I've got rave reviews for this awesome potato side dish. Great for potlucks since it's done in a CrockPot. I have to give credit to "Best Loved Slow Cooker Recipes" Cookbook for this recipe. Add ham and green beans to make it a main dish.

1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1 (8 ounce) container sour cream
1/4 cup onion, chopped
1/4 cup butter, melted
1 teaspoon salt
1 lb red potatoes, peeled and chopped
2 cups cheddar cheese, shredded
1 1/2-2 cups seasoned stuffing mix (dry)
3 tablespoons butter, melted

Steps:

  • Combine soup, sour cream, onion, 1/4°C butter and salt in small bowl.
  • Combine potatoes and cheese in CrockPot.
  • Pour soup mixture over potato mixture.
  • Sprinkle dry stuffing mix over potato mixture.
  • Drizzle with remaining 3 T butter.
  • Cover and cook on LOW 8-10 hours or on HIGH 5-6 hours.

2/3 cup milk

Steps:

  • In lagre mixing bowl add ingredients listed.
  • mix well.

1/2 pound sliced bacon, diced
1 cup thinly sliced celery
1 cup chopped onion
1 cup sugar
2 tablespoons all-purpose flour
1 teaspoon salt
3/4 teaspoon ground mustard
1 cup cider vinegar
1/2 cup water
5 pounds unpeeled small red potatoes, cooked and sliced
2 medium carrots, shredded
2 tablespoons minced fresh parsley
Additional salt, optional

Steps:

  • In a large skillet, cook the bacon over medium heat until it is crisp. Remove bacon to paper towels. Drain the skillet, reserving 1/4 cup drippings. Saute celery and onion in drippings until tender., In a large bowl, combine the sugar, flour, salt, mustard, vinegar and water until smooth. Add to the skillet. Bring to a boil. Cook and stir for 1-2 minutes until thickened. , In a large serving bowl, combine the potatoes, carrots and parsley. Drizzle with sauce and stir gently to coat. Season with additional salt if desired. Crumble bacon; sprinkle on salad. Serve warm. Refrigerate leftovers.

10 red potatoes, scrubbed clean
1 cup mayonnaise
1/2 cup Dijon mustard
1/2 teaspoon dried rosemary
fresh coarse ground black pepper, to taste
salt, to taste
2 radishes, sliced
2 stalks celery, sliced
2 carrots, grated
1 small onion, chopped
3 slices bacon, fried crisp
2 hard-boiled eggs, chopped

Steps:

  • Chunk the potatoes, leaving the skins on.
  • Boil in salted water until fork-tender about 15 minutes.
  • Drain well.
  • In a large bowl combine the potatoes with the rest of the ingredients, more or less to your liking.
  • There are no strict rules here.
  • Just really good potato salad.
  • Oh, and BTW, this stuff tastes even better the next day!

2 1/2 lb skin-on red potatoes (cubed)
1 green bell pepper (diced)
1 lb white button mushrooms (sliced)
1 medium red onion or sweet vidalia (diced)
2 medium or one large boneless skinless chicken breast (diced)
1 oz land o lakes ranch seasoning
2 1/2 oz of real bacon pieces (your favorite brand)
1/2 lb colby/jack or monterey jack cheese (shredded)
pinch salt and pepper to taste
non-stick spray

Steps:

  • 1. Spray glass baking dish with non-stick spray, and cut red potatoes into bite size pieces.
  • 2. Dice and slice other vegetables and add to pan. Now the chicken can be cooked before or along with. I understand the concern about that, so do what you will. I personally just dice it up and add it along with the other ingredients and it cooks up perfect.
  • 3. Add a third of the bacon pieces and the 1oz. of ranch seasoning. Get your hands in there and mix it completely.
  • 4. Bake for one hour uncovered at 350 to 400 depending on your oven. Pull out and check potatoes and give a quick toss. Put back in for another 15 minutes or until done.
  • 5. When you are satisfied everything is done, pull out and add 1/2 lb. of shredded cheese and the last of the bacon bits. Place once more into the oven to melt the cheese or bake it till it's crisp, your choice.I like ours to be gooey!
  • 6. Plate up as a main dish or use as a side as I do at family dinners. Change this recipe with other ingredients to make it your very own. The possibilities are endless.

