Guajillo Pork Stew - This is one of those recipes that always come in handy when in a hurry. It's really tasty and a good comfort food for the cold winter days. I got this recipe in Cadereyta, a small town located in the northern state of Nuevo Leon, on one of our many trips between Monterrey and Texas.

6 guajillo peppers (cleaned and deveined.)
3 garlic cloves (peeled)
1 1/2 Lb. Cubed pork shoulder meat
1 Bay leave
1/2 teaspoon ground cumin
1 teaspoon dried Mexican oregano
Salt and pepper to taste

Steps:

  • Place Guajillo peppers and garlic cloves into a saucepan and cover with water. Cook for about 15 minutes until peppers are soft.
  • While the peppers are cooking, add the meat and bay leave into a the skillet and cover with 1/2 cup of water. Simmer in a low heat until meat is tender. About 20 minutes.
  • Place peppers and garlic into the blender with 1 cup of the water where they were cooked, cumin and mexican oregano. Process until you have a smooth sauce.
  • Pour sauce into the skillet with the meat and keep cooking in a low heat. Use a strainer to pour the sauce in case it isn't smooth enough.
  • Season with salt and pepper and keep simmering for about 10 more minutes. After that time, any fat from the meat will float to the sauce surface like in the picture above to the right.

1/4 cup olive oil
One 5-pound pork shoulder, cut into 2-inch cubes
2 tablespoons kosher salt
2 teaspoons chili powder
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
5 cloves garlic, peeled
1 large onion, quartered
3 cups chicken stock
1 1/2 cups bottled barbecue sauce, such as Head Country
24 soft hamburger buns
Pickled Jalapenos and Onions, recipe follows
3 jalapenos, sliced
1 large red onion, sliced into half-moons
1 cup apple cider vinegar
1 teaspoon sugar
1 teaspoon kosher salt

Steps:

  • Heat an electric pressure cooker on the saute mode. When hot, add half of the olive oil. Add half of the pork along with half of the salt, chili powder, black pepper, garlic powder and onion powder. Saute until the meat is very crisp and brown, about 10 minutes. Set the meat aside on a plate. Add the remaining olive oil, meat, salt, chili powder, black pepper, garlic powder and onion powder and cook until the meat is crisp and brown, another 10 minutes.
  • Add the first half of the meat back to the pressure cooker. Add the garlic and onions and cook, stirring, for 2 minutes. Pour in the chicken stock. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on manual for 40 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 15 minutes, release the rest of the steam using quick release.
  • Remove the lid from the pressure cooker. Remove the pork and onions to a baking sheet. Shred the pork with 2 forks, pour over the barbecue sauce and toss to coat. Serve with the buns and Pickled Jalapenos and Onions.
  • If not serving right away, transfer to a 9-by-13-inch disposable aluminum pan, cover with foil and keep warm in the oven at 300 degrees F until ready to serve.
  • Put the jalapenos and red onions in a 16-ounce wide-mouth mason jar.
  • In a small saucepan, combine the vinegar, sugar, salt and 1 cup water. Bring to a boil, stirring until the sugar and salt are dissolved.
  • Pour the hot liquid over the veggies in the jar, screw on the lid and set aside. When it has cooled to room temperature, transfer the jar to the fridge to chill for a minimum of an hour, which will allow the vegetables to pickle. The pickles will last in the fridge for 3 days. Serve them on pulled pork sandwiches.

1/4 cup KRAFT Zesty Italian Dressing
1 Tbsp. WYLER'S Instant Bouillon Chicken Flavored Powder, divided
1 boneless pork shoulder (1-1/2 lb.), trimmed, cut into 1-inch pieces
1 onion, chopped, divided
1 can (8 oz.) tomato sauce
2 Tbsp. flour
1 sweet potato (1/2 lb.), peeled, cut into 1/2-inch pieces
2 small parsnips (1/2 lb.), peeled, cut into 1/2-inch pieces
2 cups tightly packed stemmed kale leaves, chopped
1-1/2 cups water
3 guajillo chiles, stemmed
1 garlic clove

Steps:

  • Mix dressing and 2 tsp. bouillon powder until blended. Pour over meat in medium bowl; toss until meat is evenly coated with dressing mixture.
  • Heat electric pressure cooker using SAUTÉ setting. Spray with cooking spray. Add half the meat; cook 1 to 2 min. or until evenly browned, stirring occasionally. Spoon into medium bowl. Repeat with remaining meat; set aside.
  • Add half the onions to pressure cooker; cook 2 min. or until crisp-tender, stirring frequently. Return meat to pressure cooker. Add tomato sauce, flour and remaining bouillon powder; mix well. Top with sweet potatoes, parsnips and kale. Turn pressure cooker off.
  • Microwave water and chiles in waxed paper-covered microwaveable bowl on HIGH 5 min. Remove from microwave. Let stand 2 min. Add chiles to blender along with the garlic and remaining onions; blend until smooth. Pour over ingredients in pressure cooker. Close and lock lid. Turn Pressure Release Valve to Sealing position.
  • Cook 25 min. using MANUAL/HIGH PRESSURE COOK setting. When timer goes off, use Quick Pressure Release to release steam. Turn pressure cooker off. Slowly remove lid. Stir before serving.

During the pandemic of the Coronavirus and the stay-at-home order, I have been trying different ways of cooking pork shoulder. Hubby and I cook together and this is a simple but delicious recipe we made.

