This is a Deen Brothers' recipe and it is absolutely delicious. Although the recipe calls for four tenderloins (2 double packs), the meat disappears fast especially if you have a hungry family or crowd. This is a great entertaining dish for company.

4 pork tenderloin, 1 1/2 pounds each, trimmed
1/4 cup vegetable oil, divided
1/2 cup honey
1/4 cup lime juice, fresh
2 tablespoons coriander, ground
2 tablespoons cumin, ground
2 tablespoons salt
2 tablespoons thyme, dried
2 tablespoons garlic powder
1 tablespoon dried chipotle powder
1 teaspoon red pepper, ground

Steps:

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil; set aside.
  • In a small bowl, combine coriander through red pepper and mix well. Store in an airtight container at room temperature for up to six weeks.
  • Coat tenderloins with desired amount of chili and spice rub.
  • In a large skillet, heat 1 tablespoon of oil over medium-high heat. Cook one pork tenderloin for two minutes or until lightly browned. Remove tenderloin and place on prepared pan. Repeat with remaining oil and tenderloins.
  • Bake for 20 minutes or until a meat thermometer, inserted into the thickest part of the meat, registers 155 degrees or to desired degree of doneness. Combine honey and lime juice, drizzle over pork, and garnish with lime wedges (optional).

2 lbs pork tenderloin (2 small tenderloins)
1 cup lime juice, about 8 juicy limes
zest from 2 limes
1/2 cup honey
1 tbsp kosher salt
1 tsp garlic powder
2 chipotle chiles in adobo sauce, chopped
1 tbsp adobo sauce (from canned chilies)
peanut oil, or other high temperature oil
cilantro

Steps:

  • Trim tenderloins of fat and silver skin as much as possible. Place in a large ziploc bag or other container to marinate. In a bowl combine lime juice, zest, honey, salt, and garlic powder. Stir to combine, then pour half over tenderloins, reserving half for sauce. To tenderloins add chiles and adobo sauce. Seal and marinade in fridge. About 30 minutes before you are ready to cook, remove pork from fridge and allow to come to room temperature. Preheat oven to 425°F. In a large, heavy oven-proof skillet (like a cast iron skillet), heat enough oil to coat over medium high temperature. Remove tenderloins from marinade and sear in hot skillet on all sides. Place the skillet in the oven and roast tenderloins for about 15 min. Check temperature with an instant read thermometer. Remove pork from the oven at approximately 140-145, cover pork in skillet with foil. Let rest on the counter for 5-10 minutes or until temperature rises to 150. Remove pork to a cutting board, pour reserved lime juice mixture into skillet with meat juices and heat on high. Allow sauce to reduce and thicken slightly, then pour over sliced pork tenderloins. If you don't have enough sauce or it thickens too much you can add a little water and continue simmering it until it is the quantity and thickness you want. Garnish with freshly chopped cilantro. If you choose to grill, start at step 5 and grill your tenderloins about 15 minutes. Remove from the grill to a platter at 140°F. Pour reserved lime juice mixture over meat and cover with foil. Allow to rest 10 minutes. Then slice, garnish with cilantro and serve.

½ cup orange juice, fresh squeezed
¼ cup lime juice, fresh squeezed
zest from 1 lime
¼ cup honey
2 tsp kosher salt
1 tsp garlic powder
1½ tsp ground cumin
2 tsp dried oregano
1 chipotle chile, chopped
1 Tbsp adobo sauce, from canned chipotles
1 (1-lb) pork tenderloin, trimmed of fat
1 Tbsp vegetable oil
cilantro, chopped, for garnish

Steps:

  • Put the orange juice, lime juice, zest, honey, salt, garlic powder, cumin, oregano, chipotles and adobo in a blender or large food processor, and pulse a few times to make sure it's well blended. Put the tenderloin in a large zip lock bag and pour in about half of the marinade. Make sure the pork is completely surrounded by marinade by removing as much air as possible from the bag, then put it in the fridge to marinate for at least 2 hours, up to 24. Put the remaining marinade in a sealed container in the fridge. Remove the tenderloin and reserved marinade about 30 minutes before you're ready to cook it and allow it to come to room temperature. Preheat the oven to 425°F (225°C). Heat the oil in a cast iron (or oven safe) skillet over medium high heat. Place the tenderloin in the skillet and sear on all sides; about 2 - 3 minutes per side, then place the skillet in the oven and continue to roast the tenderloin for about 15 more minutes. Remove the tenderloin from the skillet to a plate, and cover with a foil tent while you make the sauce. Put the skillet (with juices in it) back over a high flame, and pour in the reserved marinade. Stir and cook until the sauce thickens. After letting the tenderloin rest for about 10 minutes under the foil, place it on a cutting board and slice into medallions. Serve topped with the sauce and sprinkled with chopped cilantro.

1/4 cup land o lakes® butter, melted
2 tablespoons honey
1 tablespoon country-style dijon mustard
1 teaspoon coarsely ground pepper
1 teaspoon freshly grated lime zest
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper
1 teaspoon finely chopped fresh garlic
2 (3/4-pound) pork tenderloins

Steps:

  • 1. Combine all ingredients except tenderloins in medium bowl. Place tenderloins in resealable plastic food bag. Pour in marinade; seal tightly. Place bag in 13x9-inch pan; refrigerate 8 hours or overnight. Heat oven to 425°F. Remove tenderloins from marinade; reserve marinade. Place tenderloins into greased 13x9-inch baking dish. Bake for 35 to 45 minutes or until meat thermometer reaches 160°F. Let stand 10 minutes. Meanwhile, cook remaining marinade in 1-quart saucepan over medium heat until mixture comes to a full boil (2 to 3 minutes). To serve, slice tenderloins on the diagonal. Serve with heated marinade.
