Overnight Layered Lettuce Salad image

This layered salad is a family favorite from a church cookbook I've had for 40 years. The bacon adds a fabulous crunch. -Mary Brehm, Cape Coral, Florida

Yield 16 servings (1 cup each).

Number Of Ingredients 10

1 medium head iceberg lettuce, torn
1 medium green pepper, chopped
1 small sweet red pepper, chopped
1 medium onion, sliced and separated into rings
2 cups frozen peas (about 10 ounces)
1 cup mayonnaise
2 tablespoons sugar
1 cup shredded cheddar cheese
12 bacon strips, cooked and crumbled
3/4 cup dried cranberries

Steps:

  • In a 4-qt. or 13x9-in. glass dish, layer the first 5 ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover., Sprinkle top with cheese, bacon and cranberries. Refrigerate, covered, overnight.

Number Of Ingredients 10

1 egg
1 Baby Gem lettuce , shredded
195g can sweetcorn
1 carrot , coarsely grated
½ small cucumber , deseeded and diced
100g cooked prawns
2 tbsp extra-light mayonnaise
1 tbsp tomato ketchup
splash Tabasco sauce
lemon wedge, to serve (optional)

Steps:

  • Boil the egg in a small pan of boiling water for 8 mins, drain and run under cold water until cool. Shell, then slice.
  • Layer the salad in a bowl starting with the lettuce, then the sweetcorn, carrot, cucumber, egg and finish with the prawns. Mix the mayo and ketchup with a dash of Tabasco, then pour over the top. Serve with a lemon wedge, if you like.

PRAWN, RICE & MANGO JAR SALAD

Be the envy of your colleagues with this healthy layered salad with soy and sesame dressing

Number Of Ingredients 10

125g cooked rice (we used brown basmati)
handful baby spinach
50g cooked prawn
¼ ripe mango , cut into small pieces
½ red chilli , deseeded and finely chopped
small handful coriander , roughly chopped
½ tbsp low-salt soy sauce
1 tsp sesame oil
1 tsp rice vinegar
½ tsp brown sugar

Steps:

  • Make the dressing by whisking together all the ingredients. Tip the dressing into the bottom of a big jar, top with the rice and put in the fridge if making the night before.
  • Layer the spinach, prawns, mango, chilli and coriander on top of the rice. Leave a little space at the top so that when lunchtime arrives, you can shake up the salad to eat.
