TARTIFLETTE - ALPINE MELTED CHEESE, BACON AND POTATO GRATIN

Tartiflette - Alpine Melted Cheese, Bacon and Potato Gratin image

Fast becoming a classic, Tartiflette is the perfect palliative supper dish for chilly autumn and winter evenings. This delicious, rich and hearty dish hails from the Alpine Haute Savoie region of France. For authenticity's sake, try to get hold of a whole Reblochon cheese. Reminiscent of Camembert or Brie in flavour, texture and shape, Reblochon has the perfect melting quality for Tartiflette. In addition, as this dish can be prepared a day or so ahead, it could make the ultimate Bonfire Night or Halloween centrepiece! This is a truly indulgent dish, which is best appreciated after a strenuous morning on the ski-slopes - or at least a brisk winter's morning walk. It is important to use a ripe Reblochon, preferably bought a few days in advance and left to reach maturity out of the fridge. For this to happen, it should be uncategorised. Of course, if you have a good cheese monger you will be able to buy one ripe and ready to eat. Serve the Tartiflette hot and straight from the gratin dish with fresh salad, crusty bread and assorted pickles. Edited to add: One reviewer made a comment that you should fry the bacon and discard the fat - it IS stated in the main instructions to do just that! Also, if your potatoes are not cooked after 15 minutes plus 25 minutes in the oven, you have not cut them thin enough - try to cut them quite thinly, as shown in all the photos. Reblochon cheese is a very STRONG cheese - do not try this recipe if you are not a lover of strong cheese! Merci:-)

Categories     One Dish Meal

Time 50m

Yield 1 Tartiflette, 4 serving(s)

Number Of Ingredients 11

1 1/2 kg potatoes
1 large onion, peeled and finely diced
200 g smoked lardons (8 ozs) or 200 g smoked streaky bacon, diced (8 ozs)
25 g butter (1 oz)
1/4 pint white wine (1 wine glass)
4 tablespoons creme fraiche or 4 tablespoons sour cream
1 garlic clove, peeled and cut in half
sea salt
fresh ground black pepper or fresh ground black pepper
fresh ground black pepper
1 ripe reblochon cheese

Steps:

  • Preheat the oven to 200°C/400°F/gas mark 5.
  • Bring a large pan of water to the boil and cook the potatoes whole, in their skins, for 15 minutes.
  • Meanwhile, cook the onion and bacon in the butter in a heavy frying pan over a medium heat; they should sweat but not brown. When they are cooked, discard the fat and add the glass of wine and the creme fraiche and mix well.
  • Drain the potatoes and as soon as they are cool enough to handle peel them - the quicker the better. Slice thinly across.
  • Choose an ovenproof earthenware dish and rub it well with the cut halves of garlic. Layer half the sliced potatoes across the base, season them with salt and freshly ground black pepper, then scatter over half the onion and bacon mixture.
  • Cut the Reblochon cheese in half through the centre of the cheese, leaving you with a cut edge and a skin/rind edge, then lay one half of the cheese on top of the potato, bacon and onion mixture. Add the remaining bacon and onion mixture followed by the rest of the potatoes and more seasoning.
  • Place the remaining half of cut Reblochon cheese skin/rind side up on top of the potatoes. Bake for 10 minutes, then reduce the heat to 180C/350'F/gas mark 4 for a further 20-25 minutes. The Reblochon should melt within its skin and the cheese drip down throughout the dish, while the potatoes will become crispy and golden brown.
  • Tartiflette is a filling dish and all you really need to go with it is a mixed green salad, crusty French bread and a selection of pickles.

MOLTEN FRENCH CAMEMBERT POTATO GRATIN WITH BACON AND ONIONS

Molten French Camembert Potato Gratin With Bacon and Onions image

Pure indulgence & total comfort food! Melted Camembert cheese baked au gratin with potatoes, bacon, onions, wine & creme fraiche! This is my own adaptation of a recipe called Tartiflette; an Alpine Savoy dish which uses Reblochon cheese which I find a bit overpowering in flavour, so I made my own recipe up using Camembert and cutting out butter and full fat cream too! This is a truly lovely meal which is served with crisp green salad and a selection of charcuterie - such as salamis, sausages, pates & terrines. Bring the Poele, the little cooking pot to the table, have everything set out, add some wine & invite friends and family over.......... oh, and don't forget to light the log fire too!

