1 1/2 cups granulated sugar
3/4 cup packed brown sugar
1/2 cup butter, cut into pieces
1/2 cup milk
2 tablespoons corn syrup
5 cups pecan halves, toasted

Steps:

  • Line 15x10-inch pan with sides with waxed paper. In heavy 3-quart saucepan, stir together granulated sugar, brown sugar, butter, milk and corn syrup. Heat to boiling over medium heat, stirring constantly. Boil 7 to 8 minutes, stirring constantly, to 234°F on candy thermometer or until small amount of mixture dropped into a cup of very cold water forms a ball that flattens when removed from water.
  • Remove from heat; vigorously stir in pecans. Spoon mixture into pan, spreading in even layer. Let stand 20 minutes or until firm. Break into pieces. Store in airtight container at room temperature up to 1 week.

With pecans so plentiful in Texas, these sweet crunchy nuts have become an expected tradition. Everyone in my family asks me to make them again and again for festive gatherings.

1 cup sugar
1 cup packed brown sugar
1/2 cup water
2 tablespoons honey
1/2 teaspoon ground cinnamon
3 teaspoons vanilla extract
1/4 teaspoon rum extract
3 cups pecan halves

Steps:

  • In a heavy saucepan, combine the sugars, water, honey and cinnamon. Bring to a boil over medium heat; do not stir. Cook over medium heat until a candy thermometer reads 240° (soft-ball stage). Remove from the heat; add extracts. Cool to lukewarm without stirring., Beat with a mixer for 2-3 minutes or until creamy. Stir in pecans until coated. Turn onto waxed paper (mixture will be sticky); separate large clumps. Cool for several hours or until dry and sugary. Store in an airtight container.

3-1/2 cups pecan halves
1/4 cup packed brown sugar
1/4 cup light corn syrup
2 tablespoons butter
1 teaspoon vanilla extract
1/4 teaspoon baking soda
1-1/2 cups dried cranberries

Steps:

  • Place pecans in a greased 13-in. x 9-in. baking pan; set aside. In a small saucepan, combine the brown sugar, corn syrup and butter. Bring to a boil over medium heat, stirring constantly. Remove from the heat. Stir in vanilla and baking soda. Drizzle over pecans; stir until coated., Bake at 250° for 1 hour, stirring every 20 minutes. Add cranberries; toss to combine. Immediately transfer to a waxed paper-lined baking sheet; cool completely. Break into pieces. Store in an airtight container.

I created this recipe to mimic a praline I swiped from my brother. This is a not-too-grainy, not-too-creamy praline with a hint of orange flavor.

1 cup white sugar
1 cup light brown sugar, packed
½ cup evaporated milk
¼ cup frozen orange juice concentrate
3 tablespoons butter
1 tablespoon vanilla extract
1 ½ cups pecan halves or pieces

Steps:

  • Line 12 muffin cups with square sheets of waxed paper.
  • Heat white sugar, brown sugar, evaporated milk, and frozen orange juice concentrate together in a heavy-bottomed saucepan over low heat; cook and stir until sugar dissolves, 2 to 3 minutes. Stir vanilla extract into the sugar mixture. Fold pecan pieces through the mixture. Cook without stirring until the mixture reaches a temperature of 235 degrees F (113 degrees C), 5 to 10 minutes; remove from heat immediately.
  • Stir candy mixture until it begins to turn opaque and stiff but can still be spooned easily; spoon into prepared muffin cups.
  • Cool pralines completely before serving.

I really liked the flavor of the cranberries in this mix. Store in an airtight container at room temperature for up to 2 weeks.

3 1/2 cups pecan halves
1/4 cup light corn syrup
1/4 cup light brown sugar, packed
2 tablespoons butter
1 teaspoon vanilla
1/4 teaspoon baking soda
1 1/2 cups dried cranberries

Steps:

  • Preheat oven to 250 F and grease a 13x9" baking pan, set aside. Cover large baking sheet with heavy duty foil, set aside.
  • Spread pecans in single layer on prepared baking pan.
  • Combine corn syrup, brown sugar and butter in small microwavable bowl and microwave on HIGH 1 minute; stir.
  • Microwave 30 seconds to 1 minute or until boiling rapidly.
  • Stir in vanilla and baking soda until well blended.
  • Drizzle mixture evenly over pecan halves and stir until evenly coated.
  • Bake 1 hour, stirring every 20 minutes with a wooden spoon.
  • IMMEDIATELY transfer mixture to prepared baking sheet, spreading pecans evenly over foil with lightly greased spatula.
  • Cool completely. Break apart with wooden spoon.
  • Combine pecans with cranberries in large bowl.
  • Store in an airtight container for up to 2 weeks. You can also divide between cute cellophane gift bags and twist tie to seal.