2 tablespoons olive oil
2 pounds pork shoulder, cut into 6 pieces
salt and ground black pepper to taste
2 tablespoons all-purpose flour
1 cup red wine
1 cup beef broth
2 tablespoons tomato paste
1 onion, cut into large chunks
4 stalks celery, cut into 1-inch pieces
½ pound baby carrots
2 cloves garlic, chopped
2 bay leaves

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil for 1 minute. Season pork with salt and pepper. Add to the pot. Cook and stir until browned evenly on all sides, 4 to 5 minutes. Add flour and cook and stir for 1 to 2 minutes. Deglaze the pot by adding wine, broth, and tomato paste, scraping up all the browned bits from the bottom.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in onion, celery, carrots, garlic, and bay leaves. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 5 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes.

This recipe gives you all of the taste of a traditional Carne Adovada, but with some surprising ingredients, right in your Instant Pot or pressure cooker!

1 ounce Raisins
2 pounds Boneless Pork Shoulder (cut into large pieces)
1/4 cup Fish Sauce
1 teaspoon Oil
1 cup Red Onion. chopped (chopped)
3 cloves Garlic (chopped)
1 teaspoon Kosher Salt
1 teaspoon Dried Oregano
1 tablespoon Apple Cider Vinegar
1/2 teaspoon Ancho Chile Powder
1 can Chipotle Chile in Adobo Sauce
1/4 cup Mexican Red Chili Powder ((NOT Cayenne, look for ones that have other spices blended))
1/2-3/4 Water
1/2 teaspoon Xanthan Gum ((or use a corn starch slurry))

Steps:

  • Place raisins into your blender jar, and cover with hot water while you get everything else ready.
  • Place pork in your Instant Pot.
  • In a microwave-safe bowl, combine oil, onions, garlic, salt, oregano, both chili powders, and canned chipotle chili, sauce from chili and cook it on high for 5-7 minutes, stirring once or twice.
  • Pour this along with and cider vinegar and soy sauce or fish sauce into your blender jar with the raisins, and purée until smooth.
  • Pour this mix onto your pork.
  • Use the 1/2 cup of water to wash out your blender jar and pour this into the pot as well. Add another 1/4 cup water if you need to.
  • Set your electric cooker on High Pressure for 20 minutes, and quickly release pressure when done.
  • If you have too much liquid, either set your pot on sauté for 5-10 minutes to let some of it evaporate, sprinkle with xanthum gum to thicken while sautéeing, or make a slurry by mixing the cornstarch and the water, and pour into the pot. Let it boil and thicken.

Pork shoulder is one of the most glorious things to cook in an electric pressure cooker. The meat becomes velvety and suffused with rich, brawny juices. Here, red wine, tomatoes, rosemary and sage perfume the pork, while olives, stirred in at the end, give it brightness. This stew is even better cooked a day or two ahead, giving the flavors time to meld. Making it in advance also gives the fat a chance to solidify, so it's easy to remove before reheating. Then, if you like, you can reheat the stew in the electric pressure cooker using the sauté setting. Serve this over polenta or rice, or with good bread, to soak up the meaty sauce.

2 pounds pork shoulder or pork stew meat, cut into 2-inch chunks
1 1/2 teaspoons kosher salt (Diamond Crystal), plus more as needed
3/4 teaspoon freshly ground black pepper, plus more as needed
6 garlic cloves, grated, passed through a press or crushed into a paste
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
Large pinch of red-pepper flakes
1 teaspoon coriander seeds
Olive oil
1/2 cup dry red wine
1 (15-ounce) can whole peeled plum tomatoes
2 medium carrots, sliced 1/2-inch thick (about 1 cup)
1/2 cup pitted and torn green olives, such as Castelvetrano
Chopped parsley or basil, for serving

Steps:

  • Season the pork all over with the salt and pepper. In a large bowl, combine the pork, garlic, rosemary, sage and red-pepper flakes.
  • In a small dry skillet, toast the coriander seeds until fragrant, 1 to 2 minutes. Transfer to a mortar and pestle and coarsely crush (or do this on a cutting board with the side of a heavy knife). Add crushed seeds to the pork and toss well. Refrigerate for at least 30 minutes or overnight.
  • Set the pressure cooker to the sauté function on medium. Add 1 tablespoon oil and let it get hot for a few seconds, then add enough pork chunks to fit comfortably in one layer with a little space around each piece. Let brown for 2 to 3 minutes per side, then transfer the cubes to a plate. Add a little more oil if the pot looks dry and continue browning the rest of the pork.
  • Add the wine to the pot and let simmer, scraping the browned bits from the bottom, until it reduces by half, about 2 minutes. Using kitchen shears or your hands, break the tomatoes into pieces and add them, along with their liquid, to the pot. Return pork to the pot, stir in carrots and 1/2 cup water.
  • Seal the pot and cook on high pressure for 45 minutes. Let the pressure release naturally.
  • Using a slotted spoon, transfer pork to a serving platter. Use a fat separator to separate the fat from the juices, or just spoon the fat off the top. (There may be a lot of fat.) If the sauce seems thin, use the sauté function to simmer it until it thickens. Stir in olives, then taste the sauce and add more salt, if you like.
  • Spoon the sauce over the pork, then top with chopped parsley or basil and serve.