Provided by French Tart

Categories     One Dish Meal

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 1/4 kg potatoes, peeled
500 g camembert cheese
2 medium onions, peeled & roughly chopped
200 g smoked lardons or 200 g smoked streaky bacon, cubed
5 tablespoons creme fraiche or 5 tablespoons sour cream
400 ml dry white wine
salt
black pepper
1 teaspoon butter, for greasing

Steps:

  • Pre-heat oven to 210C,425°F.
  • Grease an ovenproof dish, I use a French Poele, a small pan like earthenware dish with a handle, but any oven proof dish which is fairly deep will be okay!
  • Peel and boil the potatoes whole; cook for about 20-25 mins or until JUST tender but still holding their shape well.Plunge them into cold water to stop them cooking and set them to one side.
  • Meanwhile, heat up a frying pan and cook the lardons or bacon cubes together with the diced onions. Cook them over a medium heat, pouring away any excess fat. Fry them until the bacon is crispy but not too brown and the onions are tender.
  • Mix together the creme fraiche and glass of wine. Season the mixture very well with black pepper and just a touch of salt, as the bacon will be salty.
  • Take your Camembert cheese and very carefully slice it into two pieces horizontally.
  • Drain the cooled potatoes and cut them into 1/4" thick slices. Layer half of them in to the greased oven proof dish and then cover with half of the onion and bacon mixture.
  • Pour over half of the wine and creme fraiche mixture. Place one half of the whole Camembert on top. Repeat the layer in the same order: potatoes, bacon and onion mixture, wine and creme fraiche mixture and end the layers by placing the last half a Camembert cheese on top.
  • Season with black pepper again and just a pinch of salt if you wish.
  • Bake in a pre-heated oven for about 45 minutes or until the gratin is brown and bubbling.
  • Set to one side for about 3-5 minutes, it firms up a bit and is easier to serve then!
  • Serve with a big bowl of crisp green salad, assorted Charcuterie such as cold meats, salami, terrine and sausage AND not forgetting crusty bread to mop all those juices up with!
  • Great with a well chilled and dry white wine such as Chablis or Chardonnay.

Yield Makes 6 servings

Number Of Ingredients 8

1 large head of garlic
2 tablespoons extra-virgin olive oil
3 medium onions, halved lengthwise, each half cut crosswise into 1/4-inch-thick slices
2 tablespoons fresh thyme, divided
1/2 pound thick-cut bacon, sliced crosswise into 1/4-inch strips
1 cup whipping cream
1 1/2 pounds Yukon Gold potatoes
1 teaspoon coarse kosher salt, divided

Steps:

  • Preheat oven to 400°F. Cut off top 1/2 inch from head of garlic. Wrap garlic in foil and roast until soft, about 45 minutes. Cool. Squeeze garlic cloves into small bowl; mash with fork. Cover and reserve.
  • Heat oil in heavy large skillet over medium-high heat. Add half of onions and 1 tablespoon thyme and cook until slightly softened, stirring frequently, about 6 minutes. Add remaining onions and sauté until very soft, about 15 minutes. Reduce heat to medium-low and cook until deep golden brown, stirring frequently, about 40 minutes longer. Set aside.
  • Sauté bacon in heavy medium saucepan over medium heat until bacon is beginning to crisp around edges, about 4 minutes. Pour off drippings from pan. Add cream, 1 tablespoon roasted garlic, and 2 teaspoons thyme; simmer until slightly thickened, about 4 minutes. Cool.
  • Preheat oven to 400°F. Peel and thinly slice potatoes with mandoline or knife. Spoon 1/2 cup cream mixture over bottom of 8x8x2-inch metal or ceramic baking dish. Arrange 1/3 of potato slices over cream, overlapping as necessary. Sprinkle with pepper and 1/3 teaspoon coarse salt. Spread half of caramelized onions over potatoes. Spoon half of remaining cream mixture over onions. Cover with half of remaining potatoes. Sprinkle with pepper and 1/3 teaspoon salt. Spread remaining onions over potatoes. Spoon all but 2 tablespoons cream mixture over onions. Cover with remaining potato slices. Sprinkle with black pepper and remaining 1/3 teaspoon salt. Drizzle with remaining cream mixture. Sprinkle with remaining 1 teaspoon thyme. Cover tightly with plastic wrap, then foil.
  • Bake until potatoes are tender when pierced with knife (pierce knife through foil), about 45 minutes. Carefully remove foil and plastic wrap (steam will be released). (Can be prepared 2 hours ahead. Let stand at room temperature.) Increase oven temperature to 500°F. Bake until top is golden brown, about 10 minutes longer (or about 15 minutes if at room temperature). Let stand 10 minutes. Serve.

