1 pork tenderloin (1 pound), cut into 1-inch strips
1 small onion, chopped
1 teaspoon canola oil
2/3 cup enchilada sauce
1 tablespoon dry roasted peanuts
1 tablespoon semisweet chocolate chips
1 tablespoon raisins
1 garlic clove, minced
1 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1/2 cup frozen corn, thawed
8 corn tortillas (6 inches), warmed
1 cup shredded lettuce
1/4 cup reduced-fat sour cream
1/4 cup sliced green onions

Steps:

  • In a large nonstick skillet or wok, stir-fry pork and onion in oil for 3-4 minutes or until pork is no longer pink; drain and keep warm. In the same skillet, combine the enchilada sauce, peanuts, chocolate chips, raisins, garlic, cumin and red pepper flakes. Cook and stir over medium heat for 2-3 minutes or until chocolate is melted. , Pour into a blender; cover and process until smooth. Return to skillet. Stir in corn and pork mixture; cook until heated through. , Spoon pork mixture down one half of each tortilla; fold remaining side over filling. Serve with lettuce, sour cream and green onions

1 1/4 lbs cooked pulled pork, warmed
12 corn tortillas (5 or 6 inch) or 12 flour tortillas (5 or 6 inch)
3 cups shredded iceberg lettuce or 3 cups romaine lettuce
1 cup salsa (purchased or homemade, to taste)

Steps:

  • Heat a large skillet over medium heat. Place two tortillas in the skillet and cook until warm and softened, about 30 seconds per side. Fill the tortillas with about 1 1/2 ounces of the pork, 1/4 cup of the lettuce, and 4 teaspoons of the salsa.
  • Repeat with the remaining tortillas and serve. If you prefer to heat all of the tortillas at once, microwave them on high until warm and softened, 1 to 2 minutes.

1 teaspoon olive oil
1 (8 ounce) package sliced white mushrooms
1 small onion, finely chopped
1/2 pork tenderloin, chopped
1/2 teaspoon salt
1/4 teaspoon cumin seed
1/2 cup salsa
3 (6 inch) fat free tortillas
1/4 cup shredded monterey jack pepper cheese

Steps:

  • Heat the oil in a large nonstick skillet over high heat.
  • Add the mushrooms and onion. Cook until tender, about 6 minutes, transfer to a bowl.
  • Sprinkle the pork with salt and add to the skillet; sprinkle with cumin seeds.
  • Cook over high heat, stirring until the pork is browned, about 3 minutes. Stir in the salsa and mushroom mixture. Cook until heated through, about 2 minutes.
  • Transfer to a bowl and wipe the skillet clean with a paper towel.
  • Spray the skillet with nonstick spray and set over medium heat.
  • Cook tortillas, one at a time, just until golden on the bottom, about 1 ½ minutes. Place the tortillas, toasted side up on a work surface.
  • Spread the pork mixture ( about 2/3 cup) over half of each tortilla and sprinkle with one third cheese.
  • Fold the unfilled tortilla half over the filling.
  • Spray the skillet with the nonstick spray and set over medium heat.
  • Add the tacos to the skillet and cook, turning once with a large spatula, until golden, about 1 minute on each side.

1 1/2 cups dried black beans, soaked overnight in cold water and drained (10 1/2 ounces)
1 tablespoon vegetable oil
1 medium onion, finely chopped
4 garlic cloves, minced
1 large jalapeno, seeded and minced
1 medium tomatoes, coarsely chopped
1 teaspoon dried oregano
salt & freshly ground black pepper
3/4 cup low sodium chicken broth
1 head garlic, cloves peeled and thinly sliced
1 medium onion, finely chopped
1 habanero pepper, seeded and minced
1 large serrano chili, seeded and minced
1 bay leaf
1/2 teaspoon ground cumin
salt & freshly ground black pepper
1 (1 lb) pork loin roast, trimmed of excess fat
warm corn tortilla, and
salsa, for serving

Steps:

  • PREPARE THE BEANS: In a large saucepan, cover the beans with 2 inches of water and bring to a boil. Simmer over low heat for 1 hour, stirring occasionally.
  • In a medium skillet, heat the vegetable oil. Add the onion, garlic and jalapeño and cook over moderate heat until softened, about 7 minutes.
  • Add to the beans, along with the tomato, oregano and enough water to cover. Season with salt and pepper and simmer until the beans are tender, about 2 hours longer, replenishing the water if necessary.
  • MEANWHILE, COOK THE PORK: Preheat the oven to 300. In a small enameled cast-iron casserole, combine the broth with the garlic, onion, habanero and serrano chiles, bay leaf, cumin and » teaspoon each of salt and pepper and bring to a simmer. Season the pork loin with salt and pepper and add it to the casserole.
  • Cover with foil and bake for about 1 hour, turning the pork once, until tender. Transfer the pork to a plate and cover with plastic wrap until cool enough to handle.
  • Remove the bay leaf. Shred the pork into strips and stir into the broth. Season with salt. Fill the tortillas with pork and serve with the black beans and salsa.

