I have another tried and true French Dip recipe and also use another great one here on 'zaar, but when I went to make it the other day, I was lacking all of the ingredients to make either...so the following was born. Turns out everyone liked it better than either of my previous ones, so I figured I better post it for posterity!

4 lbs bottom round beef roast
1 (1 1/4 ounce) envelope onion soup mix
1 (19 ounce) can progresso French onion soup (not condensed soup)
1 (12 ounce) can beer
3 beef bouillon cubes
1/4-1/2 teaspoon fresh coarse ground black pepper
salt
10 kaiser rolls (or your favorite hard rolls)
provolone cheese (optional)

Steps:

  • Place roast in 4.5 - 6 quart slow cooker.
  • Sprinkle with onion soup mix and then pour onion soup and beer over it.
  • Drop bouillon cubes in different spots into the liquid and sprinkle pepper and salt to taste over all.
  • Cook on high for 4-5 hours. (I guess you could also cook on low for 8 hours or so, but I haven't tried it!).
  • Remove meat and slice or shred; return to slow cooker and cover.
  • Turn to low and let meat soak up the juices until ready to serve.
  • Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.

4 lbs bottom round beef roast
8 ounces balsamic vinaigrette or 8 ounces olive oil and vinegar dressing
1 (1 1/4 ounce) envelope onion soup mix
italian seasoning

Steps:

  • Place roast in crock pot.
  • Pour dressing on top and then sprinkle with onion soup mix.
  • Place lid on crock pot and cook on low for about 10 hours.
  • Remove meat from au jus and shred or slice.
  • Place meat back in juices and sprinkle top with Italian seasoning; stir.
  • Serve on toasted kaiser rolls.

I got this idea from a restaurant that is near my work in downtown Denver. I couldn't stop thinking about it so I came up with my own crock pot version. Enjoy!

3 lbs beef roast
3 cups water
1 (4 ounce) package onion soup mix (I use lipton brand, not sure if that is the right measurment for the package)
1/2 teaspoon celery salt
6 slices garlic toast (I use the frozen garlic texas toast)
4 tablespoons butter
2 tablespoons flour
1/4 teaspoon black pepper
salt

Steps:

  • Place the roast, water, onion soup mix, and celery salt in a crock pot and cook on low for 4-6 hours.
  • Once the roast is done, place it on a platter, cover it and set aside.
  • Place the garlic bread of your choice and bake on a baking sheet as instructed on the package.
  • In a saute pan melt the butter on medium heat. Once the butter is melted add the flour and whisk to combine making sure to break up any lumps. Once the flour is completly incorporated into the butter pour the beef broth from your crock pot into the saute pan making sure to whisk it as you add the broth so that there are no lumps in the gravy. Cook the gravy on medium heat whisking it occasionaly to keep it from sticking at the bottom of the pan.
  • While the gravy is cooking, start shredding your beef in about 2 inch chunks. Once the gravy has reduced by half add the chunks of beef in with the gravy and carefully stir to combine.
  • The garlic toast should now be done, pull it out of the oven and set aside.
  • Once the gravy and beef have come back to a simmer, place a slice of garlic toast on each serving plate and top them with about 3 tbsp of the beef and gravy and serve.
  • Note: I serve these sandwiches with mashed potatoes and a vegetable medley but they are perfect served as just a sandwich. I have also added sauteed onions to the gravy while it reduces which also is wonderful.

3 medium onions, sliced
2 jars (4.5 ounces each) sliced mushrooms, drained
3-pound beef boneless rump roast
1 3/4 cups Progresso™ beef flavored broth (from 32-ounce carton)
1 envelope onion-mushroom soup mix (from 1.8-ounce package)
12 French rolls, split

Steps:

  • Place onions and mushrooms in 3 1/2- to 4-quart slow cooker. Top with beef roast. Pour broth over beef. Sprinkle soup mix (dry) over beef.
  • Cover and cook on low heat setting 8 to 10 hours.
  • Remove beef from cooker; place on cutting board. Cut beef into 1/4-inch slices. To serve, fill rolls with beef. Remove onions and mushrooms from cooker, using slotted spoon, and place on beef. Serve juices in cooker in small individual bowls for dipping if desired.