1 1/2 lbs red potatoes, cut into 1/2 inch - 1 inch cubes
1/2 cup mayonnaise
2 tablespoons sour cream
2 tablespoons white wine vinegar
2 tablespoons whole-grain Dijon mustard (see note)
6 -8 blanched asparagus spears, thinly sliced (see note)
1 small carrot, grated
3 large hard-boiled eggs, cut into cubes
2 green onions, sliced
salt & freshly ground black pepper

Steps:

  • Gently boil the potatoes until just tender. Drain well and cool to room temperature.
  • Place the mayonnaise, sour cream, vinegar and mustard in large salad bowl and whisk to combine.
  • Add the potatoes and remaining ingredients and toss to combine.
  • Cover and refrigerate salad until ready to serve.
  • NOTE: Coarser whole-grain Dijon mustard is sold at most supermarkets alongside the regular smooth Dijon mustard.
  • NOTE: To blanch the asparagus, cook in boiling water for one minute. Drain well, cool with ice-cold water, and then drain well again.

PREP POTATOES:
4 medium potatoes, i used russet
3 c apple cider vinegar, or more
8 clove garlic, peeled and crushed
1 small onion, peeled and cut into chunks
1/4 c olive oil
1 1/2 tsp sea salt
1/2 tsp black peppercorns, whole
1 tsp pickling spice
TOPPINGS:
1 Tbsp melted butter
1 Tbsp granulated sugar
1/2 c diced fresh tomato or 1/2 c. salsa
1/4 c crispy bacon bits
1 Tbsp chopped chives or green onion tops
3 Tbsp olive oil
1/4 c mexican blend shredded cheese
4 medium dollops of sour cream

Steps:

  • 1. Potato Prep: Wash potatoes and pierce potatoes all over and all around 1/2 inch deep or more( the more holes the better- so they get the flavor inside)
  • 2. Place the potatoes in a medium saucepan. Add the apple cider vinegar(must be this type) to just cover the potatoes using more or less as to just cover. Do not use any water. Add in the remaining ingredients to the pot with the potatoes.
  • 3. Bring to a boil and cook uncovered over medium-high heat for 20-25 minutes(until tender but not mushy) Tender when poked with a fork. Remove from heat. Remove potatoes. Cool slightly so you can handle them. Discard vinegar mixture.
  • 4. Make a slit down the center like you do for a baked potato. Add the toppings as you wish.
  • 5. Toppings: In a small bowl combine the melted butter,sugar and olive oil and tomatoes or the salsa, mix to blend. Spread equally among the potatoes. Top with sour cream, bacon, chives, and sprinkle with the cheese,if desired.

I think this hearty dish -- like scalloped potatoes but so much better -- is a meal on its own. A small salad on the side adds the finishing touch.

700 g potatoes
3 -4 leeks
6 -8 slices streaky bacon
125 g mature hard cheese (cheddar is good)
600 -900 ml chicken stock
50 g butter
1 tablespoon mustard seeds
4 tablespoons creme fraiche
sea salt
black pepper
1/4 cup fresh sage leaf

Steps:

  • Preheat the oven to 400 F or 200 degrees C.
  • Peel the potatoes and slice thinly.
  • Wash the starch off them and then pat dry in a cloth.
  • Trim the leeks, discarding the coarse green ends, then slice thinly.
  • Butter a gratin dish and put in half the potatoes and top with all the leeks.
  • Cut the bacon into strips, fry until crisp, and then put the bacon over the leeks.
  • Briefly fry the sage leaves in the leftover bacon fat until browned and crisp.
  • Scatter over the leeks, along with the bacon fat.
  • Grate the cheese directly over the top of the dish and then cover with the rest of the potatoes.
  • Heat the stock and pour it over the potatoes until it reaches the top layer, but do not submerge them.
  • Season with salt and pepper and dot with most of the remaining butter.
  • Smear the last of the butter on a sheet of waxed paper and lay it, buttered side down, on top of the dish.
  • Cook for 45 minutes.
  • Remove and check with a skewer that the potatoes are nearly cooked.
  • Mix the mustard with the creme fraiche and pour it over the gratin, smoothing with a rubber spatula to spread it evenly.
  • Place the dish back in the oven without the paper for a further 15 minutes or until it is golden, bubbling and cooked through.
  • Serve immediately.

1 3/4 c chicken broth
1 tbsp butter
1 clove garlic, minced
1 tbsp flour
1/2 c instant potato flakes
1/4 tsp salt
2 oz broccoli, coarsely chopped (about half a cup)
Sliced green onions, shredded cheddar cheese, crisply cooked, crumbled bacon, and sour cream

Steps:

  • 1. Combined milk, chicken broth and set aside. Melt butter over medium heat in a medium saucepan. Add garlic and flour; cook and stir 1 minute. Add milk, chicken broth and potato flakes. Bring mixture to a boil; reduce heat to a simmer. 2. Add chopped broccoli, salt, black pepper to soup, simmer, uncover 3to 5 minutes or until broccoli is tender. Remove saucepan from heat.
