This is one of her recipes taken from her new book "Look + Cook" with a slight modification. I was unable to get the Boursin Cheese at our local store, so used Recipe #80675

Number Of Ingredients 8

3 tablespoons pine nuts, toasted
10 basil leaves, fresh
1/4 cup chopped fresh parsley
5 1/2 ounces boursin cheese, garlic and herb
1/2 cup freshly grated parmesan cheese
salt and pepper
4 boneless skinless, chicken breasts
12 slices tomatoes

Steps:

  • Heat oven to 450 degrees.
  • In small bowl of a food processor, combine first 6 ingredients, except only use 1/4 cup of the Parmesan.
  • Set aside.
  • Butterfly the chicken breasts.
  • Divide the cheese mixture on the chicken.
  • Fold as with a book.
  • Place on a non stick baking sheet.
  • Bake for 15 minutes.
  • Remove from oven and place 3 slices of the tomatoes on each breast.
  • Sprinkle with remaining Parmesan.
  • Return to oven and bake another 15 minutes.

1 (16 ounce) package elbow macaroni
1 pound ground beef
½ cup pesto
½ cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir pesto and sour cream into ground beef until warmed; add macaroni and mix well.

Number Of Ingredients 9

1 1/2 cups (packed) stemmed spinach leaves
1/2 cup (packed) fresh basil leaves (about 1 bunch)
1 1/2 tablespoons oil from oil-packed sun-dried tomatoes or olive oil
1 large garlic clove
Nonstick vegetable oil spray
1 1-pound loaf frozen bread dough, thawed, room temperature
1/3 cup sliced drained oil-packed sun-dried tomatoes
2 cups (packed) grated mozzarella cheese (about 8 ounces)
1 cup grated Parmesan cheese

Steps:

  • Blend first 4 ingredients in processor to coarse puree. Transfer pesto to small bowl. (Can be prepared 1 day ahead. Press plastic directly onto surface of pesto to cover; refrigerate.)
  • Preheat oven to 375°F. Spray 12-inch-diameter pizza pan with vegetable oil spray. using moistened fingertips, press out dough on prepared pan to cover completely (if dough shrinks, let stand 5 minutes and press out again). Spread all of pesto over dough. Sprinkle with sun-dried tomatoes, then cheeses. Bake pizza until crust browns and cheeses melt, about 35 minutes.

1 garlic clove
3 tablespoons pine nuts
2 cups fresh basil (tightly packed)
1/2 cup parmesan cheese
1/2 cup olive oil
1 teaspoon salt

Steps:

  • In a food processor blend together the nuts, garlic and salt to a paste.
  • Add the basil and begin blending while simultaneously slowly drizzling in the oil.
  • Stir in the cheese by hand in the bowl with which you plan to serve the sauce inches.
  • Bon Apetite!
  • NOTE- walnuts can be substituted for the pine nuts.
