1 pound lean ground beef
½ cup plain bread crumbs
¼ cup milk
2 tablespoons taco seasoning mix
2 baking potatoes, peeled and diced
1 cup salsa
½ cup shredded Cheddar cheese, or to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Cut four 12x18-inch sheets of aluminum foil.
  • Mix ground beef, bread crumbs, milk, and taco seasoning mix together in a medium bowl until well blended. Shape into four 4-inch patties. Mix potatoes and salsa in another medium bowl.
  • Place 1 patty onto each piece of foil and top with 1/4 of the potato mixture and 1/4 of the Cheddar cheese. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • Place packets, seam-side up, on the preheated grill. Cover the grill and cook, rearranging the packets several times, until patties are cooked through and potatoes are tender, about 25 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

1/2 cup Progresso™ plain bread crumbs
2 tablespoons Old El Paso™ taco seasoning mix (from 1 oz package)
1/4 cup milk
3 cups frozen diced hash-brown potatoes (from 32-oz bag)
1 cup salsa con queso dip (from 15-oz jar)

Steps:

  • Heat gas or charcoal grill. In medium bowl, mix ground beef, bread crumbs, taco seasoning mix and milk until well blended. Shape mixture into 4 (4-inch) patties. In another medium bowl, mix frozen potatoes and dip.
  • Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray. Place 1 patty on each; top with 1/4 of potato mixture. Wrap each pack securely using double-fold seals, allowing room for heat expansion.
  • When grill is heated, place packs, seam side up, on grill over medium heat; cover grill. Cook 15 to 25 minutes, rearranging packs several times, until patties are thoroughly cooked.
  • To make in oven, place packs on cookie sheet. Bake at 375°F 40 to 45 minutes or until potatoes are tender and burgers are cooked through (at least 165°F in center).

1 sweet potato (about 190g), cut into wedges
260g turkey breast mince (under 5% fat)
1 red onion, diced
2 garlic clove, grated
1 egg, beaten
1 apple (about 70g), peeled and coarsely grated
1 tbsp dried oregano
1 tbsp paprika
15g coconut oil, melted
135g green vegetables (spinach, kale, broccoli, mangetout or green beans)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Zap the sweet potato wedges in the microwave for about 6 mins on full power until just turning soft. Leave to rest for 30 secs.
  • While the sweet potato is spinning in the microwave, mix the mince in a bowl with the onion, garlic, egg and apple. Get your hands stuck in and work the ingredients together with a good pinch of salt and pepper, the oregano and paprika. Shape the mixture into two burgers about 3cm thick. Place on a lined baking tray in the oven for 20-25 mins, turning half way through cooking, until cooked through.
  • Heat the coconut oil in a large frying pan over a high heat. Add the sweet potato wedges and shallow-fry for about 3 mins each side until they are nicely browned all over and cooked through to the centre. (Alternatively, toss in the oil and roast in the oven for 15-20 mins.) Drain on kitchen paper, then season with a good pinch of salt.
  • Serve the burgers with the sweet potato wedges and a portion of green veg either steamed, blanched or boiled.

2 large, fat sweet potatoes (about 1 1/2 pounds), peeled and cut into eight 1/2-inch rounds
3 tablespoons olive oil, plus more for oiling the grill grates
Kosher salt
One 15-ounce can black beans, rinsed
1/2 cup frozen corn, thawed
1/3 cup finely diced pepper Jack cheese
5 tablespoons stone-ground cornmeal
1 large egg white
2 scallions, thinly sliced
2 tablespoons mayonnaise
4 lettuce leaves

Steps:

  • Preheat the oven to 425 degrees F. Prepare a grill for medium-high heat. Brush the sweet potatoes with 1 tablespoon of the oil, and sprinkle with a large pinch of salt. Lightly oil the grill grates. Arrange the sweet potato rounds on the grill, cover with the lid and cook until there are nice grill marks and the potatoes are tender but not mushy, 8 to 12 minutes per side. Set aside to cool completely. (These "buns" can be refrigerated in an airtight container up to 2 days.)
  • Meanwhile, mash the beans and corn in a medium bowl until the beans form almost a paste. Add the cheese, 3 tablespoons of the cornmeal, the egg white, scallions and 3/4 teaspoon salt. Form the mixture into 4 patties about 1/2 inch thick. Refrigerate for at least 20 minutes up to overnight.
  • Heat the remaining 2 tablespoons oil in a large ovenproof nonstick skillet over medium heat. Put the remaining 2 tablespoons cornmeal onto a plate. Dredge both sides of the patties in the cornmeal. Cook until golden brown, 3 to 4 minutes per side. Transfer the skillet to the oven, and bake until the burgers reach an internal temperature of 165 degrees F, about 5 minutes.
  • Brush 4 of the grilled sweet potato slices with some of the mayonnaise. Put the lettuce leaves and burgers on the remaining 4 slices, and sandwich together.

