1 boneless beef chuck roast (2-1/2 to 3 pounds)
3 garlic cloves, halved
1 tablespoon brown sugar
1-1/2 teaspoons kosher salt
1/2 teaspoon pepper
2 tablespoons olive oil
1 large sweet onion, quartered
1 can (10-1/2 ounces) condensed beef consomme, undiluted
2 tablespoons Worcestershire sauce
1 tablespoon stone-ground mustard
1 bay leaf
3 to 4 drops browning sauce, optional
1/2 pound sliced fresh mushrooms
1 bottle (12 ounces) light beer or nonalcoholic beer
1 teaspoon dried thyme
3 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • With a sharp knife, cut six 1-in.-long slits in meat; insert a garlic clove half into each slit. Combine the brown sugar, salt and pepper; rub over roast., In an ovenproof Dutch oven over medium heat, brown roast in oil on all sides. Add the onion, beef consomme, Worcestershire sauce, mustard, bay leaf and browning sauce if desired., Cover and bake at 350° for 1-3/4 to 2-1/4 hours or until meat is tender. Remove roast to a serving platter; keep warm., Discard bay leaf. Add the mushrooms, beer and thyme to the pan. Bring to a boil over medium-high heat. Cook until liquid is reduced by half. Combine cornstarch and water until smooth; gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast.

1 pound fresh baby carrots
1 can (4 ounces) mushroom stems and pieces, drained
1 beef rump roast or bottom round roast (3 pounds)
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 tablespoon canola oil
1 jar (12 ounces) beef gravy
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup water
1 envelope onion soup mix

Steps:

  • Place carrots and mushrooms in a 4- or 5-qt. slow cooker. Sprinkle roast with garlic powder and pepper. In a large skillet, brown roast in oil on all sides. Transfer to slow cooker., Combine the gravy, mushroom soup, water and onion soup mix; pour over roast. Cover and cook on low for 6-8 hours or until meat is tender. This recipe is from the reynoldskitchens.com website. This roast is baked in a large oven roasting bag. I love these roasting bags and next to a crockpot, this is my favorite method for making pot roast and other recipes as well. Cleanup is a breeze too, which is always a top priority to me. I like to add potatoes and baby carrots to the roasting bag to cook along with the roast beef. Dinner in a dish. It just doesn't get any easier than this. NOTE: If you wish to have plenty of gravy, I recommend doubling all ingredients with the exception of the roast beef.

1 oven cooking bag, large size
1/4 cup flour
1 (3/4-1 ounce) package brown gravy mix
1/2 cup water
1 medium onion, sliced
2 (4 1/2 ounce) jars sliced mushrooms, drained
3 -5 lbs boneless beef chuck roast, fat trimmed
1/2 teaspoon dried thyme leaves, and
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 325°F.
  • Shake flour in oven bag; place in 13x9x2-inch baking pan.
  • Add gravy mix and water to oven bag.
  • Squeeze oven bag to blend in flour.
  • Add onion and mushrooms to oven bag. Turn oven bag to coat ingredients with gravy.
  • Rub roast with thyme, salt and pepper; place roast in oven bag.
  • Close oven bag with nylon tie; cut six 1/2-inch slits in top of bag.
  • Bake until roast is tender, 2 to 2 1/2 hours.
  • Let roast rest for 5 minutes in the cooking bag prior to slicing.

3 lbs chuck roast, 2-3 inches thick
2 tablespoons vegetable oil
1 (1 7/8 ounce) envelope onion soup mix (or onion mushroom soup mix)
2 (10 3/4 ounce) cans cream of mushroom soup
1 cup water (or beef or chicken stock)

Steps:

  • Brown meat on all sides in oil in cooker.
  • Mix all other ingredients and add to cooker, coating meat.
  • Cover and cook 50-60 minutes after control jiggles.
  • Cool cooker normally for 5 minutes, then place under faucet to depressurize.
  • The gravy came out perfect for us -- thin with beef stock or thicken to your own taste.

