This is an old Pennsylvania Dutch recipe I've always served as a side dish. The simple addition of onion and celery gives the potatoes a special flavor, and the parsley adds color.

1 large onion, finely chopped
2 to 3 celery ribs, finely chopped
6 tablespoons butter, cubed
2 slices white bread, torn
3 cups mashed potatoes
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 350°. In a large saucepan, saute onion and celery in butter until tender. Remove from the heat. Stir in the bread, potatoes and parsley. Spoon into a greased 1-qt. casserole. , Bake, uncovered, until top is lightly browned, 45 minutes.

POTATO SAUSAGE STUFFING

This potato and sausage stuffing is best prepared with homemade bread cubes.

1 pound lean pork sausage
2 potatoes, peeled and diced
1 ½ cups chopped celery
¾ cup diced sweet onion
¾ cup butter
9 cups soft bread cubes
½ teaspoon dried thyme
½ teaspoon ground sage
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sausage, potatoes, celery, onion and butter in a large, deep skillet. Saute over medium high heat until sausage is crumbled and evenly cooked.
  • Combine the bread cubes, thyme, sage, salt and pepper. Toss together with the sausage and potato mixture. Add chicken or vegetable broth if needed.
  • Bake stuffing in a covered casserole dish for 40 to 50 minutes.

4 cups fine soft bread crumbs
2 large onions, chopped
1 cup butter
1 cup egg substitute
1 to 2 tablespoons poultry seasoning

Steps:

  • In a bowl, combine the potatoes and crumbs; set aside. In a skillet, saute onions in butter until tender; add to potato mixture. This is an old recipe.... and very good... This is one of the stuffing recipes that I make for Thanksgiving and Christmas. This can be doubled or tripled too.

10 c potatoes (peeled, boiled and mashed or riced)
1 1/2 c butter
2 large onions (diced)
3 stick celery (minced)
1 tsp ground sage
1 1/2 tsp sea salt (or to taste)
1 tsp ground black pepper (or to taste)
1/2 c fresh parsley (minced)

Steps:

  • 1. Mash or rice the potatoes, put them in a large bowl. Melt the butter in a skillet, pour most of it over the potatoes. Saute' the celery and onion until the celery is tender. When done add this to the potato mixture. Add the sage, salt, pepper and parsley. Blend well. Either stuff a goose, turkey or chicken with this and roast in the oven according to the time needed per the weight of your poultry. OR Bake in the oven in roast pan at 350 degrees for 20 minutes.

  • Cook the potatoes in boiling salted water until almost tender; drain and set aside. Cook the sausage in boiling water for 10 minutes; drain. Halve each sausage lengthwise, then cut into 1/2-in. pieces. , In a large skillet over medium heat, cook and stir potatoes, sausage and onion in butter until sausage is browned and onion is tender. Add 2 teaspoons parsley, salt, rosemary, 3/4 teaspoon thyme and pepper., Stuff the chicken with the potato mixture. Place the remaining stuffing in a greased 1-1/2-qt. baking dish; cover and refrigerate until ready to bake., Place chicken in a roasting pan breast side up; brush with oil and sprinkle with remaining parsley and thyme. Add water to pan. Bake, uncovered, at 350° for 2-1/4 hours or until a thermometer inserted in stuffing reads 165° and a thermometer inserted in the thigh reads 180°., Bake stuffing in the baking dish for 45 minutes or until heated through and lightly browned. 4 large russett potatoes
1 lb italian pork sausage
1 medium yellow onion
2 Tbsp olive oil, extra virgin
1 tsp sage leaves, fresh chopped finely
1 clove garlic - minced
1/2 tsp salt
1/2 tsp fresh ground pepper
2 Tbsp butter
3/4 c chicken or turkey stock

Steps:

  • 1. Peel and cut the potatoes into 1 inch chunks. Boil the potatoes for 10-15 minutes until done. Drain the potatoes and place them in a bowl. Mash the potatoes with 2 tablespoons of butter and the chicken stock. Set aside.
  • 2. Slice the onion in half and then cut into 1/4 inch slices. Saute the onions in the 2 tablespoons of olive oil until translucent, next add the garlic and sage.
  • 3. Remove the sausage from its casing and add to the pan with the onions and galic and cook till the suasage is browned and no longer pink.
  • 4. Add the sausage mixture to the potatoes and mix till combined. Add the salt and pepper. You may add additional salt and pepper to your taste.
  • 5. Place the mixture in a buttered casserole. At this point you may refrigerate overnight or you can place in preheated 350 degree over for 20-30 minutes or until heated through.

