2 large eggs, lightly beaten
6 cups mashed sweet potatoes (about 4 large)
1/2 cup sugar
1/2 cup butter, softened
1/3 cup 2% milk
1 teaspoon vanilla extract
TOPPING:
1/3 cup butter, melted
1 cup packed brown sugar
1 cup chopped pecans
1/2 cup all-purpose flour

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs, sweet potatoes, sugar, butter, milk and vanilla. Transfer to a greased 11x7-in. baking dish. In a small bowl, mix butter, brown sugar, pecans and flour; sprinkle over top. Bake, uncovered, 50-60 minutes or until top is browned.

Number Of Ingredients 18

4 lb sweet potatoes, peeled & cooked till tender
1/2 c evaporated milk
3/4 c orange juice( i used tropicana)
1 c sugar
1 c light brown sugar
1 stick butter, melted
1/3 c flour, (cake flour, white lily or wondra)
4 large eggs room temperature
1/4 c grated orange zest
1 Tbsp vanilla bean paste or vanilla extract
2 tsp orange extract
1 1/2 tsp nutmeg or to your taste
3/4 tsp cinnamon or to your taste
PRALINE TOPPING
1 c brown sugar, light
1/2 c flour, all purpose
1 stick butter, softened (half cup)
1 c chopped nuts of your choice ( i used pecans)

Steps:

  • 1. Boil sweet potatoes till tender. When cooled enough to handle peel if not already. Then add to a large bowl.
  • 2. Add melted butter, & blend into potatoes. Or cut butter into pieces and add while potatoes are still hot.
  • 3. Mash potatoes to combine with butter.
  • 4. Add eggs and beat or mix till blended.
  • 5. Add milk, cinnamon, nutmeg & orange juice, & blend together.
  • 6. Combine vanilla bean paste, orange extract together in small cup along with orange zest, then stir to mix, and pour into sweet potato mixture & blend together.
  • 7. Beat potatoes with mixer, and remove any strings that wrap around the beaters from the potatoes. See picture. Repeat if needed.
  • 8. Add the flour, and beat to blend.
  • 9. Spray a 9X13X2 inch casserole dish with non stick cooking spray, and pour in potato mixture, Smooth out top.
  • 10. Prepare the topping by combining all of the topping ingredients in a medium size bowl. Then blend together till mixture is combined & crumbly.
  • 11. Sprinkle topping over top of potatoes, & bake in a preheated 350 degrees F. oven for about 45 minutes or until potatoes are hot & bubbly. Allow to cool at least about 15 minutes to come together before serving or a bit longer if needed.

4 medium yams
2 eggs
1/4 cup dark brown sugar, firmly packed
2 tablespoons butter, melted
1 teaspoon salt
20 pecan halves
1/3 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1/8 teaspoon orange peel, grated
1/4 cup dark brown sugar, firmly packed
1 cup orange juice
1 tablespoon lemon juice
2 tablespoons butter
3/8 teaspoon Angostura bitters

Steps:

  • Cook yams until tender.
  • Peel and quarter yams and mash in a large bowl.
  • Beat in butter, brown sugar,salt and eggs.
  • Turn into a 1-qt casserole dish
  • Arrange pecan halves in a pattern on top of casserole.
  • Sprinkle top with 1/4 cuo dark brown sugar.
  • Drizzle top with 1/4 C melted butter.
  • Bake at 375* for 20 minute.
  • ********************************.
  • Combine sugar, cornstarch, salt, orange peel, orange juice , and lemon juice in a sauce pan.
  • Bring to a boil over medium heat.
  • Cook until thickened, stirring constantly.
  • Remove from heat.
  • Stir in butter and bitters.
  • Serve warm orange sauce over casserole.

I make these every Thanksgiving. So far,it's the best yam casserole I've ever tasted.

two cans (2 lbs, 8 oz. each) yams, drained, or 4 pounds cooked, peeled and sliced fresh yams or sweet potatoes
2/3 cup orange juice
1 tbsp. grated orange rind
5 tbsp. brandy
2 t. salt
freshly ground pepper to taste
1 t. ground ginger
4 tbsp. butter or margarine, melted (1/2 stick)
1/3 cup light or golden brown sugar, packed
3 egg yolks
PRALINE TOPPING:
2/3 cup light or golden brown sugar, packed
1/4 lb. (1 stick) butter or margarine, melted
1 cup chopped pecans, about 4 oz
1 t. ground cinnamon

Steps:

  • 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. Serves 10 to 12 Notes from the cookbook: The most sensational yam casserole I ever had was served to me one Thanksgiving by Alan and Barbara Shefter in Washington, D.C. Thanks to the Shefters, my family, friends and classes have been loving it ever since. The yams are fluffy and creamy, and the praline topping is sweet, nutty, crunchy, and beautifully glazed. 4 cups mashed sweet potatoes
½ cup white sugar
2 tablespoons vanilla extract
4 eggs, beaten
½ pint heavy cream
¼ pound butter
1 cup packed brown sugar
½ cup all-purpose flour
1 ¼ cups chopped pecans

Steps:

  • Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
  • Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
  • Bake for 30 minutes in the preheated oven.

4 lbs sweet potatoes (5)

2 tablespoons light brown sugar
1/3 cup fresh orange juice

Steps:

  • Preheat oven to 400 degrees F.
  • Wash and dry potatoes. Pierce potatoes in several places with a fork. Bake potatoes 1 hour or until tender. Cool. Peel potatoes, place in large bowl, and mash.
  • Stir in orange peel, orange juice, 2 tablespoons margarine or butter, 2 tablespoons brown sugar, cinnamon, cumin, and salt; mix well. Spoon into lightly greased 10x6-inch baking dish.
  • Combine pecans, flour, 1 tablespoon brown sugar, and 1 tablespoon margarine or butter; mix well. Sprinkle evenly over potatoes.
  • Bake 30 to 35 minutes or until hot. Let stand 5 minutes.
