove garlic, crushed and peeled
Juice of 1/2 lemon (about 2 tablespoons)
1 Calabrian chile
1/2 cup extra-virgin olive oil
8 tablespoons good-quality salted butter, softened
One 16- to 18-inch baguette, split and warmed
6 ounces thinly sliced prosciutto
1/4 peeled and seeded ripe cantaloupe, very thinly sliced (a vegetable peeler works well)

Steps:

  • For the basil drizzle: Combine the basil, parsley, salt, red pepper flakes, garlic, lemon juice and chile in a mini food processor and pulse to make a chunky paste. Add the olive oil and process until smooth and bright green.
  • For the prosciutto, cantaloupe and butter sandwich: Spread the butter on both cut sides of the baguette. Drizzle the bottom piece with a tablespoon or so of the basil drizzle. Layer the prosciutto and cantaloupe on the bottom piece of the baguette, ruffling and folding the prosciutto as you go. Drizzle a tablespoon of the basil drizzle over the top. Drizzle the cut side of the top piece with 1/4 cup or so of the basil drizzle. Place the top piece of baguette on the prosciutto and cantaloupe and cut into 2 sandwiches using a serrated knife. Serve the extra basil drizzle on the side or reserve for another use.

1 baguette, cut lengthwise in half
1/2 cup best-quality olive oil
1/2 cup coarsely chopped fresh basil leaf
4 ounces thinly sliced prosciutto
8 ounces sweet gorgonzola or 8 ounces saga blue cheese, room temperature
3 fresh figs, cut lengthwise into slices (mission or green,ripe)
2 tablespoons fresh lemon juice
fresh ground black pepper, to taste

Steps:

  • Preheat oven to 350°F
  • Scoop out a bit of bread from the centre of the bread halves.
  • Mix the oil and basil in a small bowl and drizzle evenly over both bread halves.
  • Arrange the prosciutto evenly over the bottom half of the bread.
  • Gently spread the cheese over the prosciutto and top the cheese with sliced figs. Sprinkle with the lemon juice and black pepper.
  • Cover with the top half of the bread and wrap in aluminum foil, leaving the seam on top open slightly.
  • Bake until the cheese is melted and the sandwich is heated through, about 15 minutes. Cut into 8 equal pieces and serve immediately.

1 piece ciabatta sandwich bread, about 4 1/2 inches long
2 large slices havarti cheese, sliced thin
3 large slices prosciutto
1/2 Fuji apple, cored and sliced into half-moons 1/8 inch thick
1 1/2 teaspoons butter

Steps:

  • Split ciabatta, and place one slice of cheese on one half. Top with prosciutto, followed by apple slices, the second slice of cheese and the other half of the bread.
  • Melt butter in a 9-inch skillet over medium-high heat. When it froths vigorously, transfer sandwich to skillet. Place a grill press or a cast iron skillet on top of sandwich, and apply gentle pressure for about 2 1/2 minutes. With a spatula, carefully flip sandwich, replace grill press, apply pressure and grill 2 minutes more. Let cool. Place in sandwich bag, and store in refrigerator.

10 -12 ounces fresh mozzarella cheese, thickly sliced (make sure to use fresh)
8 ounces prosciutto, thinly sliced
1/4-1/2 cup fig jam or 1/4-1/2 cup fig preserves, to taste

  • Split each roll, and layer with the mozzarella and prosciutto.

Steps:

  • In a small bowl, combine the mustard and honey. Set aside.
  • To assemble the sandwiches, lay 1 slice of cheese on each of 4 slices of the bread. On top of each cheese slice, layer 1 slice prosciutto, 2 slices apple, and 1 more slice cheese. Grind pepper on top of the cheese, if desired.
  • Spread 1 tablespoon of the honey mustard on each of the remaining 4 slices of bread and lay them, honey-mustard side down, on top of the cheese slices.

  • 1. Half the focaccia loaf lengthwise.
  • 2. Generously smear pesto on both halves.
  • 3. On the bottom half, place the prociutto, sliced tomatoes and sliced mozzarella.
  • 4. Top with the upper half.

1 cup drained and halved Peppadews
3 cups chopped Sauteed Broccoli Rabe with Garlic
4 ounces thinly sliced prosciutto or speck

1/2 cup olive tapenade

  • Preheat oven to 375 degrees.

GRILLED BACON AND PROSCIUTTO SANDWICH



Grilled Bacon and Prosciutto Sandwich image

A flavorful twist on a classic dish; the Grilled Cheese. I use Cabot Extra Sharp Cheddar Cheese, though feel free to experiment with your favorite cheeses. Because of the richness of the Bacon and Prosciutto, I don't feel the need for as much cheese as I typically would on a sandwich. The bread can vary also, I enjoy some sort of Italian style, such as a Tuscan Loaf. The better the bread, the better the sandwich! This is a fairly foolproof recipe, as long as you don't burn anything during cooking, you should feel free to adjust the ingredients to taste. These are just my personal preferences for level of spice and flavor.

2 slices bread
2 tablespoons salted butter
1/2 garlic clove
1 teaspoon chopped parsley
2 slices maple bacon
1 slice prosciutto
10 slices cheddar cheese (slice to preference)

Steps:

  • The Bacon and Prosciutto needs to be grilled, so start your grill to a Medium-High Heat.
  • Take your garlic and rub it over the bread, trying to squeeze the juice onto it. Spread the butter on both pieces of bread.
  • Mince the Garlic and Parsley, and spread just a tad of the finely minced garlic onto the buttered side of the bread. Leave some to use later.
  • Take your cheese and place it on a non-buttered side of bread. Take your remaining garlic and parsley and season to taste.
  • Place a frying pan on the stove and turn it to Medium Heat.
  • When your grill is hot, start by placing the bacon over the flames. I do about a 1.5 minutes on one side then maybe a minute on the other. Just grill it to the crispyness you prefer. When you bacon is nearly done, place your prosciutto over the flames. This does not need to be for long! It is just to crisp the Prosciutto slightly.
  • When done place the Bacon and Prosciutto on the cheese. Place your other slice of bread over it and set in frying pan to cook. (Buttered sides of bread should be out) Cover pan for 2 minutes. Flip with Spatula, side should be slightly crispy and brown. Cook on remaining side for another 1.5-2 minutes covered.
  • Remove and enjoy!
