1-1/2 pounds sliced fresh shiitake mushrooms
2-1/2 cups thinly sliced onions
1-1/2 cups reduced-sodium beef broth
1-1/2 cups dry red wine or additional reduced-sodium beef broth
1 can (8 ounces) tomato sauce
3/4 cup chopped peeled parsnips
3/4 cup chopped celery
3/4 cup chopped carrots
8 garlic cloves, minced
2 bay leaves
1-1/2 teaspoons dried thyme
1 teaspoon chili powder
1/4 cup cornstarch
1/4 cup water

Steps:

  • Sprinkle roast with salt and pepper. In a Dutch oven, brown roast in oil on all sides. Transfer to a 6-qt. slow cooker. Add the mushrooms, onions, broth, wine, tomato sauce, parsnips, celery, carrots, garlic, bay leaves, thyme and chili powder. Cover and cook on low for 6-8 hours or until meat is tender., Remove meat and vegetables to a serving platter; keep warm. Discard bay leaves. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with mashed potatoes, meat and vegetables.

An easy, comforting meal, with fall-apart tender beef, carrots and potatoes, all in a tangy tomato gravy.

6 medium yellow-fleshed potatoes (peeled and halved)
6-8 carrots (peeled and halved if thick or left whole if thinner)
1 medium onion (peeled and thinly sliced)
1 Tbsp olive oil
Salt and freshly ground pepper
3 lb boneless beef roast (inside or outside round, blade or cross-rib works well)
2 cups tomato sauce (or passata)
1/4 cup brown sugar (packed)
2 Tbsp Worcestershire sauce
2 Tbsp cider vinegar
2-3 fresh thyme sprigs (or 1 tsp dried thyme leaves)
1 tsp salt
Freshly ground pepper
1 Tbsp cornstarch
1 Tbsp water
Fresh parsley (chopped)

Steps:

  • Scatter the prepared potatoes, carrots, and onions in the bottom of a slow cooker.
  • On the stove top, heat oil in a large skillet over medium-high heat. Sear beef roast on both sides until well browned, about 3 minutes per side. Place beef on top of vegetables in slow cooker.
  • In a medium bowl, stir together the tomato sauce, brown sugar, Worcestershire sauce, cider vinegar, salt and pepper. Pour over the roast. Scatter the fresh thyme sprigs over-top.
  • Place cover on slow cooker and cook on low for about 6-8 hours, or until beef is fall-apart tender.
  • Remove roast to a cutting board and cut in to slices. Meanwhile, combine cornstarch with water and stir in to gravy with vegetables and let cook for a few minutes until gravy thickens a bit. Taste gravy and season with additional salt and pepper, as needed. Return meat to slow cooker. Gently stir to coat with gravy. Allow to cook a few minutes to re-warm the meat, then remove all to a large platter or bowl to serve. Garnish with some chopped fresh parsley.

1 (4 to 5-pound) boneless beef bottom round roast
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 pound cremini mushrooms, cleaned and quartered
2 medium yellow onions, halved and sliced
4 cups low-sodium beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Pat the meat dry with paper towels and season well on all sides with salt and pepper. Heat the oil in a large Dutch oven over medium-high heat, add the roast and brown all sides, about 4 minutes per side. Transfer the meat to a plate and add the mushrooms. Season with salt and pepper and cook, stirring occasionally, until browned and beginning to release liquid, about 5 minutes.
  • Add the onions and broth and stir until combined. Nestle the roast into the vegetables, adding any juices it released to the pot. Add the beef broth, bring to a simmer, cover, and transfer to the oven to roast for 2 1/2 hours. Remove the lid, carefully flip the meat and continue cooking for 30 minutes; the meat should be fork tender and the liquid reduced.
  • Remove the pot from the oven, transfer the meat to a cutting board and tent with foil to keep it warm. Let the mushrooms and onions stand several minutes undisturbed to allow some of the beef fat to rise to the surface. With a large spoon, skim off the excess fat and discard. With a ladle, add about 1 1/2 cups of the mushrooms and onions with some cooking liquid to the bowl of a blender or food processor. Carefully puree the mixture until very smooth. Pour the puree back into the pot and stir very well until combined; taste and adjust seasoning.
  • To serve, slice the pot roast and arrange on a serving platter. Drizzle some mushroom gravy over the top and pass the extra gravy at the table.

1 1/2-2 lbs arm roast or 1 1/2-2 lbs swiss roast
1 (10 ounce) can tomato soup
1 (10 ounce) can cream of mushroom soup
1 (1 ounce) package dry onion soup mix
3 tablespoons Worcestershire sauce
3 -4 potatoes, peeled & quartered
3 -4 carrots, peeled & quartered
salt
pepper

Steps:

  • Pre-heat oven 350 degrees f.
  • Place meat in roasting pan which has a tight fitting lid. Lightly salt and pepper. Mix the soups and the worcestershire sauce together and pour over meat. Arrange the carrots and potatoes around the meat and lightly salt and pepper. Cover and bake 1 & 1/2 hours for the 1st pound of meat and 15 to 20 minutes each additional pound, depending on the cut of meat.
  • Let sit for approximately 15 minutes before cutting.
  • Sometimes I will add some thawed frozen peas the last 20 - 30 minutes
  • This can be done in a slow cooker, but the gravy will need thickened.
  • If you prefer, you can use the potatoes to make mashed; the gravy is excellent for topping mashed potatoes.

