- Place the first 20 ingredients in a 7-qt. slow cooker. Cook, covered, on low 7-9 hours or until vegetables are tender. Remove bay leaves and orange and lemon zest strips., Transfer 4 cups soup to a blender; cool slightly. Cover; process until smooth. Return to slow cooker; add green onions, cilantro and parsley. Heat through., Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary.

- Place ham hock, linguica, onion, and water into a Dutch oven over high heat. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 1 hour.
- Remove meat from ham hock, chop, and return to soup. Stir in potatoes, celery, carrots, stewed tomatoes, tomato sauce, and garlic. Cover, and continue simmering for 1 1/2 hours, stirring occasionally.
- Stir in cabbage and kidney beans, cook until the cabbage has softened, about 10 minutes.

- In a large pot over low heat, combine sausage, ham hocks, onion and water. Cover and simmer 1 hour.
- Remove ham hock from soup, remove meat, tear into small pieces, and return meat to pot. Stir in carrots, potatoes, cabbage and tomato sauce. Cover and continue cooking 60 to 90 minutes more.
- Stir in beans and pasta, adding more water as needed, and cook until heated through and pasta is tender, 10 minutes.

CHICKEN, BACON AND WHITE BEAN SOUP PORTUGUESE STYLE
One of Emeril Lagasse's favorites. This is a soup his mom would always cook. He describes it as a stick-to-your-ribs soup. Enjoy! *Note: the dried beans need to soak for at least 8 hours. You could do that overnight* (For a quick soak, bring the beans and water to a boil over high heat and cook for 2 minutes at the boil, then remove from the heat and allow to stand for 1 hour. Drain.) Prep time does not include soaking the beans.

Steps:
- Put the beans into a large pot.
- Add water to cover by 2 inches and soak for at least 8 hours or overnight.
- Then drain.
- Fry the bacon in a heavy stockpot over medium-high heat until crisp, about 7 minutes.
- Use a slotted spoon to lift onto paper towels to drain.
- Pour off all but 2 tablespoons of the bacon fat from the pot.
- Add the onions and celery and cook, stirring occasionally, until tender, about 4 minutes.
- Add the shallots, garlic, bay leaves, salt and cayenne.
- Cook, stirring occasionally, until the shallots soften, about 1 minute.
- Add the beans to the pot with the stock, and bring to a boil.
- Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until the beans are tender, about 1 1/2 hours.
- Stir in the chicken and the reserved bacon and heat through.
- Remove and discard bay leaves.
- Ladle into warm bowls and sprinkle with the grated cheese.

PORTUGUESE BEAN SOUP
This bean soup gets some "bite" from a red chile paste. I have included a link to a homemade version, but you might try a bottle Thai or Indian Chili Paste.

Steps:
- Heat 2 tbls olive oil in a Dutch oven over medium-high heat and saute garlic and onion until onion begins to soften. Add 2 cups of the beans and 1 cup of the beef broth, turn heat down and simmer 20 minutes.
- Remove to a blender (or use immersion blender) and puree until smooth. Return to pot.
- In a skillet, heat remaining olive oil over medium heat and add the sausage, cooking until the sausage sweats fat. Add to the puree, stir in remaining beans, broth, chili paste and tomato paste. Cook until heated through. Season with salt, if needed.
- Serve with a crusty bread.

- Skin the fava beans (broad beans) and cook them in the chicken stock until they are soft and cooked though.

- Soak the beans in water overnight.
- Blanch the salt pork or bacon by putting it into cold water, bring to boil, and then drain. Cube into dice.
- In a large kettle put the drained white beans, the two quarts cold water. the ham, the diced salt pork, cover and simmer two hours.
- Add the turnips, turnip greens, potato, sausage, and seasoning of salt and pepper.
- Cover and cook 1/2 hour or until the vegetables, and beans are tender.
- Cut sausage into slices replace them back into the soup and taste again for seasoning.
- Serve.
- Serrano ham is a raw smoked ham similar to prosciutto, it is sometimes hard to find, use large chunks of smithfield ham if you can't find either.

Hearty cold weather comfort food. So ono! I like to serve this with Pao Doce (Portuguese sweet bread)for sopping up every last bit of this flavorful and delicious soup. A good linguica (Portuguese sausage) really brings the flavor with its seasoning, along with the ham hocks, adds to the richness of the dish. Saboroso!

