Deena's Sweet Potato Dish image

This recipe was shared with me years ago when I hosted my first Thanksgiving dinner for family and friends. It's always the first dish that gets emptied completely! Hope you enjoy it as much as we have.

1 tablespoon butter, or as needed
3 cups cooked and mashed sweet potato
½ cup white sugar
⅓ cup half-and-half
2 eggs, beaten
1 teaspoon vanilla extract
¾ (10.5 ounce) package miniature marshmallows
⅓ cup butter, melted
1 cup light brown sugar
1 cup chopped pecans
½ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish with 1 tablespoon butter.
  • Beat sweet potato, sugar, half-and-half, eggs, and vanilla together in a bowl with an electric hand mixer; spread into prepared casserole dish. Top sweet potato mixture with marshmallows.
  • Stir 1/3 cup melted butter, brown sugar, pecans, and flour together in a bowl; sprinkle over marshmallows.
  • Bake in preheated oven until hot throughout, about 30 minutes.