GRILLED DUCK BREASTS WITH CRèME FRAîCHE, ROASTED GRAPES, AND POTATO-BACON GRATIN

Grilled Duck Breasts with Crème Fraîche, Roasted Grapes, and Potato-Bacon Gratin image

Categories     Duck     Potato     Side     Bake     Marinate     Roast     Bacon     Healthy     Kosher     Grape

Number Of Ingredients 17

1 tablespoon juniper berries
6 single Pekin duck breasts, 6 to 8 ounces each (or 4 larger Muscovy breasts)
1 tablespoon thyme leaves
1/2 pound seedless red or purple grapes, in bunches
2 teaspoons extra-virgin olive oil
1 bunch dandelion greens or arugula, cleaned
6 tablespoons crème fraîche
Potato-bacon gratin (recipe follows)
Kosher salt and freshly ground black pepper
Potato-Bacon Gratin
1/2 pound slab applewood-smoked bacon
1 tablespoon extra-virgin olive oil
4 cups thinly sliced onions (about 1 pound)
1 tablespoon plus 2 teaspoons thyme leaves
2 1/4 pounds Yukon Gold potatoes, peeled
About 2 cups heavy cream
Kosher salt and freshly ground black pepper

Steps:

  • Pound the juniper berries in a mortar until coarsely ground. Score the skin of the duck breasts with a sharp knife, and season with the juniper berries and the thyme. Cover, and refrigerate at least 4 hours, preferably overnight.
  • Light the grill 30 to 40 minutes before cooking, and remove the duck from the refrigerator and allow it to come to room temperature.
  • Preheat the oven to 450°F.
  • Using scissors, snip the grapes into six clusters. Toss the clusters gently with the olive oil, and season with salt and pepper. Roast the grapes on a baking sheet 12 to 15 minutes, until the skin is slightly crispy and starting to blister.
  • When the coals are broken down, red, and glowing, push the embers to one side of the grill. Season the duck with salt and pepper. Place the duck breasts, skin side down, on the cooler half of the grill. As they cook, rotate the breasts in a quarter-turn pattern every 2 minutes or so, to allow the fat to render and the skin to crisp. Turn the breasts over, and cook a few more minutes, until the duck is medium-rare and still springy to the touch. Remove from the heat, and rest 5 minutes, on a wire rack set over a baking sheet.
  • Scatter the greens onto a large warm platter. Slice the duck breasts, and place them over the greens. Spoon a little crème fraîche over each duck breast, and arrange the clusters of roasted grapes around the platter. Serve the potato-bacon gratin at the table.
  • Potato-Bacon Gratin
  • Preheat the oven to 350°F.
  • Cut the bacon into 3/8-inch-thick slices, and stack them in two piles, then cut the bacon crosswise into 3/8-inch even-sided rectangular shapes, or lardons.
  • Heat a large sauté pan or Dutch oven over medium-high heat for a minute. Swirl in the olive oil and add the bacon. Cook the bacon about 5 minutes, stirring often, until tender and lightly crisped. Remove to a plate with a slotted spoon, reserving the bacon fat in the pan.
  • Add the onions, 2 teaspoons thyme, 1 teaspoon salt, and some pepper to the pan. Cook 15 minutes, stirring and scraping with a wooden spoon, until the onions start to caramelize. Turn the heat down to low, and continue to cook, about 10 minutes, stirring often, until the onions are a deep golden brown. Remove from the heat and set aside.
  • Use a mandoline to slice the potatoes into 1/16-inch-thick rounds. Pour 1/2 cup cream evenly onto the bottom of a 9-by-9-inch (or equivalent) gratin dish. Place one layer of potatoes side by side, slightly overlapping, on the bottom of the dish. Spread a third of the onions over them and scatter a third of the bacon on top. Arrange a second layer of potatoes, drizzle a 1/4 cup cream over it, and season with 1/4 teaspoon salt, a healthy pinch of pepper, and 1 teaspoon thyme. Press the potatoes down with your fingers, letting the cream soak up through the layers. This will ensure that the cream is evenly distributed and coats the potatoes well.