Towering Praline Carrot Cake with Candied Pecans image

1 pound carrots, peeled and sliced (3 cups)
3 cups all-purpose flour
2 3/4 cups sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 1/3 cups cooking oil
6 eggs
1 can 8-oz crushed pineapple, drained
1 tablespoon vanilla
1 cup chopped pecans
1/2 cup flaked coconut
1 recipe Cinnamon Cream Cheese Frosting
1 recipe Praline Sauce
1 recipe Candied Pecans

Steps:

  • In a medium saucepan cook carrots, covered, in a moderate amount of boiling water about 20 minutes or until vert tender. Drain. Cool slightly. Chop in a food processor using several on-off turns, or coarsely mash with potato msher (should have about 1 1/2 cups).
  • Grease and lightly flour three 9x1 1/2-inch round cake pans; set aside. (If you only have two pans, prepare two layers and refrigerate remaining third of batter. When the first two are done baking and removed from pans, wash, grease, and lightly flour one pan; bake the remaining batter.)
  • Preheat oven to 350°F.
  • In a large mixing bowl stir together flour, sugar, baking powder, baking soda, salt, and cinnamon. Make a well in center of dry ingredients.
  • Add oil, eggs, pineapple, and vanilla. Beat with an electric mixer on low speed about 1 minute until all ingredients are combined. Fold in mashed carrots, the 1 cup pecans, and the coconut. Spread batter evenly into prepared pans.
  • Bake the layers for 35 to 40 minutes or until a wooden toothpick inserted in the center comes out clean. Cool cakes in pans on wire racks for 10 minutes. Using a small spatula or table knife loosen edges and remove from pans. Bake remaining layer, if necessary. Cool cakes thoroughly on wire racks.
  • While the cake is cooling, prepare Praline Sauce, Candied Pecans, and Cinnamon Cream Cheese Frosting.
  • To assemble, place one of the cooled cake layers, top side up, on cake plate. Use about 1 cup of the Cinnamon Cream Cheese Frosting to pipe or spoon a rim about 1-inch wide and 1/2-inch high around outer edge of cake layer. Spoon about 2 tablespoons fromsting in the center leaving an unfrostined "ring".
  • Spoon and spread about half of the Praline Sauce filling into the unfrosted ring (sauce will not fill ring).
  • Add a second cake layer, top side up, and repeat frosting and filling steps using Cinnamon Cream Cheese Frosting and Praline Sauce.
  • Add final cake layer, top side up. Frost top and sides of alyers with remaining frosting.
  • Garnish top with Candied Pecans. Store cake in the refrigerator.

This recipe was in a Church Cookbook that I put together as a fundraiser when my kids were in junior high. It was submitted by a good friend of mine.

1 c brown sugar, lightly packed
1/2 c sugar
1/2 c sour cream
2 1/2 c pecan halves

Steps:

  • 1. In saucepan over medium heat combine both sugars & sour cream. Bring to a boil stirring constantly until it reaches soft ball stage.
  • 2. Add Pecans and stir gently until all are well coated.
  • 3. Pour on a waxed paper lined cookie sheet and separate nuts with a fork. Let cool and store in an air tight container.

2 tablespoons corn syrup
5 cups toasted pecan halves

Steps:

  • Stir together first 5 ingredients in a heavy 3-quart saucepan. Bring to a boil over medium heat, stirring constantly. Boil, stirring constantly, 7 to 8 minutes or until a candy thermometer registers 234°. Remove from heat, and vigorously stir in pecans. Spoon pecan mixture onto wax paper, spreading in an even layer. Let stand 20 minutes or until firm. Break praline-coated pecans apart into pieces. Store in an airtight container at room temperature up to 1 week. Freeze in an airtight container or zip-top plastic freezer bag up to 1 month
