MOM'S DELUXE MASHED POTATOES
The addition of carrots and dill make these amped up mashed potatoes simply spectacular.

Steps:
- 1. Boil potatoes in broth for 15 mins on medium high. Add carrots and onion and boil 20 more minutes or until potatoes are tender. Drain in a colander, let cool 3 - 4 minutes.
- 2. Place cooked vegetables in a large bowl or back into the pot to mash. Add dill, sour cream, parsley, butter, salt, and pepper. Mash again.
- 3. Place mashed vegetables in a greased casserole dish. Dot with an additional TBSP of butter or margarine and bake (covered) @ 325 degrees for at least 30 minutes. Take cover off the last 10 minutes if you want it a little browned on top. Can be cooked ahead and refrigerated in a casserole dish, just add additional 30 mins to bake time.

- Peel and cube the potatoes; place in a saucepan and cover with water. Cook over medium heat until tender; drain. Mash until smooth (do not add milk or butter). Stir in cream cheese, sour cream, chives, onion salt and pepper. Spoon into a greased 1-1/2-qt. baking dish. Dot with butter; sprinkle with paprika if desired. Cover and bake at 350° for 35-40 minutes or until heated through.

This is a great 'treat' recipe I developed for a Valentine's Day Dinner. It's very rich and delicious, so should be reserved for special occasions!

Steps:
- Preheat oven to 350 degrees.
- Bake potatoes wrapped in foil until tender (about one hour).
- Meanwhile fry bacon until crispy, crumble.
- Reserve grease.
- In large bowl add bacon grease (optional).
- Add Cheddar, Sour Cream, Butter, Green Onion and Crispy bacon pieces to bowl.
- Remove potatoes and when cool enough to handle cut in half and scoop out flesh into bowl.
- (Flesh should still be warm so ingredients will melt).
- Save skins for stuffing!
- Mash potato and ingredients.
- Stuff skins (will make about 4 jumbo halves).
- Bake at 400 degrees until browned (about 10 minutes).

- Preheat oven to 350°F. In a small skillet, melt 1 tablespoon margarine over medium heat. Add onion, saute until soft, about 5 minutes. Remove from heat. Stir sour cream, thyme, nutmeg, pepper, and salt into skillet. Mix well. In a medium bowl, combine mashed potatoes with onion mixture. Mix well. Spoon into a 1-quart casserole dish; smooth top. Sprinkle bread crumbs over potato mixture and dot with remaining margarine. Bake potato casserole until heated through and top is golden, about 15 to 20 minutes. Serve immediately.

- 1. Preheat the oven to 450 degrees F.
- 2. Rub the potatoes with vegetable oil and put them on a baking sheet. Bake the potatoes until tender, about 1 hour.
- 3. While the potatoes are baking, cook the bacon in a skillet over medium-high heat until crisp, about 7 minutes. Transfer the slices to a paper towel-lined plate to drain, then crumble. Pour off all but 3 tablespoons of bacon grease from the skillet.
- 4. Cut the shrimp into thirds. Reheat the bacon grease over medium-high heat. Add the shrimp, Cajun seasoning, and a pinch of salt. Cook until the shrimp are opaque, stirring constantly, 2 to 3 minutes.
- 5. When the potatoes are done, let them cool slightly (leave the oven on). Slice off the top third of each potato and carefully scoop out the flesh into a bowl. Scoop out the potato from the top third, and add that to the bowl, then discard the skin. Leave about 1/4-inch border of potato inside the skin. Mash the potato flesh with 1 teaspoon salt, the green onion, cheese, butter, sour cream, mayonnaise, and black pepper. Stuff the potato skins with the filling, mounding any extra on top. Divide the shrimp on top of the potatoes and sprinkle with the crumbled bacon
- 6. Return the potatoes to the oven on the baking sheet and bake them until heated through, about 15 minutes. Remove the potatoes from the oven, sprinkle with the reserved chopped green onions and serve.

- Scrub and pierce potatoes. Rub will oil. Bake at 400° for 60-70 minutes or until tender. Cool for 10 minutes. Cut each potato in half lengthwise.