3 tablespoons apple cider vinegar
3 tablespoons honey
2 teaspoons salt
2 teaspoons ground black pepper
1 teaspoon dry mustard
1 1/4 cups chopped pecans, toasted
5 large eggs, beaten to blend
Canned low-salt chicken broth

Steps:

  • Preheat oven to 350°F. Arrange corn bread on rimmed baking sheet. Bake until slightly toasted, stirring occasionally, about 40 minutes. (Corn bread can be prepared 1 day ahead. Cover and store at room temperature.)
  • Cook bacon in heavy large pot over medium heat until brown and crisp, about 10 minutes. Using slotted spoon, transfer bacon to bowl. Reserve 6 tablespoons drippings in pot (discard any remaining drippings). Add sweet potatoes, onion and thyme to same pot. Cover and cook over medium-low heat until sweet potatoes are just tender, stirring occasionally, about 20 minutes. Add greens. Cover; cook until greens just wilt, stirring occasionally, about 5 minutes.
  • Whisk vinegar, honey, salt, pepper and mustard in very large bowl to blend. Mix in sweet potato mixture, pecans and bacon. Stir in corn bread. Mix eggs into stuffing.
  • To bake stuffing in turkey:
  • Loosely fill main cavity with stuffing. Add enough broth to remaining stuffing to moisten lightly (about 1/4 to 1/2 cup, depending on amount of remaining stuffing). Generously butter glass baking dish. Spoon remaining stuffing into prepared dish. Cover with buttered foil, buttered side down. Bake stuffing in dish alongside turkey until heated through, about 25 to 30 minutes. Uncover and bake until top is slightly crisp and golden, about 15 to 20 minutes.
  • To bake all of stuffing in baking dish:
  • Preheat oven to 350°F. Generously butter 15 x 10 x 2-inch . Add enough broth to stuffing to moisten (about 3/4 to 1 cup). Transfer stuffing to prepared dish. Cover with butter foil, buttered side down; bake until heated through, about 30 to 35 minutes. Uncover and bake until top is slightly crisp and golden, about 20 to 25 minutes longer.

1 tablespoon chopped fresh dill
For veal:
1 (4- to 4 1/2-pound) bone-in back portion veal breast (3 or 4 ribs)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon vegetable oil
1 cup dry white wine
1 3/4 cups reduced-sodium chicken broth (14 fluid ounces)
2 Turkish bay leaves or 1 California
1/2 cup heavy cream
2 teaspoons cornstarch
1 tablespoon chopped fresh dill
1/4 teaspoon fresh lemon juice, or to taste
Special Equipment
a carpet or upholstery needle; kitchen string

Steps:

  • Make stuffing:
  • Cover potatoes with salted cold water by 1 inch in a 4-quart pot, then briskly simmer, uncovered, over moderate heat until just tender, 25 to 30 minutes.
  • While potatoes simmer, cook onion in oil in a 12-inch heavy skillet over moderate heat, stirring occasionally, until well browned, 10 to 12 minutes. Transfer to a bowl.
  • Drain potatoes in a colander and, when cool enough to handle, peel, then thinly slice. Add potatoes, salt, and pepper to onion and coarsely mash with a fork. Cool to warm and stir in egg and dill until combined. Cool completely, uncovered.
  • Stuff and braise veal:
  • Cut a 7- by 5-inch pocket in center of meat parallel to bone, leaving a 1/2-inch border of meat all around. Loosely fill pocket with potato stuffing and sew pocket closed on cut side with needle and kitchen string (and sew any tears).
  • Put oven rack in middle position and preheat oven to 350°F.
  • Pat veal dry and rub all over with salt and pepper. Heat oil in a wide 5- to 6-quart heavy pot over moderate heat until hot but not smoking, then brown veal, meat side down, 5 to 7 minutes. Turn veal over and add wine. Boil, uncovered, until wine is reduced by half, about 4 minutes. Add broth and bay leaves and return to a boil. Cover pot tightly with lid and transfer to oven, then braise until meat is very tender, about 2 hours.
  • Make sauce and slice veal:
  • Transfer veal to a cutting board using a large wide metal spatula and let stand, loosely covered with foil, 15 minutes.
  • Discard bay leaves and skim off fat from pan juices. Bring pan juices to a boil. Whisk together cream and cornstarch in a small bowl and whisk into pan juices. Simmer, stirring occasionally, until slightly thickened, 2 to 3 minutes. If desired, pour through a fine-mesh sieve into a bowl (discard solids). Stir in dill, lemon juice, and salt and pepper to taste.
  • Discard kitchen string from veal and cut meat from bones by holding knife against bone as you cut. Transfer stuffed meat to a cutting board and slice lengthwise 1 inch thick. Cut between ribs to separate. Serve veal slices and ribs with sauce.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash with milk.
  • Meanwhile, place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in green pepper and onion and cook for about 5 minutes.

6 baking apples - peeled and cored
½ cup cinnamon red hot candies
1 cup water
1 (29 ounce) can sweet potatoes, drained
⅓ cup packed brown sugar
½ cup crushed pineapple, drained
¼ cup chopped pecans
6 large marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot over medium heat, combine the candies and water. Stir until candies are dissolved.
  • Add the apples and baste frequently until apples begin to soften. Remove from heat and allow to cool.
  • Mix together the sweet potatoes, brown sugar, pineapple and pecans.
  • Stuff the cooled apples with the sweet potato mixture. Mound any remaining mixture on top of apples.
  • Place in 4 quart casserole dish and bake for 20 minutes; place a marshmallow on each apple, return to oven and cook until marshmallows are golden brown.