You can use blond or black quinoa for these delicate burgers. Black will look striking against the sweet potato's orange when you cut into the burgers. The red lentils pale to yellow when you cook them; they contribute texture and flavor. The burgers have a decidedly Mediterranean flavor, with feta and mint included in the mix. But I still like to serve them with raita or chutney; a more Mediterranean condiment would be yogurt seasoned with puréed garlic and mint.

1/3 cup quinoa (blond or black), rinsed
1/3 cup red lentils, rinsed
1 2/3 cups water
Salt to taste
1 1/2 pounds sweet potatoes, baked
3 cups, tightly packed, chopped fresh spinach
3 ounces feta, crumbled (about 3/4 cup)
3 tablespoons chopped fresh mint
1/4 cup minced chives
2 teaspoons fresh lemon juice
Freshly ground pepper to taste
1 cup panko or chickpea flour (you will not use all of it)
1/4 cup grape seed oil

Steps:

  • Combine quinoa, red lentils, water and salt to taste (I used a rounded 1/2 teaspoon) in a saucepan and bring to a boil. Reduce heat, cover and simmer 15 to 20 minutes, until quinoa is tender and blond quinoa displays a thread, and lentils are just tender. Drain off any water remaining in the pot through a strainer, tapping strainer against the sink to remove excess water, then return quinoa and lentils to the pot. Cover pot with a towel, then return the lid and let sit undisturbed for 15 minutes.
  • Skin sweet potatoes and place in a large bowl. Mash with a fork. Add spinach and mash together (I use my hands for this). Add quinoa and lentils, feta, mint, chives, lemon juice, and salt and pepper to taste. Mix together well. Mixture will be moist.
  • Take up about 1/3 cup of the mixture and form into a ball (you can wet your hands to reduce sticking). Roll the ball in the panko or chickpea flour, then gently flatten into a patty. Set on a plate and continue with the rest of the mixture. Refrigerate uncovered for 1 hour or longer (the longer the better).
  • When you're ready to cook, place a rack over a sheet pan. Heat 2 tablespoons oil in a 12-inch, heavy nonstick frying pan over high heat. Swirl the pan to coat with the hot oil. Lower heat to medium. Place 4 to 5 patties in the pan (do not crowd), and cook until well browned on one side, about 4 minutes. Turn and brown for about 4 more minutes. Remove to rack. Heat remaining oil in the pan and cook remaining patties. Keep patties warm in a low oven until ready to serve. Serve with a salad and your choice of toppings, such as the usual (ketchup, mustard, relish), or yogurt raita, garlic yogurt, or chutney.

1/2 red onion, diced
4 tablespoons olive oil
1/2 large sweet potato, steamed and then peeled
1 cup cooked quinoa
1 can 15oz can of black beans, drained and rinsed
3/4 cup almond meal
1 teaspoon cumin
1/2 teaspoon turmeric
1/4-1/2 teaspoon cayenne
4 burger buns of choice
4-8 romaine lettuce leaves, for assembling
4 slices sliced tomatoes
1/4 cup tahini
1 pinch saffron threads
1 clove garlic, grated
1/2 juice of 1/2 lemon

Steps:

  • To prepare the burger, 1. Heat a skillet over medium heat and add 1 tbsp of olive oil. When the oil shimmers, add your red onions and sauté until they start to become tender, translucent, and slightly golden around the edges. 2. Once the onions have started to brown, add the cumin, turmeric, cayenne, salt, and pepper. Cook the spices with the onions until the "raw" spice smell goes away, and the spices have roasted and darkened in color about 3-4 minutes. Remove the onions from heat and set aside to cool. 3. In a high-speed blender, combined your steamed and mashed sweet potato, black beans, cooked quinoa, cumin sautéed red onions, almond meal, and 1 tbsp of olive oil. Blend the burger on high speed, scraping down the sides of the blender as needed to ensure the mixture is incorporated. Don't worry about completely pulverizing the burger mixture, we like to keep a little bit of texture here. 4. Transfer the mixture into a bowl, and season to taste with salt and pepper. Mix again to thoroughly combine. 5. Form the mixture into burger patties with your hands - this makes about 4 large burgers, or 6 smaller ones. 6. Heat your pan on medium heat, and add some olive oil. When the oil shimmers, add your burger patties to the hot pan and pan-fry the burger, about 5 minutes each side, until the burger is golden-brown around the tops and edges.
  • To prepare the sauce, 1. In a small bowl, combine your lemon juice and saffron threads and let sit for about 5 minutes to allow the saffron to infuse into the lemon juice. 2. In a separate bowl, mix the tahini, grated garlic clove, olive oil, and finally the lemon and saffron mixture together. Season with salt and pepper to taste. 3. Mix to combine until smooth. Add a tablespoon of water (or more) to get the sauce to your desired consistency.

