Meatloaf Cupcakes With Mashed Potato image

Everything tastes better in miniature form! These Meatloaf Cupcakes are made extra irresistible by piling on mashed potato. These freeze very well. They are also great for hiding vegetables. I only added grated carrot, but you can mix in whatever vegetables you want. Finely chopped spinach or cabbage would blend in well, as would grated zucchini.

1 lb / 500g beef mince ((ground beef))
1 onion (, grated (brown, white or yellow))
2 small carrots (, grated)
2 eggs
1/4 cup grated parmesan cheese
1/4 cup tomato ketchup ((or tomato sauce))
1 cup panko ((or breadcrumbs))
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried thyme
1 tsp salt
Pepper
2 large or 3 medium potatoes
1 tbsp butter ((optional))
1/2 - 1 cup milk
Tomato ketchup or sauce
Parsley (, finely chopped (optional))

Steps:

  • Preheat oven to 180C/350F.
  • Spray 8 holes of a muffin tin.
  • Grate the onion and carrot straight into a large bowl.
  • Add remaining meatloaf ingredients and use your hands to mix and combine well.
  • Scoop up 1/2 cup of mince and use your hands to form a rough ball shape. Press into the muffin tin. The surface should be a slight dome shape.
  • Repeat with remaining mince. It should make about 8.
  • Bake for 20 - 25 minutes until browned on top. Remove from oven.
  • Peel and dice the potato. Steam or boil until soft but not waterlogged.
  • Drain, then add butter and 1/2 cup of milk. Mash using a potato masher until smooth or to your liking. Add extra milk if you need it. The mash needs to be creamy but stiff enough to hold its shape when piped or piled onto the Meatloaf Cupcakes.
  • Smear a dollop of tomato ketchup on the Meatloaf Cupcakes.
  • Top with mashed potato, either by piping it or just dolloping it on with a spoon.
  • Serve with a sprinkle of parsley, if using.

1 cup water
2 Tbsp. A.1. Original Sauce

3 cloves garlic, minced
3 cups hot mashed potatoes
1/4 cup chopped fresh parsley
1 cup HEINZ HomeStyle Savory Beef Gravy, warmed

Steps:

  • Heat oven to 375ºF.
  • Mix meat, stuffing mix, water and A.1. just until blended; press into 12 muffin pan cups sprayed with cooking spray.
  • Bake 20 to 25 min. or until done (160°F).
  • Add cream cheese and garlic to potatoes; stir until cream cheese is melted. Stir in parsley. Scoop over meatloaves. Serve topped with gravy.

1 lb potato, cooked and peeled
2 tablespoons butter
1 teaspoon salt
½ teaspoon pepper
½ cup shredded parmesan cheese
1 cup milk
¾ cup ketchup
2 tablespoons tomato paste
¼ cup brown sugar
1 teaspoon onion powder
1 teaspoon mustard powder
1 teaspoon paprika
1 tablespoon cooking oil
1 cup onion, diced
1 tablespoon garlic, minced
1 lb ground beef, 85%/15% fat
1 teaspoon salt
1 teaspoon pepper
1 teaspoon worcestershire sauce
½ cup shredded parmesan cheese
¼ cup fresh parsley
1 egg, beaten
½ cup panko breadcrumbs
¼ cup milk

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Place cooked potatoes into a large bowl. Add butter, salt, pepper, parmesan, and a splash of milk. Mash and add more milk gradually until the potatoes are the desired texture. Set aside and let cool.
  • Prepare the glaze by mixing ketchup, brown sugar, onion powder, mustard powder, and paprika in a bowl. Reserve half in a separate bowl to glaze once cooked.
  • Add oil in a skillet over medium heat, followed by onions and garlic. Cook until onions are translucent and fragrant. Set aside in a bowl to cool before adding to the meat mixture.
  • In a large bowl, combine ground beef, salt, pepper, worcestershire sauce, parmesan, parsley, cooled onions & garlic, egg, breadcrumbs and milk. Mix until combined.
  • Using a spoon or ice cream scooper, scoop the meat mixture and place into a greased 12 cup cupcake baking tin.
  • Using your fingers, spread the meat from the center to make a cup. Fill the middle with a small spoonful of mashed potatoes, and cover back up with the meat mixture.
  • Generously brush half of the reserved glaze on top of the meatloaf cups generously.
  • Bake for 25 minutes, reapplying the glaze halfway through. Once they are done cooking, brush with the remaining glaze that has Not been used on the raw meatloaves.

