My name for it says it all. This is what I grew up eating and is the only kind that I have ever tried and liked. My friend Steph always swore that she hated the stuff, too, till she tried this. Now she, and many others, are converts too. The original is made with full fat mayo and either whole milk yogurt or sour cream, but the light is just as good. Just remember to hard boil the eggs :-)

7 medium potatoes
4 -5 hard-boiled eggs, chopped
1/2 cup salad oil
1/2 cup low-fat plain yogurt (or light sour cream)
2 tablespoons vinegar
1/3 cup sliced green onion (whole thing)
1 teaspoon salt
2 teaspoons chopped dill weed
1 dash pepper
3/4 cup diced celery
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup light mayonnaise

Steps:

  • Cook potatoes in water to cover; drain.
  • Peel; slice while warm.
  • Combine oil, vinegar, salt, pepper, garlic powder, and onion powder; blend thoroughly.
  • Pour 1/3 to 1/2 of the dressing over the potatoes. Let stand for at least 1 hour.
  • Add mayonnaise, eggs, sour cream, onions, dill weed and celery to remaining dressing; combine with potato mixture. Chill until ready to serve.

This is the only potato salad I would eat as a child, because I didn't like pickles. The recipe is from my aunt. She uses garlic chive, which I have substituted by using the same amount of chive and a clove of garlic. I usually leave off the nasturtiums, but they add a nice *Zip* if you have them.

8 -10 medium potatoes
4 hard-boiled eggs, chopped
1 cup minced onion
1 1/2 cups mayonnaise or 1 1/2 cups Miracle Whip
1 1/4 cups minced chives
1 garlic clove, minced
2 tablespoons dijon-style mustard
1 tablespoon fresh minced thyme or 1 teaspoon dried thyme
salt and pepper, to taste
1 hard-boiled egg, cut into slices
3 slices cooked bacon, crumbled
6 -8 nasturtium blossoms (make sure they have not been sprayed with chemicals)

Steps:

  • Peel and chop potatoes into bite-sized pieces.
  • Boil or steam potatoes until just tender (should not immediately fall apart when you stick a fork in).
  • Rinse in cold water to chill.
  • Combine mayonnaise, mustard, thyme, salt and pepper, blend well and allow to rest at least 30 minutes (while potatoes are cooking).
  • In a large bowl, combine all salad ingredients (except garnish), adding more mayonnaise if necessary.
  • Garnish with egg slices.
  • Chill salad (tastes best a day after you make it).
  • Before serving, sprinkle with bacon bits and nasturtium blossoms.

This recipe was given to me by an elderly woman who had brought lunch to another elderly woman that I was taking care of. I don't know know the origin of this type of potato salad, and tried to search Zaar to make sure I wasn't duplicating, but admit that I did not search all 1200 potato salad recipes. I have never tasted a potato salad that was so good, so I got the recipe from her. The amounts are approximate as she just told me the ingredients, and I eyeball it, of course it also depends on how much you want to make, so adapt it accordingly. She did insist however that you have to use Hellmann's mayo. My husband, who Never eats potato salad eats and actually enjoys it. It has a nice mellow flavor and texture with-out the typical relish and mustard, I'm sure all of the eggs contribute to that. I took it to a church potluck and got raves about it. It is definitely not low fat, not sure how it would adapt. Another example that sometimes simple IS better. Hope you enjoy!

12 -15 medium potatoes (any kind)
1 dozen hard-boiled egg
2 -2 1/2 cups Hellmann's mayonnaise
1 sweet onion
1 tablespoon celery seed
salt & pepper

Steps:

  • Peel and dice potatoes, Boil in salted water until tender.
  • Hard boil eggs, peel, chop. (obviously lol).
  • Finely chop onion.
  • *1-2 ribs of finely diced celery is nice, but was not in the original recipe.
  • A dash of garlic powder or garlic salt is nice too.
  • Judge the amount of Mayo to your taste and # of potatoes, but do add it until it is nice and creamy.
  • Mix all ingredients together when warm, serve fresh with-out chilling, if you can, it is good chilled too, but particularly creamy when warm-to room temperature.
  • It is also best to use the hardboiled eggs right after cooking, it's ok if they are slightly cooled from peeling, but best in this, if they are freshly cooked.
  • Most of the prep time is attributed to the peeling and chopping of the potatoes.
  • *Of course, because of the Mayo you won't want to leave it out too long.
  • I have also heard (unknown it it's true, but I never take the chance) not to serve anything that has Mayo in it, with Sterling Silver servers.
