This chili may be simple, but the flavor is outstanding. One of the best things about preparing chili is that you can adjust it to suit your family's tastes. I sometimes substitute ground turkey for the beef.

Yield 4 servings.

Number Of Ingredients 10

1 pound ground beef
1 small onion, chopped
1 can (6 ounces) tomato paste plus 2 cans water
2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon cumin, optional
1/4 teaspoon pepper
1 to 2 tablespoons brown sugar
1 can (16 ounces) kidney beans, rinsed and drained
Shredded cheddar cheese

Steps:

  • In a saucepan, brown beef and onion. Drain fat. Stir in all remaining ingredients except cheese; cover and simmer 20 minutes. Top each serving with cheese if desired.

Number Of Ingredients 10

1 pound(s) ground beef
1 medium onion, chopped
2 clove(s) garlic
2 can(s) (14 1/2 oz. each) beef broth
1 can(s) (14 1/2 oz.) diced tomatoes, undrained
1 1/2 cup(s) salsa
1 cup(s) sprial or small shell pasta
1 medium green pepper, cored, seeded and chopped
2 teaspoon(s) chili powder
1 teaspoon(s) parsley

Steps:

  • In a large saucepan over medium heat, cook beef, onion, and garlic until beef is browned. Drain off fat.
  • Add broth, tomatoes, salsa, pasta, pepper, chili powder and parsley and bring to a boil, stirring occasionally. Reduce heat and simmer, covered, until pasta is tender, about 10 minutes.
  • Garnish with shredded cheese, sour cream and tortilla chips.
