ROAST PORK SOUP

- In a soup kettle or Dutch oven, combine the first 9 ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables are crisp-tender, about 45 minutes. Sprinkle with basil.

LIPTON SOUP PORK ROAST
A wonderfully moist pork roast that is so teander it will just fall apart around cooking. Great for the whole family...even the husband. :)

Steps:
- Place pork into a crock pot and cover with water or chicken stock/broth (if you use stock/broth do not add chicken boulions).
- Turn crock pot onto low.
- Add soup mix, ketchup, salt, pepper, garlic powder, and boulins.
- Mix spices as well as you can into the water.
- Cover and let cook for atleast 7-8 hours.
- A wonderful side with this is white or brown rice that has been cooked in the broth from the crock pot instead of water.
- Believe me, you will love it.

ROAST PORK SOUP
A very tasty way to use up leftover roast pork. I usually make a batch of homemade soup once a week for lunches, and this recipe is in my top ten for soups. This is from the March 2000 issue of Quick Cooking.

- In a soup kettle or Dutch oven, combine all ingredients except basil and bring to a boil.
- Reduce heat; cover and simmer for 45 minutes.
- Sprinkle with basil when ready to serve.
- You can substitute 2 cups cooked beans in place of the canned beans.

SOBA NOODLE SOUP WITH ROAST PORK AND BOK CHOY
Steps:
- Preheat oven to 350° F.
- In a small bowl stir together hoisin, sugar, five-spice powder, and 1 teaspoon soy sauce. In a small glass baking dish brush pork with hoisin mixture and roast in middle of oven 40 minutes, or until a thermometer inserted in center registers 160° F. Let pork stand on a cutting board 15 minutes. Cut pork crosswise into thin slices and halve slices diagonally.
- In a large saucepan skim any fat from surface of broth and bring broth to a boil with gingerroot, star anise, garlic, and remaining tablespoon soy sauce. Remove pan from heat and steep broth, covered, 30 minutes. Pour broth through a sieve into another large saucepan.
- While broth is steeping, in a 5-quart kettle bring 3 1/2 quarts salted water to a boil and add noodles. When water returns to boil add 1 cup cold water and bring to boil again. Repeat procedure and simmer noodles 5 minutes, or until just tender. In a colander drain noodles and rinse under cold water. Drain noodles well and divide among 4 large soup bowls.
- Bring broth to a boil. Cut bok choy crosswise into 1/8-inch slices and add to broth. Simmer mixture 2 minutes, or until bok choy is risp-tender. Divide pork, bok choy, and broth among bowls.

PORK ROAST SOUP
I found such wonderful recipes on here for pork roast. Unfortunately, I have leftovers, that I have bagged and put in the freezer. Time to make soup. This is just one of the soups I have made.

- 1. In a large soup pot, drizzle olive oil in bottom of pan, just enough to cover the bottom. Add butter with the olive oil as an option. Add chopped onion, celery, garlic to pan and stir. Simmer and stir on med heat until vegetables are partially cooked (this speeds up the soup making progress and combines the flavors)
- 2. Add the water, tomatoes with juice and spices. Add the scrapes from the bottom of the bag of roast pork, saving the big pieces for the end of the soup making. The pork is already cooked and the larger pieces will hold its shape better. Simmer for 1 to 2 hours. Add extra seasoning as need for taste.
- 3. About 20 minutes before dinner, add the rigatoni noodles and the rest of the pork. Add extra water and chicken stock as needed if this gets to thick.
ROAST PORK AND ESCAROLE SOUP WITH PASTA
Purchased Italian treats like roasted red peppers, assorted olives, caponata, salami, marinated mushrooms and crusty breadsticks make a great antipasto platter. Biscotti and a bowl of fresh grapes are just right for dessert.

- Heat olive oil in heavy medium saucepan over medium-low heat. Add garlic and stir until beginning to color, about 2 minutes. Add broth and oregano. Increase heat to high and bring mixture to boil. Add pasta and cook 4 minutes. Add escarole and cook until pasta is tender, about 5 minutes longer. Add pork and 3 tablespoons Parmesan and simmer mixture 1 minute. Ladle soup into deep bowls. Sprinkle with remaining 5 tablespoons Parmesan and serve.
