One of the advantages of being a closet insomniac is that you get to spend all night in the kitchen playing mad scientist. I call this a poultry dipping sauce; however, you could probably use it with fish. I do not think it would work with beef or pork. In addition, it is assembled with ingredients that you likely have available in your cupboards, and fridge. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
MAIN INGREDIENTS
1 cup(s) mayonnaise, plain variety, i prefer duke's
1 - 2 tablespoon(s) water, filtered, if you have it
1 tablespoon(s) ketchup
1 tablespoon(s) fresh clover honey
1 tablespoon(s) rice vinegar, unseasoned
1 teaspoon(s) sweet paprika
1/8 teaspoon(s) garlic powder, or 1 clove of baked garlic
1 - 2 pinch(es) cayenne pepper, or to taste
ADDITIONAL ITEMS
salt, kosher variety, to taste
white pepper, freshly ground, to taste
frank's hot sauce, to taste

Steps:

  • PREP/PREPARE
  • Sweet versus Smoked Paprika There are many varieties of paprika, but the one that I felt did not work with this dipping sauce was smoked. Do not use smoked paprika. I found that sweet worked the best.
  • Store Bought versus Homemade Two of the ingredients in this recipe are easy to find at the grocer, and you probably have them in your fridge or pantries: Mayonnaise and ketchup. If you have some time on your hands, you might want to try homemade. They taste better and do not have all those nasty preservatives in them. If you are using homemade condiments (no preservatives), then it will last about a week.
  • Gather your ingredients (mise en place).
  • Place all of the Main Ingredients into a mixing bowl.
  • Whisk together until smooth.
  • Add salt, white pepper, and hot sauce, to taste.
  • Cover and let rest overnight in the fridge before using.
  • PLATE/PRESENT
  • I made some chicken tenders and used this sauce... Awesome. Enjoy.

A lot of poultry dipping sauces use things like honey, ketchup, and other spices. They are fine; however, in this recipe I wanted more savory than sweet. Played about with ingredients, until I came up with this. So, you ready... Let's get into the kitchen.

Number Of Ingredients 8

PLAN/PURCHASE
12 ounce(s) mayonnaise, plain variety
3 clove(s) fresh garlic, minced
2 tablespoon(s) fresh cilantro, chopped, just the leaves
2 tablespoon(s) lime juice, freshly squeezed
1/2 teaspoon(s) lemon/pepper spice, or more, to taste
1/4 white pepper, freshly ground, or to taste
salt kosher variety, to taste

Steps:

  • PREP/PREPARE
  • Gather your ingredients (mise en place).
  • Add all of the ingredients (except the salt) to a bowl.
  • Whisk until the mixture comes together.
  • Stop and taste. If you think it needs some salt, throw in a pinch or to and whisk again. Continue and tasting, until you are happy.
  • If you can, leave it in the fridge for an hour or so, it will give the ingredients a chance to know one another.
  • Remember you can add salt, but you cannot take it out.
  • PLATE/PRESENT
  • Place in a bowl, and dip your favorite poultry in. Enjoy.
