A refreshing limeade with a unique twist. Prickly pears are now being considered as another 'superfood' with many health benefits. They can be found in various colorsu002du002dred, green, yellow, and orange. One great way to enjoy this fruit is in this minty limeade. Serve cold and over ice.

12 prickly pears
2 cups water
¼ cup freshly squeezed lime juice
1 ½ tablespoons stevia sweetener (such as Truvia®)
4 fresh mint leaves, or more to taste
ice cubes

Steps:

  • Cut prickly pears in half lengthwise and scoop out flesh with a spoon. Process in a blender until smooth. Push pulp through a fine mesh strainer to extract about 1 1/2 cups juice. Discard pulp.n
  • Place prickly pear juice, water, lime juice, stevia, and mint in a blender. Blend until smooth. Pour into two 16-ounce glasses filled with ice.n

2 Prickly Pear fruits*
1/2 Cup lemon juice
2 Tbs sugar (or more to taste)
1 Cup water
Ice cubes
Mint and Lemon Slices (optional)
*available at many supermarkets, in season in late summer

Steps:

  • Peel the Prickly Pears. Chop both ends off of each fruit. Cut the skin lengthwise halfway deep through the prickly pear. Reach into the slit and peel away the thick skin. Combine peeled prickly pears, lemon juice, sugar, and water in a blender or food processor. Blend until mixture is smooth and has a red-fuschia color. Strain mixture through a paper towel in a colander into a pitcher. Pour over ice and add mint and lemon slices. Serve cold.
