1 can (11 ounces) mandarin oranges
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 tablespoon reduced-sodium soy sauce
1 package (6 ounces) frozen snow peas, thawed
1 cup sliced fresh mushrooms
1 small onion, thinly sliced
1 teaspoon canola oil
1/2 pound uncooked medium shrimp, peeled and deveined
1 small garlic clove, minced
3 tablespoons slivered almonds, toasted
Hot cooked rice, optional

Steps:

  • Drain oranges, reserving juice; set oranges aside. In a small bowl, combine cornstarch, salt, ginger and reserved juice until smooth. Stir in soy sauce; set aside., In a large nonstick skillet or wok, stir-fry the peas, mushrooms and onion in oil for 2-3 minutes or until crisp-tender. Add shrimp and garlic; stir-fry 3 minutes longer. , Stir cornstarch mixture and add to the pan. Add oranges. Bring to a boil; cook and stir for 2 minutes or until thickened. Sprinkle with almonds. Serve with rice if desired.

A fabulous, romantic dish for two - and it's quick and easy! I adapted the recipe from a Junior League of Lafayette, LA recipe; they say that it is the creation of Sous Chef Bryan Richard of Chez Marcelle. The original recipe calls for an entire stick of butter, but I think you'll agree that 3 tbsp. is plenty. If you like Amaretto, you'll love this! It can be served with angel hair pasta, but I like to eat it without so as not to interfere with the delicious flavors.

3 tablespoons butter
1/2 medium onion, finely minced
1 lb large shrimp, cleaned
1/2 cup amaretto liqueur
1/2 cup slivered almonds
1/2 teaspoon salt

Steps:

  • Heat butter in skillet until golden brown, then saute onion in butter until translucent and barely browned.
  • Add shrimp and saute about 5 minutes.
  • Add amaretto, almonds and salt and cook on medium heat for another 4 to 5 minutes.
  • Serve alone as an elegant appetizer, or over angel hair pasta as an entree.

1/2 cup ground almonds (pulse almonds in food processor until coarsely ground)
3 tablespoons flour
1 teaspoon minced fresh parsley or 1/2 teaspoon dried parsley
1/2 teaspoon seafood seasoning (such as Old Bay)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 lb shrimp, shells, tails and veins removed
1 egg white
2 tablespoons corn oil, divided use
1 lemon, cut into wedges (optional)

Steps:

  • Stir together almonds, flour, parsley, seafood seasoning, salt and pepper.
  • Dip each shrimp into egg white, then into almond mixture; lay on baking sheet or platter until ready to cook.
  • Preheat 1 tablespoon oil in large skillet over medium heat; cook shrimp in skillet in batches, cooking 3 to 4 minutes until golden.
  • Use remaining oil as necessary.
  • Serve immediately, accompanied by lemon wedges, if desired.

I found this recipe some months back in the 'Weekend magazine". This is a very traditional simple Bengali, Indian curry. My brother, who loves non-veg. food, seems to lick his fingers clean everytime we make it for him.

75 g unblanched almonds
25 g unsalted cashews
1 kg large raw shrimp, shelled
1 pinch saffron
3 tablespoons milk
8 green cardamoms
4 tablespoons ghee or 4 tablespoons clarified butter
200 g finely chopped onions
3 green chilies, finely chopped to taste
20 g finely chopped fresh ginger
1 pinch salt
150 ml single cream
25 g fresh coriander, chopped

Steps:

  • Drop almonds and cashewnuts in 2 separate pans of boiling water.
  • Boil for 30 minutes and drain.
  • Peel the almonds by slipping them out of their skins and place in a food processor with the boiled cashewnuts.
  • Whiz until they form a paste.
  • Meanwhile, peel, wash and de-vein the prawns by making a small incision down the length of the back of each prawn and removing its black digestive cord.
  • Wash and pat dry.
  • Crumble saffron into warm milk.
  • Leave to infuse.
  • Remove the tiny black cardamom seeds and grind to a fine powder.
  • Set aside.
  • Heat the ghee in a wide pan over medium-high flame.
  • Saute the onions until golden and the oil starts to separate from them.
  • Add chillies and ginger.
  • Cook for 1-2 minutes, stirring regularly, then mix in the nut paste (prepared above) and keep stirring until the ghee separates out and the paste leaves the sides of the pan.
  • Add the prawns and 2 tbsps.
  • of cold water.
  • Keep stirring, adding a further 2 tbsps of cold water two or three times, until the prawns begin to turn pink and the sauce is a nice consistency.
  • Mix in the saffron-milk mixture, season to taste and simmer for a minute until prawns are cooked.
  • Finally, add the cream and once hot transfer to a serving dish.
  • Sprinkle with cardamom powder and fresh green corriander leaves.
  • Serve hot with steamed Basmati white rice.

2 teaspoons vegetable oil
24 cleaned, peeled and deveined prawns
2 teaspoons minced garlic
1 cup chicken broth
2 tablespoons white sugar
A dash of salt
A dash of white pepper
2 tablespoons mayonnaise
8 fresh asparagus, cut into 1-inch sections
1/2 cup sundried tomatoes
8 cups cooked steamed rice
2/3 cup sliced toasted almonds

Steps:

  • Heat a large saute pan over medium-high heat. Add the vegetable oil. Lay the prawns in the pan slowly without splashing them in the oil. Add the garlic, then saute until the aroma of the garlic permeates and the prawns turn pink. Turn the heat to medium and slowly add the chicken broth, sugar, salt, white pepper and mayonnaise. Mix and saute all the ingredients until the sugar is clearly melted and the sauce is evenly combined and starts to boil. Add the asparagus and sundried tomatoes at this time and saute for another 30 seconds (making sure the sundried tomato is evenly cooked). Then pour over a bed of cooked steamed rice. Sprinkle the toasted almonds on top, and then serve.

1 1/2 pounds rock shrimp
2 shallots
2 Thai bird chilies
1 cup coconut
1 tablespoon brown sugar
5 kaffir lime leaves, julienned
Juice of 1 lime
Salt and black pepper to taste
6 sugar cane stalks or lemon grass stalks
1 cup toasted almond slivers
1/2 tablespoon sambal
1/4 cup cilantro leaves
1/4 cup Thai basil leaves
1 tablespoon fish sauce
Juice of 2 limes
1 tablespoon sugar
1/4 cup peanut oil
Salt and black pepper to taste
Water to thin
Garnish: basil, cilantro and almonds

Steps:

  • In a food processor, puree all together. Should have consistency of ground meat. Mold mixture around stalks. Cook on a hot, oiled grill for about 4 minutes a side or until almost blackened.
  • In a food processor, puree all. May need to add a little water to make puree smooth. Check for seasoning. Garnish with basil, cilantro and almonds.

1 cup panko or plain dry bread crumbs

16 uncooked peeled deveined extra-large shrimp (about 1 lb), thawed if frozen and peel left on tails
1/4 cup butter or margarine, melted

Steps:

  • Heat oven to 375°F. Generously spray 15x10x1-inch pan with cooking spray.
  • In shallow dish, mix flour and salt. In another shallow dish, beat egg and water with fork or wire whisk until well mixed. In third shallow dish, mix bread crumbs and almonds.
  • Coat shrimp with flour mixture. Dip shrimp into egg, coating well; finally, cover with bread crumb mixture, spooning mixture over shrimp and pressing to coat. Place coated shrimp in pan. Drizzle with butter.
  • Bake 30 to 35 minutes or until shrimp are pink and firm.
