1 tablespoon unsalted butter
1 medium onion, chopped or 1 leek, halved lengthwise and sliced (white and light green part only)
8 ounces (225 grams) white or yellow potatoes, peeled and diced into ½-inch cubes
4 cups vegetable stock
Kosher salt and freshly ground pepper
½ cup (75 grams / 2.6 ounces) elbow macaroni
½ cup (75 grams / 2.6 ounces) thawed and squeezed frozen chopped spinach
¼ cup heavy cream
1 cup (85 grams / 3 ounces) grated Gruyere cheese

Steps:

  • Heat the butter over medium heat in a medium Dutch oven or pot. Add the onion and cook until softened, about 5 minutes. Then add the diced potatoes and stir for 20 to 30 seconds.
  • Add the vegetable stock, raise the heat to high, and bring to a boil. Season with salt and pepper, reduce the heat to low, partially cover, and simmer for 8 minutes.
  • Add the macaroni and continue to cook until the macaroni and potatoes are both tender, about 8 minutes more. Stir in the spinach, heavy cream, and grated Gruyere. Make sure to stir well so the cheese melts into the broth evenly. Adjust seasoning as needed and serve immediately.

My mom collected them because they had art work in them. I liked them for the recipes I use to read them all the time when I was really young, She would get upset if anything...

10-12 firm potatoes
butter
salt
cream
4-5 slice bacon
1 large white onion, diced
1 Tbsp chopped parsley
1 dash(es) nutmeg
1 dash(es) cayenne pepper
1 dash(es) dried mustard
1 tsp worcestershire sauce
half and half
swiss cheese, grated

Steps:

  • 1. Boil and mash potatoes, and mix in the butter, salt and cream.
  • 2. Crisp the bacon and finely crumble it.
  • 3. Cook the onion in the bacon fat till tender but not dark
  • 4. Add to mashed potatoes along with parsley, cayenne, mustard, nutmeg and Worcestershire.
  • 5. Add enough top milk or light cream to give the consistency of cream soup
  • 6. Sprinkle crumbled bacon and grated cheese over the top and brown lightly in the oven. Serve piping hot.

4 potatoes, peeled and quartered
1 small carrot, finely chopped
½ stalk celery, finely chopped
1 small onion, minced
1 ½ cups vegetable broth
1 teaspoon salt
2 ½ cups milk
3 tablespoons butter, melted
3 tablespoons all-purpose flour
1 tablespoon dried parsley
1 teaspoon ground black pepper
1 cup shredded Swiss cheese

Steps:

  • In a large saucepan, bring potatoes, carrots, celery, onion, vegetable broth and salt to a boil. Reduce heat; cover and simmer until potatoes are just tender. Do not rinse: mash mixture slightly. Stir in milk.
  • In a small mixing bowl, blend butter, flour, parsley, and pepper; stir into potato mixture. Cook and stir over medium heat until thickened and bubbly.
  • Remove from heat: add cheese and stir until cheese is almost melted. Let soup stand for 5 minutes.

6 cups chicken stock
10 cloves garlic, crushed
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
½ cup white wine
2 ½ cups shredded Swiss cheese

Steps:

  • Place the stock in a large pot over high heat. Bring to a boil, stir in the garlic and reduce heat to low.
  • In separate skillet over medium heat, combine the butter and flour and stir well for a few minutes. Add the garlic and stock mixture along with the wine, stirring constantly. Bring to a boil to thicken.
  • Stir in the cheese and serve immediately. (Do NOT allow to boil once cheese has been added, and do not allow to sit long or the cheese will separate out.)

2 medium potatoes, peeled & diced
1/2 cup margarine
1/2 cup flour
2 green onions, chopped
2 -3 cups milk
4 slices swiss cheese
2 cups cooked ham, diced
salt and black pepper

Steps:

  • Cook diced potatoes in saucepan with just enough water to cover.
  • When tender, drain the liquid from the potatoes and save.
  • Set both aside while making roux.
  • In large saucepan, melt margarine.
  • Saute the chopped green onions until tender.
  • Remove onion from pan and set aside.
  • Add flour to melted margarine and stir until incorporated.
  • Cook over medium heat until the roux begins to just turn a golden color.
  • Using a whisk, stir in 2 cups of milk and 1 cup of the saved potato liquid.
  • Whisk until smooth and no lumps are seen.
  • Bring just to a boil or until the soup thickens.
  • Add the diced ham, cooked onion and the Swiss cheese. Also, add back in the cooked potatoes.
  • Stir until cheese is melted.
  • Add salt& pepper to your preference.
  • I usually add 1 teaspoons.
  • salt and 1/2 teaspoons.
  • pepper.
  • Stir well.
  • If soup is too thick, you may add the final cup of milk.
  • My bunch likes it thick.
