CINNIMON PORTUGUESE SWEET BREAD
My grandfather owned and ran a Portuguese bakery for thirty years, these are derived from his recopies, I have tweaked some, I also cook different kinds and nationalities of food and will slowly post, most of some of my recipes go back 30 to 40 years.

Steps:
- 1. Add butter and milk warm to 110 degrees( as with any recipe or directions read the entire list first)
- 2. Add all the rest of ingredients in a mixing bowl with a hook adapter, or bread hook
- 3. One thing I did not add to ingredients is flour, it varies, I usually start with about 7 cups, mix until fully incorporated, add flour as needed until it just comes off the side of the bowl. Turn onto floured surface and need till smooth (you will get it after a few tries, if tour not familiar with bread dough. I usually weigh it and divide in three equal parts, caver with towel and let rise until it doubles.
- 4. Mix the sugar and cinnamon together, working with the last three ingredients.
- 5. One at a time, take each dough ball and flatten, rub with softened butter sprinkle with cin-sugar mixture, roll up tightly and place in bread pan, do this to all 3. make 3 light slices on top of each, brush with an egg water mixture, place towel over and lit rise, at least double.
- 6. Preheat oven to 400, place bread in middle rack and bake for 22 minutes, ovens do vary but this timing should work for all ovens, if using a convection oven bake at 350 for twenty minutes. Let cool in pan for twenty minutes. awesome for French toast, and great just toasted with butter. hope you all enjoy.
PORTUGUESE CINNAMON BUTTER COOKIES (RAIVAS)

Steps:
- Line cookie sheets with parchment or foil.
- Set racks in the upper and lower thirds of the oven and preheat to 350 degrees.
- Stir the flour and cinnamon together and set aside.
- Beat the butter and sugar in a bowl with an electric mixer that has a paddle attachment until soft and light, about 2-3 minutes.
- Beat in the eggs one at a time, beating smooth after each addition.
- By hand, use a rubber spatula to stir in the flour mixture.
- Scape the dough out onto a lightly floured work surface and fold the dough over onto itself 2 or 3 times until it's smooth.
- Roll the dough into a cylinder and divide it into 6 equal pieces.
- Cut each of the 6 pieces of dough in half, then in half again, making 24 pieces of dough in total.
- Roll one piece of dough into a rope about 20 inches long and join the ends to make it a circle.
- Place the circle on one of the prepared pans and puch into a frown or inch worm shape(still with space in the middle), then just push the dough in at random spots making an irregular shape to crinkle it.
- Continue with the remaining pieces of dough, placing 9 on each pan.
- Bake the raivas until they are slightly puffed, deep golden, and firm when pressed with a fingertip, about 12-15 minutes.(Change the position of pand from upper to lower rack at least once during baking).
- Slide the papers from the pans to racks, to cool the cookies.
- Store in a container for up to a week.

QUEIJADAS DE SINTRA (PORTUGUESE CHEESE TARTS WITH CINNAMON)
Portuguese towns and cities alike are incredibly proud of their traditional sweets and pastries. Sintra, a beautiful hill town not far outside of Lisbon, is understandably proud of this recipe. It is believed that this recipe dates from the 14th Century! The actual recipe is, understandably, a close-guarded ages old secret, but this is a close approximation that I found on the internet. I visited Sintra a few years ago and was amazed at how wonderful these tarts tasted! These keep longer than most pastries if stored in an airtight container. (I'm not too sure of the yield - what I have provided is an approximation).

- For the pastry: Combine the flour and salt in a large bowl.
- With a pastry blender, cut in the shortening until the texture of fine meal.
- Forking briskly, drizzle just enough ice water over the mixture to make it hold together.
- Shape into a ball, wrap in wax paper, and refrigerate several hours.
- Meanwhile, prepare the filling: In a food processor fitted with the metal chopping blade (or in a blender or electric mixer set at highest speed), process the mozzarella, butter, sugar, and cinnamon about 60 seconds nonstop until smooth and creamy.
- Scrape down the work bowl sides with a rubber spatula and beat 60 seconds longer.
- Note: It will take longer for the electric mixer to reduce the mixture to creaminess, perhaps 3 to 4 minutes of steady beating.
- Add the egg yolks, one at a time, beating well after each addition.
- Add the flour and pulse the motor on once or twice to blend.
- Transfer the mixture to a small bowl; cover and chill several hours.
- When ready to bake the queijadas, preheat the oven to 400 degrees Fahrenheit.
- Divide the pastry in half and roll, first one half, then the other, as thin as paper, on a lightly floured pastry cloth with a lightly floured, stockinette-covered rolling pin.
- Cut into rounds with a 3 1/2 inch cutter.
- Also re-roll and cut the scraps.
- Fit the pastry into plain or fluted tart tins measuring 2 1/2 inches across the top.
- Set the tins on baking sheets, then half-fill each tart shell with the cheese mixture.
- Bake uncovered for 18 to 20 minutes, just until the filling is puffy and a rich amber brown.
- Remove the tarts from the oven, cool until easy to handle; then using a small pointed knife, gently pry the tarts from the tins.
- Serve at room temperature.
PORTUGUESE CINNAMON WREATHS

- Cream together butter and all but 2 Tablespoons of the sugar.
- Add egg yolks, one at a time and beat until light.
- Add sifted flour and salt alternately with sherry, mixing well.
- Fill cookie press with dough and press out each wreath onto ungreased or parchment lined cookie sheets.
- Bake at 375° for 8-10 minutes.
- Combine the cinnamon with the reserved 2 tablespoons sugar and sprinkle warm cookies with the mixture.