2/3 envelope ranch salad dressing mix
6 cups mashed potatoes (with added milk and butter)
2 medium celery ribs, finely chopped
1 cup sliced baby portobello mushrooms
5 bacon strips, cooked and crumbled
1-1/3 cups shredded Monterey Jack cheese
Chopped green onions, optional

Steps:

  • Preheat oven to 350°. On an ungreased 15x10x1-in. baking pan, bake cubed rolls until toasted, 7-10 minutes. Meanwhile, stir dressing mix into mashed potatoes., Fold in 2 cups cubed rolls, celery, mushrooms and bacon. Transfer to a greased 13x9-in. baking dish; top with remaining cubed rolls. Place baking dish on a baking sheet. Bake, uncovered, 35 minutes. Sprinkle with cheese; bake until cheese is melted and top is golden brown, 5-10 minutes longer. If desired, top with green onions.

1 (8 -9 lb) young goose, thawed if frozen
3 medium potatoes, peeled (approximately 1 pound)
1 1/2 teaspoons salt
1/4 lb lean salt pork, diced
1/4 cup finely chopped onion
1/4 lb bulk sausage
1/4 cup butter or 1/4 cup margarine
1 egg
1/2 teaspoon pepper
1 teaspoon sage leaf, crumbled

Steps:

  • Remove giblets from goose; wash well. Pat dry with paper towels. Salt lightly inside and out; set aside while making stuffing.
  • Place potatoes in medium saucepan. Cover with cold water; add 1/2 teaspoon salt. Bring to boil over moderate heat. Cover; cook on low 20 to 30 minutes or until tender. Drain. Place tea towel over pan; steam gently a few minutes.
  • Meanwhile, cook salt pork in heavy skillet over moderate heat until lightly browned. Remove with slotted spoon; reserve.
  • Add onion to skillet; cook until tender. Remove with slotted spoon; add to salt pork.
  • Add sausage to skillet; cook until lightly browned, breaking into small chunks as sausage cooks. Remove with slotted spoon; add to salt pork mixture.
  • Put potatoes through ricer or mash with potato masher.
  • Combine salt pork mixture, potatoes, and remaining stuffing ingredients; mix well. Allow to cool.
  • Stuff goose with potato mixture; truss bird. Place in open roasting pan, breast side up, on rack or trivet. Prick goose well on legs and wing joints to release fat. Roast in preheated 325°F oven 2 to 2 1/2 hours or until leg joint moves easily. Allow to stand 15 to 20 minutes before carving.
  • Carve goose; remove dressing to serving dish. Serve with applesauce. Makes 6 servings.

ROAST GOOSE WITH POTATO & STUFFING

As a Christmas turkey alternative, roast goose - free-range and oozing with flavour - is hard to resist

4.5 kg oven-ready goose , neck, giblets and wishbone removed and saved for the stock
1 onion , sliced
1 carrot , sliced
1 bouquet garni (a sprig of thyme ; 3-4 parsley stalks; 1 celery stick, sliced; and 6-7 peppercorns - all in a muslin bag)
25g butter
450g onions , chopped
450g cooking apples , peeled and chopped
2 tsp thyme or lemon thyme leaves
2-3 tbsp fresh orange juice
900g floury potatoes , halved if large
3 tsp finely grated orange zest
bay leaves
Bramley apple sauce

Steps:

  • Make the stock. Put the neck, giblets and wishbone from the goose into a large saucepan with the vegetables and bouquet garni. Cover with cold water and bring to the boil then simmer, half covered, for 11⁄2-2 hours. Strain the stock when it is ready. (You can make and strain the stock up to 24 hours ahead, and keep it in a covered container in the fridge.)
  • Make the stuffing. Melt the butter in a heavy saucepan, add the onions, cover and sweat on a gentle heat for about 5 minutes. Tip in the apples, thyme and orange juice and cook, covered, until the apples are soft and fluffy - about 10 minutes.
  • Boil the potatoes in their skins for about 20 minutes until tender. Drain and peel when cool enough to handle, then mash and add to the fruit and onion mixture with the zest and seasoning. Allow to get quite cold before stuffing the goose.
  • Preheat the oven to 180C/gas 4/fan 160C. Season the cavity of the goose with salt and freshly ground pepper and rub a little salt into the skin. Stuff the cavity loosely and roast for about 2 hours. To test if it's done, prick a thigh at the thickest part: the juices that run out should be clear. If they are still pink, the goose needs a little longer.
  • Put the goose on a serving platter and put it in a very low oven while you make the gravy. Spoon the fat from the roasting tin and save it in a covered container in the fridge - it will keep for months and is great for roast potatoes. Pour about 600ml/1 pint of the strained stock into the tin and bring to the boil on the hob. Using a small whisk, scrape the tin well to dislodge the flavourful meaty deposits. Taste, then strain and serve in a hot gravy boat. Serve the goose garnished with bay leaves and hand the gravy and apple sauce separately.
