1 pound boneless skinless chicken thighs, cut into 2x1-in. strips
2 tablespoons canola oil
1 can (28 ounces) crushed tomatoes
2 celery ribs, chopped
1 medium green pepper, cut into 1-inch pieces
1 medium onion, coarsely chopped
2 garlic cloves, minced
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon Italian seasoning
1/8 to 1/4 teaspoon cayenne pepper
1 bay leaf
1 cup uncooked orzo or other small pasta
1 pound peeled and deveined cooked shrimp (31-40 per pound)

Steps:

  • In a large skillet, brown chicken in oil; transfer to a 3-qt. slow cooker. Stir in tomatoes, celery, pepper, onion, garlic, sugar and seasonings. Cook, covered, on low 7-8 hours or until chicken is just tender., Discard bay leaf. Stir in pasta; cook, covered, on high until pasta is tender, about 15 minutes. Stir in shrimp; cook, covered, until heated through, about 5 minutes longer.

2 tablespoons canola oil
1 pound boneless skinless chicken thighs, cut into 2x1-in. strips
1 can (28 ounces) crushed tomatoes
1-1/2 cups water
2 celery ribs, chopped
1 medium green pepper, cut into 1-inch pieces
1 medium onion, coarsely chopped
2 garlic cloves, minced
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon Italian seasoning
1/8 to 1/4 teaspoon cayenne pepper
1 bay leaf
1 cup uncooked orzo or other small pasta
1 pound peeled and deveined cooked shrimp (31-40 per pound)

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat. Add 1 tablespoon oil. When oil is hot, brown chicken in batches, adding oil as needed. Press cancel. Stir in next 11 ingredients. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 8 minutes. Quick-release pressure. Press cancel. , Discard bay leaf. Select saute setting and adjust for medium heat. Stir in orzo. Cook until al dente, stirring often. Stir in shrimp; cook until shrimp are heated through, about 2 minutes more. Press cancel.

Yes, you CAN make pasta in the pressure cooker! Faster, and without stirring! Faster than the drive through too!

Number Of Ingredients 11

1 lb hamburger
1/2 onion, diced
1/2 green pepper, diced
1 garlic clove, minced
4 cups beef broth
1 (14 ounce) package pasta, dry
1 (14 ounce) can tomato sauce
1 teaspoon italian seasoning
1 cup mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded
1/2 cup romano cheese, shredded

Steps:

  • Brown first 4 ingredients. Drain. Put in bottom of pressure cooker.
  • Sprinkle with half the Italian seasoning.
  • Put the dry noodles on top. DO NOT STIR.
  • Pour beef broth over the top of the hamburger mixture. I use the beef base and add hot water to make my broth, but you could also use the canned broth.
  • Pour the tomato sauce over everything. Sprinkle with the remaining Italian seasoning. DO NOT STIR.
  • Put the lid on. Program your pressure cooker on high for 6 minutes (or half the time the package of noodles says you should cook them).
  • When the time is up, turn off your cooker and wait 2 more minutes. Then release any remaining pressure.
  • Add cheese, stir, and enjoy.