  • Arrange another layer of potatoes on top, followed by another third of the caramelized onions and the bacon. Drizzle over another 1/4 cup cream, and continue with two more layers of potatoes. Drizzle with 1/2 cup cream and season with 1/4 teaspoon salt and a pinch of pepper. Press the potatoes down with your fingers again. Scatter the rest of the onions and bacon over the potatoes, and drizzle with 1/3 cup cream. Season one last time with 1/4 teaspoon salt, 1 teaspoon thyme, and a pinch of pepper. The cream should cover the potatoes but not be "soupy." Add more cream if the gratin seems dry.
  • Cover tightly with aluminum foil. Bake 1 1/2 hours, until the potatoes are tender when pierced. Remove from the oven, and carefully uncover. Turn the oven up to 425°F and return the gratin to the oven. Cook another 20 minutes or so, until the top is nice and golden brown (as in "gratinéed").
  • Note
  • Marinate the duck overnight and make the gratin in the morning, then reheat the gratin (giving it that beautiful gratinée color) while the ducks are on the grill.

SWEET POTATO GRATIN C ONIONS & BACON

SWEET POTATO GRATIN C ONIONS & BACON image

Categories     Potato

Yield 2to4

Number Of Ingredients 15

Sweet potatoes are often made even more sweet using ingredients like maple syrup, brown sugar, molasses, and even marshmallows. We like that apartmentcooker goes definitively in the other direction by adding bacon, parmesan, onion, garlic and a crème fraîche bechamel, while still paying homage to more traditional recipes (she adds a tablespoon of brown sugar to the bechamel, with delightful results). Thinly sliced sweet potatoes are layered in the baking dish (we used one dish big enough for two rather than individual ones) with bechamel, crisped bacon, and raw onions and garlic, which infuse the gratin with their fragrance. A sprinkling of parmesan on top helps with browning, but if you want a little more color, pop the gratin under the broiler for a few minutes at the end. We found that 20-25 minutes baking time was perfect for a two-person baking dish. - A&M
My boyfriend is an overall carb hater (I never thought that was possible), but he's a sucker for sweet potatoes. The bacon gets crisp and the onions get soft and make this gratin super delicious. Individual portions mean I can make a big batch, and reheat it later as a last-minute side dish.
Serves 2
4 pieces bacon, diced
1/2 cup onion, diced
1 teaspoon garlic, minced
2 cups sweet potatoes, thinly sliced (1/8" thick)
2 tablespoons butter
2 tablespoons flour
1 cup whole milk
3 tablespoons creme fraiche
1/2 teaspoon nutmeg
1 tablespoon brown sugar
salt and black pepper, to taste
parmesan cheese, grated, to taste

Steps:

  • 1. Lightly grease 2 individual baking dishes (I used a bowl that holds roughly 1 1/2 cups). Preheat the oven to 350 degrees. 2. In a small saute pan, cook the bacon over medium heat until crisp. Remove from heat, and toss with onion and garlic. 3. In a small pot, melt the butter over medium heat. Stir in the flour, and cook until the mixture is well combined but still pale. Stir in the milk and the creme fraiche. 4. Reduce the heat to low and bring the bechamel to a simmer. Stir in nutmeg, brown sugar, salt, and pepper. 5. Layer 4-6 slices of potato at the base of each of the prepared baking dishes. Top with a few tablespoons of bechamel, and a few spoonfuls of the bacon mixture. Repeat with another layer of potatoes, another layer of bechamel, and more bacon. Top with one last layer of potatoes, and spoon remaining bechamel over the top. Finish with a sprinkling of grated parmesan cheese. 6. Bake the gratins until they are bubbly around the edges and cooked through, about 15-20 minutes. Let cool slightly before serving.