- Peel the onions and garlic and place in cheesecloth, tie the cheesecloth into a bundle for easy removal later.

- Heat 2-tablespoons oil in a Dutch oven. Add bay leaves, Gouveia Portuguese sausages, 1-teaspoon sea salt, 1-teaspoon black pepper and cook 4-6 minutes or until done. Add chopped garlic and sauté for a minute.
- Add remaining oil, 2-cups onions, celery, carrots, Serrano pepper, Roma tomatoes, salt and black pepper. Saute vegetables 2-3 minutes.
- Add *Portuguese Table wine and reduce by one half.
- Add ham stock, Yukon gold potatoes and green fava beans to soup. Add fresh chopped herbs and stir soup.
- Bring soup to a full boil and reduce to a simmer for 45 minutes or until beans are soft. Season with salt and pepper to taste.
- Serve soup in warm bowls and place one sausage on top.
- Garnish soup with Fresh Parsley Sprigs and Maui Onions.
- * Chef's Note: Bairrada or any Portuguese Red Table Wine.

"2 links linguica" is about 13 oz of sausage, give of take. Really the whole recipe is a give or take kind of recipe, to taste. I have sometimes added a chopped carrot for color and taste. Also you can use chicken broth or stock. Really good on a cold night.

- Chop linguica into rounds. In dutch over or large pot, heat 1 tbsp olive oil and add linguica, cook until linguica begins to golden and the oil begins to turn pink or orange. Add chopped onions, saute a few minutes. Add garlic, saute 1 minute. Add white beans, white pepper, and chicken broth/stock, bring to boil, reduce to medium low, Cover and cook 1 to 2 hours. - 1. DRAIN AND RINSE THE BEANS.SET IT ASIDE
- 2. PLACE the beans in a 4 quart stock pot with 6 cups of water. Cover and bring it to a boil. REDUCE the heat to medium- low and simmer for 1 hour or until the beans are very tender.(easy mashed with a fork).
- 3. STACK THE KALE LEAVES, a few at a time, on top of one another. Roll lengthwise and slice crosswise into 1/2- inch wide strips,-like chiffonnade but wider. CUT the strips again ,crosswise , into shorter lengths,(about 2- inches.)set it aside.
- 4. REMOVE about half of the beans from the stockpot and some of the cooking liquid . USE a food mill,colander,or sieve set over the bowl to process the beans; ONLY bean skins should remain . DISCARD the skins and return the pureed beans to the stockpot with garlic, bay leave ,and olive oil.
- 5. RETURN the soup to a boil.ADD the kale ,parsley ,salt and pepper. RE-COVER Reduce the heat and simmer for 10 to 15 minutes.UNTIL the kale is tender,but not mushy . THIS SOUP can be serve simply with crusty country bread and olives and nice glass of white wine.Or Portuguese vinho de port.
- 6. TIP (FOR best quality, don't use a hand - held blender to puree soup beans.Because little pieces skin will not fell good stuck in your mouth.
- 7. YOU CAN use white kidney beans My mom and grams use white if they had it ,IF not it was the color of the day bean..SHE also would ADD chuck of portuguese sausages.CHOURICO,OR linguanca. PORTUGUESE BEAN SOUP
Steps:
- Soak beans in water overnight. Drain. In a stockpot, combine soaked beans, ham hocks, chicken stock, cilantro and water to cover (about 6 cups). Bring to boil, then reduce heat and simmer until meat and beans are tender. Remove skin and bones from ham hocks; shred meat and return to stock. Slice and fry Portuguese sausage, and blot with paper towels. Add sausage to stockpot along with potatoes, carrots, onion, celery and tomato puree. Cook until potatoes are tender. Season with salt and pepper. Serves 18.

- 1. First clean & cut all veggies. Placing the each on the side. Then slice both stew meat & sausages. Placing sausage aside. make sure to season meat.
- 2. In a lager pot brown the stew meat. Then add in the onions & brown. Add in the broth & then add in the potatoes & the beans. Simmer for about 20 mins until meat & potatoes are tender.
- 3. Then add in the carrots & simmer for another 5 to 10 mins. Then add in the celery & sausage right at the end. Should simmer no more then 5 more mins.
- 4. Note: If you have the time & a crock pot. You can place everything in there on low and will be ready in 6 hours.