1/2 cup whole milk
1 1/8 teaspoons active dry yeast (not instant)
2 1/4 cups bread flour
1/2 cup baked sweet potato
3 tablespoons light brown sugar
3/4 teaspoon salt
1/8 teaspoon freshly grated nutmeg
1 large egg, separated
3 tablespoons unsalted butter, softened
flaked sea salt, and freshly thyme leaves to top

Steps:

  • To bake sweet potato: Wash and dry the sweet potato then pierce the skin all over with a fork. Bake in a pre-heated over at 400ºF for 40-50 minutes, until a small knife can be easily inserted into the flesh. Let it cool completely then scoop out the flesh. Set aside.
  • To make the sweet potato burger buns: Heat the whole milk in the microwave for about 35-45 seconds until it's warm to the touch but not hot (110-115ºF). Add the active dry yeast and let it dissolve and foam up for 10 minute
  • In a stand-mixer with a dough-hook, add the bread flour, baked sweet potato, light brown sugar, salt, grated nutmeg and 1 large egg yolk (reserve the egg white for egg-wash later). Add whole milk and yeast, then mix on medium speed for 5 min until the dough is elastic and smooth. If the dough is too dry that it won't come together after a couple minutes, add 1 tsp of the reserved egg white to moisten.
  • Then knead the unsalted butter into the dough on medium speed, 1 tablespoon at a time (only add the next addition when the previous one is completely incorporated into the dough). Increase the speed to medium-high and knead the dough for another 6-8 minutes until shiny, elastic and very smooth. The dough should be slightly sticky, but pulls away cleanly from the bowl while the machine's running.
  • Place the dough in a large, lightly oiled bowl then cover with plastic wrap. Let proof at a warm/room-temperature spot until fully doubled in size, approximately 2 hours. If you are making the buns the day before using, proof refrigerated for 18~24 hours.
  • Scrape the dough onto a lightly floured surface and punch out the air. Divide it into 7 equal portions (or 6 if you want it a little bigger). Stretch the surface of the dough and tuck it underneath itself to form a smooth top-surface while shaping the dough into a ball. Place the doughs on a parchment-lined baking-sheet then loosely cover with plastic wrap. Let proof again at room temperature for 45-50 min (or 2 hours if the dough was refrigerated overnight), until the doughs have almost doubled again.
  • Meanwhile, preheat the oven on 375ºF.
  • Beat the reserved egg-white with 1 tsp of water to make egg-wash. For an extra shiny finish, brush the doughs with egg-wash, then let dry for 5 min and brush again for another coating. Sprinkle the top with flaky sea salt and fresh thyme leaves, then bake in the oven until golden browned, about 20 minute.

I had some left over potatoes and it was burger night so I thought Why not? My left overs were garlic mashed potatoes. It tastes delish and it does stretch that burger meat. They are a bit soft to handle so if you BBQ I recommend using a griddle under the burger (the ones with the holes) . I enjoy these burgers pan fried. I like this amount for 4 burgers but it will make 6 just increase the number of buns, tomato slices etc.

8 ounces mashed potatoes
4 tablespoons creamy caesar salad dressing
4 tablespoons jalapenos, finely chopped (optional)
salt & pepper
2 cups mushrooms, sliced
1 1/2 cups onions, sliced
2 cups mixed sweet colored bell peppers, chopped
4 buns
4 slices tomatoes, 1/4-inch thick
4 lettuce leaves
4 slices cheese, your choice

Steps:

  • Mix together the hamburger, potato, jalapenos & Caesar dressing.
  • Season with Salt & Pepper.
  • Make into 4 patties.
  • Cook the patties on high heat in a large fry pan brown one side of the burgers, flip and turn heat to medium.
  • Add the Mushrooms & Onions & cover pan, stir the veggies a couple of times.
  • When the onions and mushrooms are almost golden add peppers, flip burger and cover the pan turn to low, continue cookig until burgers are no longer pink (entire time apprx 20 minutes).

  • Assemble burger putting some of the Musrooms mixture on the burger along with the lettuce & tomate and have the rest of the veggie mixture on the side.