2 (10 3/4 ounce) cans Campbell's Golden Mushroom soup
1 (1 1/4 ounce) package Lipton Onion Soup Mix
olive oil
3 -4 garlic cloves, mashed
salt

Steps:

  • Rub roast with oil.
  • Mash garlic with salt and pepper and rub over roast and insert garlic in roast by making slits.
  • Heat 2 tbsp olive oil in a Dutch oven, place roast in and brown on all sides.
  • After browning, place roast in the middle of a large piece of heavy duty aluminum foil.
  • Pour soup over roast, sprinkle the onion soup mix over this.
  • Seal the foil securely and place entire package into a 9x13-inch baking pan.
  • Bake at 350°F for three hours.
  • When you open the foil, the gravy is done and the meat is very tender.

1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1-1/2 cups dry red wine or reduced-sodium beef broth
1-1/2 pounds sliced fresh shiitake mushrooms
2-1/2 cups thinly sliced onions
1-1/2 cups reduced-sodium beef broth
1 can (8 ounces) tomato sauce
3/4 cup chopped peeled parsnips
3/4 cup chopped celery

Steps:

  • Halve roast; sprinkle with salt and pepper. Select saute or browning setting on a 8-qt. electric pressure cooker. Adjust for medium heat; add 1-1/2 teaspoons oil. When oil is hot, brown a roast half on all sides. Remove; repeat with remaining beef and 1-1/2 teaspoons oil. Add wine to pressure cooker. Cook 2 minutes, stirring to loosen browned bits from pan. Press cancel. Return beef to pressure cooker., Add mushrooms, onions, broth, tomato sauce, parsnips, celery, carrots, garlic, bay leaves, thyme and chili powder. to taste flour
2 tablespoons olive oil
2 cups sliced onions
1/4 cup water
1/4 cup ketchup
1/3 cup dry sherry
2 cloves garlic, minced
1/4 teaspoon dry mustard
1/4 teaspoon dried marjoram
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1 medium whole bay leaf
8 ounces fresh mushrooms, whole or cut in half
1/4 cup cold water
2 tablespoons flour
to taste wide egg noodles, cooked and drained

Steps:

  • Coat meat with flour.
  • In a Dutch oven, brown meat on both sides in 2 tablespoons olive oil.
  • Season with salt and pepper.
  • Add 2 cups of sliced onion.
  • Combine 1/4 cup each of water and ketchup, 1/3 cup dry sherry, 1 large clove garlic, minced, 1/4 teaspoon each of dry mustard, marjoram, crushed rosemary, thyme and 1 medium whole bay leaf.
  • Add to pot, simmer covered for 2 hours or until tender.
  • Remove meat to platter.
  • Discard bay leaf.
  • Add 1/4 lb. fresh mushrooms.
  • Blend 1/4 cup cold water with 2 tablespoons flour.
  • Stir into juices.
  • Cook and stir until thickened and bubbly.
  • Pour gravy over roast and use the rest for wide egg noodles you have cooked and drained.
  • I usually double the gravy.

1 1/2-2 lbs arm roast or 1 1/2-2 lbs swiss roast
1 (10 ounce) can tomato soup
1 (10 ounce) can cream of mushroom soup
1 (1 ounce) package dry onion soup mix
3 tablespoons Worcestershire sauce
3 -4 potatoes, peeled & quartered
3 -4 carrots, peeled & quartered
salt
pepper

Steps:

  • Pre-heat oven 350 degrees f.
  • Place meat in roasting pan which has a tight fitting lid. Lightly salt and pepper. Mix the soups and the worcestershire sauce together and pour over meat. Arrange the carrots and potatoes around the meat and lightly salt and pepper. Cover and bake 1 & 1/2 hours for the 1st pound of meat and 15 to 20 minutes each additional pound, depending on the cut of meat.
  • Let sit for approximately 15 minutes before cutting.
  • Sometimes I will add some thawed frozen peas the last 20 - 30 minutes
  • This can be done in a slow cooker, but the gravy will need thickened.
  • If you prefer, you can use the potatoes to make mashed; the gravy is excellent for topping mashed potatoes.