2 ½ pounds tip round roast
salt and pepper to taste
1 (15 ounce) can tomato sauce
1 onion, cut into thin strips
2 bay leaves
3 tablespoons all-purpose flour

Steps:

  • Spray slow cooker with non-stick cooking spray. Season roast with salt and pepper. Place meat in pot with fat side up. Pour tomato sauce over roast. Place onion rings over all. Toss in bay leaves. Cover and cook 1 hour on high.
  • After 1 hour, reduce heat to low and cook 6 to 8 more hours. Carefully lift meat out of pot and remove to a warm platter.
  • Pour drippings through strainer into medium-sized saucepan and discard material in strainer. Whisk in flour to liquid. Cook, stirring constantly over medium heat until thickened. Season to taste with salt and pepper; serve alongside roast.

1 can(s) cream of mushroom soup
1 package(s) dry onion soup mix
3 tablespoon(s) worcestershire sauce

4 - carrots, peeled & quartered

Steps:

  • Preheat oven to 350 degrees
  • Spray the bottom of a roasting pan. Place roast in the pan and sprinkle with salt & pepper.
  • Stir together the 3 soups and the worcestershire sauce and pour over the roast.
  • Place the vegetables around the roast. Lightly salt & pepper the vegetables,cover tightly and bake.
  • This can be done in a slower cooker as well, but the gravy comes out thin.

I have made 3 things out of this book at the time being and every thing is very good. I will post more as I come by my favs. REMEMBER: That you should know your slow cooker. Steps:

  • Pat roast dry with paper towel.
  • In a skillet, heat oil over medium-high heat.
  • Add roast and cook, turning, until brown on all sides, about 7 to 10 minutes.
  • Transfer to slow cooker.
  • Reduce heat to medium.
  • Add onions, celery and carrots to pan and cook, stirring, until vegetables are softened.
  • Add garlic, mustard, thyme, salt and pepper and cook, stirring, for 1 minute.
  • Sprinkle mixture with flour and stir.
  • Add tomato soup and beef broth and cook, stirring, until thickened.

2 lbs lean chuck roast
1/4 cup low sodium soy sauce
2 minced garlic cloves
1 cup beef broth
1 (1/3 ounce) package dried shiitake mushrooms or 1 (1/3 ounce) package mixed dried wild mushrooms
1 tablespoon cracked black pepper
3 tablespoons sun-dried tomato paste
2 medium onions, quartered
1 (16 ounce) package baby carrots
16 small round red potatoes, washed and halved
1 tablespoon olive oil
1 1/2 tablespoons all-purpose flour
3 tablespoons water

Steps:

  • Trim the fat off of the roast.
  • Combine the soy sauce and garlic in a small bowl, and place the roast in a large Ziploc bag, pouring the soy sauce mixture on it.
  • Seal and marinate overnight, turning the bag at least once.
  • Bring the beef broth to a boil in a small saucepan.
  • Add the dried mushrooms, stir, cover and remove from heat.
  • Let sit for 20 minutes.
  • Drain the mushrooms through a coffee-filter lined sieve or cheesecloth-lined colander, reserving the broth.
  • Remove the roast from the bag, and save the remaining marinade.
  • Press the cracked black pepper into both sides of the roast.
  • Mix the marinade, mushroom broth, and tomato paste together; stir well and set aside.
  • Place the mushrooms, onion, carrots, and potatoes in a large crock pot and toss.
  • Heat the olive oil in a large skillet over medium high.
  • Add the roast and brown well on all sides.
  • Put the roast on top of the veggies in the crock pot, and pour the broth mixture over the roast and veggies.
  • Scrape the bottom of the skillet to remove the brown bits into the crock pot.
  • Cover the crock pot with the lid and cook on high 1 hour, then cook on low another 8 hours.
  • Place the roast and veggies on a serving platter and keep warm.
  • Reserve the liquid in the crock pot.
  • Place flour in a small bowl.
  • Gradually add the water and stir with a fork until well blended.
  • Add it to the broth in the crock pot, Cook uncovered for 15 minutes or until slightly thickened, stirring often.
  • Serve the gravy with the roast.

This recipe is from the reynoldskitchens.com website. This roast is baked in a large oven roasting bag. I love these roasting bags and next to a crockpot, this is my favorite method for making pot roast and other recipes as well. Cleanup is a breeze too, which is always a top priority to me. I like to add potatoes and baby carrots to the roasting bag to cook along with the roast beef. Dinner in a dish. It just doesn't get any easier than this. NOTE: If you wish to have plenty of gravy, I recommend doubling all ingredients with the exception of the roast beef.

1/4 cup flour
1 (3/4-1 ounce) package brown gravy mix
1/2 cup water