POTATO-BACON GRATIN

Potato-Bacon Gratin image

This potato and bacon gratin was created by Rob Chalmers, a chef de cuisine at Lucques who had a great love of food and a big Boston attitude to go along with it. When he first told me about this gratin, I thought he was joking. That much fat in one pan might put even me over the edge. But lo and behold, bacon, potatoes, and cream really do taste good together!

Number Of Ingredients 7

1/2 pound slab applewood-smoked bacon
1 tablespoon extra-virgin olive oil
4 cups thinly sliced onions (about 1 pound)
1 tablespoon plus 2 teaspoons thyme leaves
2 1/4 pounds Yukon Gold potatoes, peeled
About 2 cups heavy cream
Kosher salt and freshly ground black pepper

Steps:

SWEET POTATO GRATIN INCLUDES CANADIAN BACON/ONIONS

SWEET POTATO GRATIN INCLUDES CANADIAN BACON/ONIONS image

The gratin can be made with either sweet potatoes or yams, which are sliced, cooked and tossed with melted butter and brown sugar. Half of potatoes are arranged in baking dish and topped with caramelized onions and canadian bacon. The remaining potatoes cover the onions, and a coating of fresh bread crumbs, shredded white Cheddar and herbs is the final addition. These can be made a day in advance and are absolutely delicious!

Number Of Ingredients 14

2 1/2- 3/4 pound(s) sweet potatoes or yams, peeled and sliced into 1/4 in thick rounds
1/4 cup(s) butter, unsalted
3 tablespoon(s) light brown sugar, packed
- salt, freshly ground black pepper
1 pound(s) onions, thinly sliced (about 3 cups)
1 teaspoon(s) granulated sugar
6-8 ounce(s) thinly sliced lean canadian bacon, cut into 1/4x1 inch strips
1/2 cup(s) chicken stock
TOPPING:
3/4 cup(s) fresh bread crumbs
3/4 cup(s) shredded white cheddar cheese (about 4 oz)
1 teaspoon(s) dried thyme
1 teaspoon(s) dried sage leaves
2 tablespoon(s) butter, unsalted, cut into small pieces

Steps:

  • To prepare Filling, cook sweet potatoes either by steaming them 10 minutes or blanching them in boiling salted water to cover 4 to 5 minutes. (Potatoes should be tender but not mushy.) Remove, pat dry and place in large bowl.
  • Melt 2 Tablespoons butter and add to potatoes along with brown sugar. Toss well. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
  • Melt remaining 2 Tablespoons butter in large heavy skillet over medium heat. When hot, add onions and granulated sugar and cook, stirring often, until until onions are rich brown in color, 20-30 minutes. Season to taste with salt and pepper.
  • Coat 9x13 dish with nonstick cooking spray. Place half the potatoes evenly in bottom baking dish. Spread all onions over potatoes. Sprinkle with Canadian bacon. Spread top with remaining potatoes. Pour chicken stock over mixture.
  • To prepare Topping, combine bread crumbs, cheese, thyme and sage in bowl. Sprinkle over top. Dot with butter. (Gratin can be prepared 1 day ahead to this point. Cover and refrigerate. Bring to room temperature 30 minutes before baking.)
  • Bake, uncovered, at 375F degrees until potatoes are hot and topping is browned, about 30 minutes. Serve warm. Makes 6 to 8 servings.
  • NOTE: Sweet potatoes have tan skin and pale yellow, almost golden, flesh, while yams have copper-colored skin and deep orange flesh. Either works well in this recipe
