This is a great potluck dessert. I make it in a 13x9" pan, and bring along a bucket of ice cream. I provide the desserts for our churches Wed. night bible study and this is always a hit. The apples aren't soggy and the sauce is perfect.

1/2 c apple cider
1/3 c maple syrup
2 Tbsp lemon juice
2 tsp cornstarch
1/4 tsp cinnamon
3 Tbsp butter, unsalted
5 lb apples (about 10 large) peeled cored and cut into 1/2" slices
2 Tbsp sugar
1 egg white lightly beaten

Steps:

  • 1. Adjust the oven rack to upper-middle position (7 to 9"from top) and heat oven to 450.
  • 2. Whisk cider, syrup, lemon juice, cornstarch and cinnamon until smooth, set aside.
  • 3. Heat butter in large skillet over medium-high heat, when foaming subsides add apples and cook stirring 2 to 3 times for about 5 minutes. DO NOT FULLY COOK APPLES.
  • 4. Remove from heat, add cider mixture, gently stir to coat. Set aside to cool while you prepare the crust.
  • 5. If using "store bought crust," roll out and fit together, trim so that it's approx 2" larger than your pan. You can use trimmings for decorations if you want to.
  • 6. Pour apple mixture into 9x13" pan and fit the crust on top, flute around edges and brush with beaten egg white and sprinkle with sugar.
  • 7. Make several vent slashes and bake for 25 to 35 minutes or until crust is golden brown. Serve warm or room temperature with ice cream.

2-1/4 cups all-purpose flour, divided
1/4 cup water
Pinch salt
1 cup shortening
FILLING:
1/2 cup maple syrup, divided
3 pounds tart apples (8 to 9 medium), peeled and thinly sliced
1-1/4 cups sugar
1/4 cup lemon juice
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
TOPPING:
1 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup cold butter, cubed
1 cup chopped pecans

Steps:

  • In a small bowl, combine 1/4 cup flour and water until smooth; set aside. In a large bowl, combine salt and remaining flour; cut in shortening until mixture resembles coarse crumbs. Add reserved flour mixture; knead gently until dough forms a ball. , Press dough onto the bottom and up the sides of an ungreased 15x10x1-in. baking pan. , Spread 1/4 cup syrup over crust. Arrange apples over syrup. Combine the sugar, lemon juice, cinnamon, vanilla and remaining syrup; drizzle over apples. , For topping, combine flour and sugar in a bowl; cut in butter until the mixture resembles coarse crumbs. Stir in pecans. Sprinkle over filling. Bake at 350° for 1 hour or until apples are tender.

I use apple from our own apple trees to make this dessert. It's a big hit at potlucks as well as with my family.

5 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
2 cups shortening
4 large egg yolks, beaten
2/3 cup milk
FILLING:
1 cup crisp rice cereal
8 cups sliced peeled tart apples (about 9 medium)
1 cup sugar
1 teaspoon all-purpose flour
1/2 teaspoon ground cinnamon
2 large egg whites, lightly beaten
1 cup confectioners' sugar
1 to 2 tablespoons milk

Steps:

  • In a large bowl, combine the flour, sugar and salt; cut in the shortening until crumbly. , Combine egg yolks and milk; gradually add to crumb mixture, tossing with a fork until dough forms a ball. Divide in half., On a lightly floured surface, roll each portion into a 15x10-in. rectangle. Line a 15x10x1-in. baking pan with one rectangle; sprinkle with cereal. , Arrange apples over cereal. Combine the sugar, flour and cinnamon; sprinkle over apples. Top with remaining pastry; cut slits in top. Brush with egg whites., Bake at 350° for 50-55 minutes or until golden brown. Cool completely on a wire rack. In a bowl, combine confectioners' sugar and enough milk to achieve drizzling consistency. Drizzle over bars. Store in the refrigerator.