6 cups cold water

½ cup milk

6 slices provolone cheese
2 cups panko breadcrumbs
5 eggs
oil, for frying
1 lb ground beef
1 teaspoon salt
1 teaspoon onion powder
½ teaspoon pepper
12 slices bacon

Steps:

  • In a pot over high heat, add the potatoes and garlic and cover with cold water.
  • Bring the potatoes to a boil, reduce the heat and simmer until fork tender, about 20 minutes.
  • Drain the potatoes in a colander and return to the pot.
  • Add the butter, milk, salt and pepper. Mash until smooth.
  • Add in the parsley and mix until combined. Transfer the potatoes to a piping bag or ziplock bag.
  • On a parchment paper-lined baking sheet, place the provolone slices.
  • Pipe the mashed potatoes on top of the rounds starting from the outside to the center of the cheese.
  • Freeze until solid, about 1 hour.
  • Place the egg and panko in two bowls.
  • Place the frozen potato round in the egg ensuring it's completely submerged.
  • Place the potato round in the panko and flip to cover completely. If necessary repeat process putting potato back into the egg and once more in the panko.
  • In a large pot, heat oil to 350°F (180°C).
  • Place the potato in oil and fry until both sides are golden brown, about 2 minutes per side.
  • Set the mashed potato rounds on a wire rack to drain.
  • In a bowl, add the ground beef, season with salt, onion powder, and pepper. Mix until combined.
  • Form patties with your hand about the size of your palm.
  • Lay the bacon two strips overlapping and two strips perpendicular.
  • Place the burger patty on the bacon and fold over the bacon strips, trimming if necessary.
  • Heat a pan over medium heat and add the bacon patties and cook until cooked through.
  • Assemble the burger by placing one potato "bun" on the bottom. Spread with ketchup or your favorite sauce.
  • Build with lettuce, patty, red onion and top potato bun.

1 onion minced
3 garlic gloves minced
2 cups boiled quinoa
2 beet boiled/cooked
2 avocados
1 lemon
some red vine winegar
salt and pepper to taste

  • 1. Once the beet is boiled, mash the beets in a bowl. Remove any excess fluid. 2. Add onions, cilantro, garlic gloves, juice from a lemon, 1-2 teaspoons of red vinegar. 3. Add cooked quinoa. Mix well. 4. Preheat oven at 400 degrees. 5. Make the beet and quinoa patties. Bake for 20 minutes. 6. Add cut sweet potato/yam fries in the oven until it browns. It took about 15-20 minutes. 7. While these are baking in the oven, make the guacamole. 8. Once the patties and sweet potato fries are done, its time to assemble the burger! I used whole wheat ciabatta. 9. Added a layer of freshly cut cilantro. 10. The beet burger. Topped by guacamole. 11. And finally the freshly baked sweet potato fries on top! Enjoy!

  • 1. Heat gas or charcoal grill. In medium bowl, mix ground beef, bread crumbs, taco seasoning mix and milk until well blended. Shape mixture into 4 (4-inch) patties. In another medium bowl, mix frozen potatoes and dip.
  • 2. Cut 4 (18x12-inch) sheets of heavy-duty foil. Place 1 patty on each; top with 1/4 of potato mixture. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • 3. When grill is heated, place packets, seam side up, on grill over medium heat; cover grill. Cook 15 to 25 minutes, rearranging packets several times, until patties are thoroughly cooked.

  • Cook sweet potatoes in 400 degree oven, cut side down for 30 minutes.

  • In a small bowl, add salt, onion powder, garlic powder, chili powder, oregano, cumin powder and black pepper. Mix together and set aside.
  • In a large bowl, add black beans and cooked sweet potatoes. Mash until consistency is only slightly chunky. Some beans will be completely mashed and others will not. This will help create a nice texture.
  • Add in cooked quinoa and spices. Mix together with hands and form into 8 burger patties, about 1/3 cup of mixture each.
  • Place burger patties on a large baking sheet covered in parchment paper. Spray with olive oil and bake in 400 degree oven for 20 minutes. Flip over, spray other side with olive oil and bake for another 10 minutes.