1 pouch (4.7 oz) Betty Crocker™ roasted garlic and Cheddar mashed potatoes
Water, butter and milk called for on potato mix pouch
1 lb extra-lean (at least 90%) ground beef
1/4 cup Progresso™ Italian style bread crumbs
2 tablespoons chopped onion
2 tablespoons milk
1/4 teaspoon pepper
1 egg
1/2 cup ketchup
1 tablespoon packed brown sugar
2 teaspoons ground mustard
1/2 teaspoon ground nutmeg
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 375°F. Place foil baking cup in each of 12 regular-size muffin cups.
  • In 2-quart saucepan, make potatoes as directed on pouch. Set aside. In large bowl, mix meatloaf mixture ingredients. Press about 3 tablespoons meat mixture in each muffin cup.

1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Micro-way-cool Bacon and Green Beans, recipe follows
Smashed potatoes and cream cheese, recipe follows
6 slices microwave ready-crisp bacon
One 16-ounce bag frozen green beans
A drizzle extra-virgin olive oil
Salt and pepper
2 1/2 pounds small red potatoes or baby Yukon gold potatoes
1/2 cup half-and-half or whole milk
8 ounces plain cream cheese or veggie cream cheese, cut into pieces
10 chives or 2 scallions, chopped or snipped with kitchen scissors

Steps:

  • Preheat oven to 450 degrees F.
  • Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. While meatloaf muffins bake, make green beans in the microwave. Serve meatloaf with Smashed Potatoes and Cream Cheese on the side, too.
  • Place bacon between paper towels and microwave 60 seconds on high. Cool bacon and chop or crumble up.
  • Place green beans in a bowl and drizzle with extra-virgin olive oil, salt and pepper. Cover the bowl loosely with plastic wrap and microwave green beans on high for 5 minutes, stir and cook 5 minutes more. Remove wrap and top green beans with crumbled bacon.
  • Boil potatoes until tender, 15 minutes. While the water boils and when the potatoes are cooking, you can be working on the meatloaf recipe.
  • When the potatoes are tender, drain them and return them to the hot pot to let them dry out a bit. Mash potatoes with half-and-half or milk using a potato masher. Add in the cream cheese and smash until the cheese melts into the potatoes. Then add chives and scallions and season with salt and pepper, to your taste.

2 large potatoes, boiled and mashed (can use leftover mashed)
3/4 cup(s) quick cooking oats, only
2 large eggs, lightly beaten
1 cup(s) smoky bbq sauce
1/2 small yellow onion, diced
2 tablespoon(s) olive oil, extra virgin
TOPPING
1/4 cup(s) smoky bbq sauce, for topping
1/4 cup(s) ketchup, for topping
1 tablespoon(s) brown sugar, for topping

Steps:

  • Preheat oven to 350^. Spray or oil muffin tins well with non-stick spray.You can use cupcake lines- but you have to spray them real well when you put them in the tins.
  • In a large bowl. combine the mix well all ingredients, except those for topping. Fill the muffin tins using an ice cream scoop or about 1/2 cup for each muffin, mound up to look like a muffin on top.
  • Combine the topping ingredients and brush thickly over the top of the meaty muffins. Bake for about 30 minutes depending if you are using regular or mini muffin tins. They are done when center reaches 170^ on a thermometer. To remove run a knife along the edge of each muffin and scoop them out carefully.
