Number Of Ingredients 15

2 c sugar (may cut the sugar to 1 cup - 1 1/2 cups as it is very sweet)
2 c all-purpose flour
2 eggs
2 tsp baking soda
1/2 tsp salt
2 tsp vanilla
1/2 c nuts - walnuts or any that you prefer
1 can(s) crushed pineapple - undrained (I use pineapple in its own juice), 20 oz
FROSTING
1 pkg cream cheese - softened, 8 oz
1 3/4 c powdered sugar
1/4 c butter or margarine
1/4 tsp salt
1/2 c nuts - walnuts or any that you prefer
2 tsp vanilla extract

Steps:

  • 1. CAKE: Combine dry ingredients.
  • 2. Add remaining ingredients.
  • 3. Mix by hand until blended.
  • 4. Preheat oven to 350 degrees. Pour into a prepared 9x13 baking dish.
  • 5. Bake for approximately 30-45 minutes or until the cake is firm. Do not over bake or it will be rubbery, but still delicious.
  • 6. Allow to cool.
  • 7. FROSTING: Combine cream cheese, butter, and powdered sugar.
  • 8. Add nuts.
  • 9. Mix well and spread on the cake in pan. Enjoy!
  • 10. * If you would like to save calories, instead of using the frosting, just sprinkle the top of the cake with a bit of powdered sugar and enjoy!
  • 11. * There is NO milk, butter, or oil in the cake.
  • 12. * You may add other fruits or coconut if you like: some suggestions are dried cranberries, raisins, currants, tub of mixed dried fruit, and even fresh blueberries.

CREAM CHEESE FROSTING:
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
2 cups sugar
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
1 (20 ounce) can crushed pineapple, with juice
1 1/2 cups finely chopped pecans or walnuts, divided
1 cup flaked coconut (optional)
1 (8 ounce) package cream cheese, at room temperature
1/2 cup (1 stick) butter, at room temperature
1 teaspoon vanilla extract
2 cups powdered sugar, sifted

Steps:

  • Sift together flour, baking soda, salt and cinnamon; set aside. Combine sugar, eggs, oil and vanilla and mix on medium-low speed with an electric mixer until creamy. Slowly mix in flour mixture until just combined. Add pineapple (undrained), 1 cup chopped pecans and coconut and continue mixing on medium-low speed until all ingredients are thoroughly combined (about 1 minute). Spray a 13x9" baking pan with cooking spray. Pour cake batter into pan and bake at 350 degrees fahrenheit for 45-50 minutes or until cake is set in the center and a toothpick inserted comes out clean. Cool cake completely in pan then the frost with Cream Cheese Frosting. Sprinkle remaining 1/2 cup chopped pecans over cake. Store in refrigerator. CREAM CHEESE FROSTING: Whip cream cheese, butter and vanilla with an electric mixer until fluffy (about 2 minutes). Beat in powdered sugar (add more if necessary to reach desired consistency - if your kitchen's hot, you might need more because the butter will be softer). Makes enough to top one 13x9" cake - double recipe if using on a layered cake.

I don't know where my mother got this recipe from but it is a wonderful rich moist chocolate cake. Frost with Recipe #110707 and it tastes just like Hostess Cup Cakes but oh so much better. Mom would make 2 layers - fill and frost sides with the Whipped Cream Frosting, then use regular chocolate frosting for the top. Milk anyone?

1 cup brown sugar
1 cup granulated sugar
1/2 cup shortening
2 beaten eggs
2 cups all-purpose flour
2 teaspoons baking soda
1/2 cup cocoa
1/2 cup soured milk or 1/2 cup buttermilk
1 cup boiling water
1 teaspoon vanilla

Steps:

  • Cream together sugars and shortening till light and fluffy.
  • Add 2 beaten eggs mixing well.
  • In separate bowl sift together flour, baking soda, cocoa.
  • Add to creamed mixture in thirds, alternating with soured milk.
  • Beat well after each addition.
  • Fold in boiling water and vanilla.
  • Pour into 2 greased and floured 9" round cake pans.

2 c white sugar

2 c sifted flour

  • 1. Preheat oven to 350 F. Grease and flour a 9"x13" oblong pan.
  • 2. Cream together butter or margarine, sugar, eggs, baking soda, vanilla and salt.
  • 3. Gradually blend flour into creamed mixture with reserved pineapple juice.

  • Preheat the oven to 350 degrees F.
  • Grease a 9x13 baking pan and set aside.
  • In a large bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg.
  • In a separate large bowl, combine the sugar, eggs, vegetable oil, and vanilla extract and mix with a stand mixer or hand mixer on low speed until it is well-combined and creamy.
  • Slowly add the flour mixture, incorporating all of the flour and ending with a well-mixed batter with no lumps.

2 cups Dixie Crystals Extra Fine Granulated Sugar
6 tablespoons cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2/3 cup melted butter
2 tablespoons white vinegar
2 cups cold water
3 tablespoons Dixie Crystals Confectioners Powdered Sugar
2 cups cold heavy whipping cream
1 package instant chocolate pudding mix
1 teaspoon vanilla extract
*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

Steps:

  • Preheat oven to 350°F. Spray a 9x13 inch cake pan with cooking spray.
  • In a large bowl, whisk together flour, sugar, cocoa, baking soda and salt. Add melted butter, vinegarand water. Mix until just blended. Bake for 40 to 45 minutes. Let cool completely.