  • For cooking:
  • Wash and pat your sweet potatoes dry. Cut the sweet potatoes into small 1-inch cubes. Roast the sweet potato cubes with 2 tablespoons extra-virgin olive oil, 1 tablespoon granulated garlic powder, and 1/2 teaspoon salt. Place onto a sheet tray and roast at 375° F for approximately 40 minutes, remove from the oven, and cool slightly.
  • In a food processor, add the roasted/cooked sweet potato, tamari soy sauce, and Worcestershire sauce; pulse to combine. Add the onion and chickpeas and pulse until fully combined, periodically stopping the food processor and using a spatula or wooden spoon to move the mixture around. Mix just until the chickpeas and onion are fully incorporated; look for the consistency of mashed potatoes. Do not overmix.
  • Meanwhile, in a large bowl, combine the oats, walnuts, chia seeds, and flaxseed meal.
  • Remove the sweet potato mixture from the food processor and fold into the dry ingredients. Measure out 1/3 cup of the mixture at a time and, using your hands, form into round burger-shaped patties.
  • In a medium sauté pan, heat the coconut oil over medium heat. Add the patties and sauté for about 4 minutes per side, or until they are warmed through and golden brown on each side.
  • To serve, place the patties on toasted buns, if desired, and add your choice of toppings. I love avocado, kale, and Worcestershire sauce.

2 1/4 cups (12 1/3 ounces) bread flour
1 tablespoon sugar
2 teaspoons instant or rapid-rise yeast
1 teaspoon salt
2 large eggs, 1 lightly beaten with 1 teaspoon water and pinch salt
1 tablespoon sesame seeds (optional)
Line 2 rimmed baking sheets with parchment paper. On lightly floured surface, firmly press each dough round into 3 1/2-inch disk of even thickness, expelling large pockets of air. Arrange on prepared baking sheets. Cover loosely with plastic and let rise at room temperature until almost doubled in size, 30 to 40 minutes. While rolls rise, adjust oven racks to middle and upper-middle positions and heat oven to 425 degrees.
Brush rolls gently with egg wash and sprinkle with sesame seeds, if using. Bake rolls until deep golden brown, 15 to 18 minutes, rotating and switching baking sheets halfway through baking. Transfer baking sheets to wire racks and let cool for 5 minutes. Transfer rolls from baking sheets to wire racks. Serve warm or at room temperature.

  • 1. Place potatoes in medium saucepan and add water to just cover. Bring to boil over high heat; reduce heat to medium-low and simmer until potatoes are cooked through, 8 to 10 minutes. 2. Transfer 5 tablespoons potato water to bowl to cool; drain potatoes. Return potatoes to saucepan and place over low heat. Cook, shaking pot occasionally, until any surface moisture has evaporated, about 1 minute. Remove from heat. Process potatoes through ricer or food mill or mash well with potato masher. Measure 1 very firmly packed cup potatoes and transfer to bowl. Reserve any remaining potatoes for another use. Stir in butter until melted. 3. Combine flour, sugar, yeast, and salt in bowl of stand mixer. Add warm potato mixture to flour mixture and mix with hands until combined (some large lumps are OK). Add 1 egg and reserved potato water; mix with dough hook on low speed until dough is soft and slightly sticky, 8 to 10 minutes. 4. Shape dough into ball and place in lightly greased container. Cover tightly with plastic wrap and allow to rise at room temperature until almost doubled in volume, 30 to 40 minutes. 5. Turn out dough onto counter, dusting with flour only if dough is too sticky to handle comfortably. Pat gently into 8-inch square of even thickness. Using bench knife or chef's knife, cut dough into 9 pieces (2.75 oz. each). Separate pieces and cover loosely with plastic. 6. Working with 1 piece of dough at a time and keeping remaining pieces covered, form dough pieces into smooth, taut rounds. (To round, set piece of dough on unfloured work surface. Loosely cup hand around dough and, without applying pressure to dough, move hand in small circular motions. Tackiness of dough against work surface and circular motion should work dough into smooth, even ball, but if dough sticks to hands, lightly dust fingers with flour.) Cover rounds with plastic and allow to rest for 15 minutes.

16 large frozen French-fried waffle-cut potatoes (1/3 of a 22-oz. pkg.)
1 pound ground beef or turkey
2 - 3 teaspoons grilling seasoning blend
4 slices cheddar cheese, cut into quarters (4 oz.)
4 cherry tomatoes, sliced
Mustard, ketchup, dairy sour cream, and/or dill pickle slices

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil. Evenly space potatoes on baking sheet. Bake potatoes for 18 to 20 minutes or until crisp and lightly browned. Remove from oven. Adjust oven racks and preheat broiler. 2. Meanwhile, in a medium bowl combine meat and seasoning. Form into sixteen 1-ounce mini burgers (about 2 tablespoons). In a 12-inch skillet cook burgers, uncovered, over medium-high heat for 5 minutes or until temperature registers 160 degrees F on an instant-read thermometer, turning burgers once halfway through cooking.