2 cups minced pineapple
1 cup minced apple
1/4 cup minced shallot
2 tablespoons chopped cilantro
1 tablespoon fresh lime juice
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 tablespoon canola oil
1 cup thinly sliced yellow onion
2 garlic cloves, minced
1 1/2 lbs pork tenderloin, cut lengthwise and thinly sliced crosswise
1/2 cup reduced-sodium fat-free chicken broth
1 tablespoon cider vinegar
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
12 cherry tomatoes, quartered
2 chipotle chiles, canned in adobo sauce, chopped (about 2 tablespoons)
12 (6 inch) corn tortillas, warmed

Steps:

  • To prepare salsa, combine the first 7 ingredients in a medium bowl; stir until well blended. Cover and chill.
  • To prepare tacos, heat oil in a large nonstick skillet over medium heat. Add onion to pan; cook 2 minutes or until tender.
  • Add garlic; cook 30 seconds. Add pork to pan; cook 4 minutes or until pork loses its pink color, stirring occasionally.
  • Stir in broth and next 7 ingredients (through chipotles).
  • Cover, reduce heat, and simmer 10 minutes. Uncover and simmer 10 minutes or until liquid is nearly evaporated.
  • Warm tortillas according to package directions. Serve pork mixture with tortillas and salsa.

DR NICK'S PORK SOFT TACOS

A 'pulled pork' recipe I came up with, inspired by my local El Salvadorian restaurant. Great for those who aren't fans of sweet BBQ sauce-based versions (like me!). Try it with Recipe #17126.

1 -2 lb pork loin roast
1 tablespoon dried onion flakes
2 teaspoons cumin
1 teaspoon beef bouillon powder
1 teaspoon garlic salt
1 teaspoon paprika
1 teaspoon oregano
1/2 teaspoon onion powder
1/2 teaspoon dried chili pepper flakes
1/2 teaspoon cayenne pepper
1/2 teaspoon dried chipotle powder
1/2 teaspoon cracked black pepper
1/2 teaspoon salt
2 tablespoons red wine vinegar
1 -2 cup water

Steps:

  • Wash your hands!
  • Trim excess fat from roast.
  • Combine the dry ingredients in a bowl and rub over the entire surface of the pork.
  • Place pork in a slow cooker. Add water until roast is approximately half submerged. Add vinegar and remaining dry ingredients to the water and stir.
  • Place slow cooker on low and leave for 6-8 hours, turning occasionally if you can.
  • Remove roast from slow cooker. At this stage it's easy to remove any membrane that may be attached to the surface. Shred the pork using two forks and transfer to a large frying pan.
  • Add about half the liquid to the pan and simmer gently until most of the liquid has reduced. You want the meat to be moist but not swimming.
  • Serve in pre-warmed corn tortillas. I add chopped tomato and spanish onion with just a few drops of hot sauce.
  • Enjoy!

1 lb pork tenderloin
2 lime
1 jar(s) pico de gallo (i use sisters salsa from blue hill, me available at hannafords) if you cant get this, any high quality pico de gallo salsa will do fine.
1 sprig(s) fresh cilantro
1 la tortilla factory handmade style corn tortillas (if not make own using masa flour or buy any other high quality homemade style tortilla)
8 Tbsp light sour cream
1 bottle kc masterpiece chipotle lime marinade

Steps:

  • 1. 1. As soon as you purchase the pork, cut into cubes and marinate either for the rest of the day or for a few days. The longer it marinates, the better!
  • 2. 2. Bake Pork using the Au Bain method. Either use a special cooking tray that has a basin underneath with a top with air slats. Or use a cake pan filled with water and place a metal cooling rack rack over the cake pan, then put tin foil over the cooling rack and make insisions for steam to come through. Place pork on top of tin foil. Don't be intimidated, this is the best way to guarentee your pork will be cooked tender! Bake at 300 degrees for about 30-40 minutes or until cooked.
  • 3. 3.Place torillas on microwaveable plate with slightly damp paper towels over them. Microwave for 30 seconds on each side. Wipe off excess moisture immediately.
  • 4. 4. Assemble Tacos- put pork, pico de gallo, light sour cream, and cilantro (loosely chopped) onto tortilla. Squeeze fresh lime over tacos.

2 tablespoons extra-virgin olive oil
2 small onions, finely chopped
1 pound ground pork
1 tablespoon sweet smoked paprika
Salt and pepper
8 6 inches flour tortillas
1 10 ouncepackage frozen corn, thawed
2 tablespoons finely chopped cilantro
Juice of 1 lime
8 ounces shredded monterey jack or cheddar cheese
1teaspoon cumin

Steps:

  • Preheat the oven to 300. In a large skillet, heat the olive oil over medium heat. Add half the onions and cook until softened, about 5 minutes. Add the pork and paprika and cook, breaking up the meat until browned and cooked through, 8 to 10 minutes. Season to taste with salt and pepper. Meanwhile, place the tortillas on 2 baking sheets and warm in the oven for about 5 minutes. In a medium bowl, combine the corn, remaining onions, cilantro and lime juice. Season the salsa to taste with salt and pepper. To serve, top each warm tortilla with cheese, meat and corn salsa.
