My grandmother use to make this for my grandfather. She passed the recipe down to my mom who use to make this for our family, but especially for my father who absolutely LOVED this! I now make this for my husband! I serve this with buttered corn and smashed garlic potatoes!

4 cups vegetable oil for frying
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon garlic powder
3 eggs
1 clove garlic, minced
1 tablespoon chopped fresh parsley
4 (4 ounce) beef tenderloin fillets, pounded thin
2 links pork sausage
3 tablespoons butter
3 tablespoons all-purpose flour
2 ½ cups heavy cream
salt and black pepper to taste

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • In a bowl, stir together 1 cup flour, 1 teaspoon salt, white pepper, and garlic powder. In a separate bowl, beat eggs with garlic and parsley. Dredge each tenderloin fillet in seasoned flour, dip in egg mixture, and dip back into flour mixture. Shake off any excess flour.
  • Gently place the steaks into the hot oil, 2 at a time, and cook until golden brown on both sides, about 3 minutes per side. Drain on paper towels.
  • Place the sausages in a small skillet over medium heat, and fry them until very dark brown on all sides, about 10 minutes. Finely chop the sausages, and set aside. In the same skillet, melt butter, and stir in 3 tablespoons of flour. Cook the butter-flour mixture until it turns a pale beige color, about 1 minute, then stir in the sausage, cream, salt, and black pepper. Bring the mixture to a simmer, and cook until thickened, about 5 minutes. Serve sauce over the fried steaks.

1 1/2 cups orange juice
1/2 cups rice wine vinegar
3/4 cups soy sauce
1/4 cups brown sugar
1 whole star anise
3 whole allspice
1 pound bacon, sliced
3 cups all-purpose flour, plus more for dusting
4 teaspoons sugar
1 teaspoon salt
2 1/2 tablespoons baking power
3 tablespoons butter, diced and very cold
1 cup buttermilk, plus more for brushing
1 egg
2 tablespoons grated ginger
2 tablespoons orange zest
1/2-pound breakfast sausages
2 tablespoons butter
2 teaspoons all-purpose flour
2 to 4 cups chicken stock
1 teaspoon sesame oil
2 scallions, sliced
Salt and freshly ground black pepper
2 tablespoons sesame oil
1 tablespoon butter
1 bunch mustard greens, rinsed and roughly chopped

Steps:

  • Preheat the oven to 425 degrees F. Line 2 sheet pans with silicone baking mats.
  • For the bacon: Combine the orange juice, vinegar, soy sauce, brown sugar, star anise and allspice in a small saucepan over medium-high heat and reduce by half. In the meantime,
  • spread the bacon strips onto 1 prepared sheet pan in a single layer. Bake until crispy, 10 to 15 minutes. Pour the glaze over the bacon and cook another 10 minutes.
  • For the biscuits: In a food processor, combine the flour, sugar, salt, baking powder and butter. Pulse 2 to 3 times until the butter is roughly incorporated. Set aside.
  • Combine the buttermilk, egg, ginger and orange zest. Mix the wet and dry ingredients until just combined. Dump onto a floured surface and pat down into a square, about 1 inch high. Cut into desired shapes and place the other prepared sheet pan. Brush the top of each biscuit with buttermilk. Bake until the biscuits are a light golden brown, 8 to 10 minutes.
  • While the biscuits are cooking, start the gravy. Remove the casings from the sausage links. Heat a skillet over medium-high heat and saute the sausage, breaking it up in the pan until fully cooked.
  • In the meantime, in a saucepan, melt the butter over low heat. When melted, vigorously whisk in the flour. Continue to whisk the roux on medium heat for about 3 minutes. Add 2 cups chicken stock to the roux. Continue whisking until shimmering. If the gravy is too thick, add more stock until it reaches the desired consistency. Once at the desired consistency, add the sesame oil and chopped scallions. Add the sausage and season with salt and pepper. Hold warm over low heat.
  • For the mustard greens: In a large saute pan, heat the sesame oil and butter. When the butter is melted and foamy, add the mustard greens. Cook on high heat until tender and the greens begin to crisp, 7 to 8 minutes. Season with salt and pepper.
  • To serve, split open a biscuit, top with the gravy, follow with the mustard greens and garnish with a slice of the soy-glazed bacon.

4 butterfly style pork chops
3 tablespoons extra virgin olive oil, divided
1 lb sweet Italian sausage
1 large can diced tomatoes, do not drain
1 medium can or jar mushroom buttons, do not drain
1/2 cup burgundy wine
1 1/2 teaspoon s minced fresh garlic
1 medium onion, chopped
1/2 teaspoon Italian seasoning
Salt & pepper to taste
Rice or pasta cooked as desired

Steps:

  • Brown chops in 2 tablespoons oil to done. Drain, set aside, and keep warm. Crumble and brown sausage to medium done in 1 tablespoon oil. Drain and set aside.
  • Combine tomatoes, mushrooms, wine, garlic and onion in large skillet. Cook at medium-low heat until onions are clear. Add sausage and spices; cook at medium-high heat stirring occasionally about 3 minutes or until sausage is done.
  • Cover pork chops with Italian sausage gravy.

2 tablespoons ground cumin
2 tablespoons ground coriander
1 teaspoon salt
1/2 teaspoon ground black pepper
24 ounces pork tenderloin, cut into 4 pieces
3 tablespoons olive oil
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 400°F. Melt butter in heavy small saucepan over medium-low heat. Add flour; cook until mixture is dark golden brown, stirring frequently, about 20 minutes. Add bell pepper and onion; sauté 3 minutes. Gradually whisk in broth. Add sausage and cayenne; increase heat and simmer 5 minutes, stirring often. Season with salt and pepper.
  • Mix cumin, coriander, salt, and pepper in medium bowl. Dredge pork in spices. Heat oil in heavy large ovenproof skillet over medium-high heat. Add pork and brown on all sides, about 8 minutes. Transfer skillet to oven; roast pork until thermometer registers 160°F, about 10 minutes. Transfer to cutting board. Let stand 5 minutes. Slice pork 1/2 inch thick. Divide among 4 plates. Rewarm gravy. Mix in parsley. Pour gravy over pork and serve.
  • Andouille sausage can be found in specialty foods stores and some supermarkets. You can substitute hot links, kielbasa sausage, or smoked Hungarian sausage in these recipes.

HOMEMADE PORK SAUSAGE GRAVY

1/2 c onion
1 pkg canned buttermilk biscuits
3 Tbsp grease
3 Tbsp flour
1 c milk
1 lb bulk pork sausage
1 tsp parsley flakes

Steps:

  • 1. In a large skillet, brown the sausage and onions. Pop the buttermilk biscuits into the oven while the sausage is browning. Remove the sausage from the pan, and reserve about three tablespoons of grease. Stir about three tablespoons of flour in with the grease. (Always keep about equal measurements for grease and flour.) When you add the flour to the grease, you must stir constantly to prevent the flour from burning. Once the flour has browned nicely, pour in about one cup of regular milk. Season with salt and pepper, and add a sprinkling of parsley flakes. Return the sausage to the skillet, and cook on low until heated through. Serve hot. Buttermilk biscuits go exceedingly well with this gravy, but you don't have to save this gravy for biscuits or even for breakfast. Sausage gravy can be served for any meal.