One 3 to 4 pound pot roast (chuck roast), trimmed of extra fat
Kosher salt and freshly ground black pepper
2 to 3 tablespoons all-purpose flour
3 tablespoons coconut oil
2 medium onions, cut into 1-inch pieces
5 medium carrots, cut into 1-inch pieces
2 stalks celery, halved
6 cloves garlic, peeled and smashed
3 tablespoons tomato paste
3 cups beef stock
2 cups red wine, preferably a dry and full-bodied variety
One 14-ounce can diced tomatoes
10 to 12 sprigs thyme
1 bay leaf
2 tablespoons hot sauce
1 lemon, halved
1/2 sheet focaccia bread
Chow-Chow, recipe follows
2 cups shredded red cabbage (about 1/4 head)
1 red bell pepper, small dice (about 1 cup)
1 medium onion, small dice
6 radishes, thinly sliced (about 3/4 cup)
2 tablespoons kosher salt
1/2 cup rice wine vinegar
1/3 to 1/2 cup honey
1/2 teaspoon mustard powder
1/2 teaspoon turmeric
1/2 teaspoon prepared horseradish
1/4 teaspoon ground cloves
1 bay leaf
1 Thai chili, quartered if fresh and left whole if dried

Steps:

  • Preheat the oven to 325 degrees F.
  • Season the meat well with salt and pepper and dust with the flour, shaking off any excess. Heat the oil in a Dutch oven or large pot with an oven-proof lid over medium-high heat. Add the meat, and brown on all sides, about 10 minutes. Remove the meat from the pot and add the onions, stirring and scraping the bottom of the pot with a wooden spoon. You are looking to caramelize the outside and soften them up a bit, about 5 minutes. If the bottom of the pan is getting too dark, add a tablespoon or two of water and scrape with the wooden spoon.
  • Add the carrots, celery and garlic and cook for 2 minutes. Add the tomato paste and cook, stirring, for 1 minute. Place the meat back in the pot and add the beef stock, wine, tomatoes, thyme, bay leaf, and 2 teaspoons ground black pepper. Cook for a minute or two, just to combine everything. Cover the pot and throw it in the oven.
  • Cook for 20 minutes. Lower the heat to 250 degrees F and continue to cook for 3 1/2 to 4 hours, until the meat is fork-tender.
  • Remove the meat and set it aside. Strain the sauce through a large wire mesh strainer or colander, discarding the solids. Return the sauce to the pot over medium-high heat. Cook until the sauce reduces to 2 cups, about 25 minutes. Finish the sauce by adding a little hot sauce and a squeeze of lemon to clean up the flavor Season with salt to taste.
  • Shred the roast using 2 forks and return it to the sauce, tossing to coat. Slice the focaccia in half horizontally to make a giant sandwich. Place the meat on the bottom half of the focaccia, top with the chow-chow and place the remaining piece of focaccia on top. Skewer with toothpicks and then cut into pieces.
  • Mix the cabbage, bell pepper, onion, and radishes with the salt and place in a strainer set over a bowl. Refrigerate overnight.
  • Press out as much liquid as possible from the vegetables.
  • Combine the vinegar, honey, mustard, turmeric, horseradish, cloves, bay leaf and chili with 1/2 cup water in a large pot and boil for 5 minutes. Add the vegetable mixture, toss to coat and bring it back to a boil. Remove from the heat and let cool to room temperature. Transfer to a container and store in the refrigerator for up to 7 days.

1 (8 ounce) can French onion soup
1 (8 ounce) can beef broth

Steps:

  • Put all ingredients in a Crock Pot and cook on low 7 - 8 hours. Shred Roast Beef with a fork and cook on high for another 1/2 hour. Place your favorite cheese (I use Provolone) in a Hoagy Bun. Place beef on open bun add some of the gravy. Serve with chips or french fries.

I always loved hot sandwiches as a kid. My family is not too crazy about 'mushy meat', but this has a flavor that even they love. I like to use home made white bread to turn this into open faced sandwiches. Add mashed potatoes and you have a complete comfort meal for a cold day. Leftovers get turned into a quick and easy potpie the next day. This also freezes very well! Considering the ingredients, I am sure I got the recipe idea from a soup can once upon a time. It has been so long I honestly cannot remember, though.

2 -3 lbs roast (can be any kind, I use what is on sale)
1 (26 ounce) can cream of mushroom soup
1 (2 ounce) packet dry beefy onion soup mix
39 ounces water (1 1/2 soup can)
1/4 cup cornstarch
1 cup water

Steps:

  • Place roast in crock pot.
  • Sprinkle beefy onion soup mix over roast.
  • Mix 39 oz water and mushroom soup.
  • Pour over roast.
  • Turn crock pot on low setting for 8-10 hours.
  • Right before meal time, take roast out of crock.
  • Whisk together cornstarch and 1 C water.
  • Pour into broth in crock.
  • Stir well.
  • Shred roast with two forks and return to crock pot.
  • Serve over bread.

8 sesame seed sandwich rolls, split

  • Mix dressing, water and soup mix in saucepan; bring to boil. Pour dressing mixture over roast in slow cooker; cover with lid.
  • Cook on LOW 6 to 8 hours (or on HIGH 3 to 4 hours). Remove meat from slow cooker; shred with fork. Return to slow cooker. Add barbecue sauce; stir to evenly coat meat with sauce.
