This dish has some of the flavors that I miss from my childhood in Germany. It is comfort food with a capital 'C.' I like to pair it with my own pork schnitzel or with baked chicken for a hearty dinner. This dish also includes a recipe for a creamy sauce that I use both in pot pies and as a substitute for condensed soups in many recipes. 'Guten Appetit!'

⅓ cup all-purpose flour
2 teaspoons chicken bouillon granules
1 cup water
1 cup milk
¼ cup sour cream
1 small onion, finely chopped
1 cup shredded Cheddar cheese
1 cup drained sauerkraut
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon caraway seeds
3 tablespoons unsalted butter, melted
1 (16 ounce) package frozen shredded hash brown potatoes

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Whisk the flour, bouillon granules, water, and milk together in a medium saucepan; bring to a boil until thick, 1 to 2 minutes, whisking continuously. Remove from heat and stir the sour cream into the flour mixture; set aside to cool.
  • Combine the onion, Cheddar cheese, sauerkraut, salt, pepper, and caraway seeds in a large mixing bowl. Stir the sour cream sauce and the melted butter into the sauerkraut mixture; fold the hash brown potatoes into the mixture. Pour into the prepared baking dish. Use a spatula to flatten into an even layer.
  • Bake in the preheated oven until the potatoes are tender and the top is brown and bubbly, 60 to 70 minutes.

4 cups left-over seasoned mashed potatoes
1 (16 ounce) package hot dogs, each cut into 4 pieces
1 (16 ounce) can sauerkraut, drained

Steps:

  • Spread half of mashed potatoes into bottom of a greased 2 1/2 qt.greased casserole.
  • Top with half of hot dogs and half of sauerkraut.
  • Repeat layers.
  • Bake at 350 degrees for 45 minutes.

2 cloves garlic, minced
1 tablespoon butter
1 (32 ounce) jar sauerkraut, drained
1 (2 1/2 pound) whole chicken, cut into pieces, skin removed
1 (15 ounce) can whole new potatoes, drained

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat garlic and butter in a small skillet over medium heat. Cook and stir until garlic softens, about 2 minutes. Reserve.
  • Spoon the sauerkraut into the bottom of a 9x13 inch baking dish; top with the chicken pieces. Scatter potatoes around the chicken, and sprinkle with the cooked garlic. Spoon some of the sauerkraut over the top of the chicken. Cover dish with aluminum foil.
  • Bake in preheated oven until the chicken cooked through, and very tender, about 1 1/2 hours.

Inspired by food I grew up eating. The sauerkraut and fennel makes this potato dish a very European-tasting side that goes great with sausage. Just be sure to squeeze out all that liquid from the kraut.

4 tablespoons butter
6 red potatoes, cut into chunks
1 onion, chopped
1/2 fennel bulb, chopped
3 celery ribs, chopped
4 carrots, peeled and chopped
2 cups sauerkraut, very WELL-DRAINED
fresh cracked pepper
sea salt, to taste

Steps:

  • Preheat oven to 400°F.
  • Heat the butter in a heavy pot over medium heat. Add the potatoes, and brown them a bit for 10 minutes, while sitrring every now and then. Add salt and pepper to taste.
  • Add the onion, fennel, celery and carrots to the pot; stir and cook for 5 minutes longer. I add just a bit of salt & pepper here too.
  • Remove from heat and stir in the sauerkraut. Tranfer mixture to a greased or sprayed 9x13" casserole dish.
  • Bake for one hour, and stir every 15 minutes so everything gets nicely browned and nothing burns. I add a small bit of salt and pepper every time I stir as well.
  • Remove from oven and let cool for at least 10 minutes before serving.

5-6 medium potatoes
1 can (14 1/2 oz.) sauerkraut
4 pork chops
Salt and pepper to taste
Dutch Oven or Slow cooker

Steps:

  • Preheat oven to 325. Peel and slice potatoes about 1/8 thick.
  • Place a couple of Tablespoons of sauerkraut in bottom of baking dish. Place meat in one layer next. Put potatoes in one layer on top. Place the remainder of the sauerkraut on top. Add salt and pepper to taste. Add enough water just to cover all ingredients.
  • Place in oven or turn slow cooker on high for 3 hours.
