PORK AND HAM LOAF WITH MARMALADE-MUSTARD GLAZE

- Preheat oven to 350°F. Melt butter in heavy medium skillet over medium-low heat. Add onion and bell pepper. Cover and cook until vegetables are tender, stirring occasionally, about 10 minutes. Cool mixture completely.
- Mix ground pork, ham, crushed crackers, milk, eggs, pepper, salt and cooled onion mixture in large bowl; combine thoroughly. Transfer pork mixture to shallow baking pan. Shape into 9x4x2 1/2-inch loaf. Using long knife, make shallow crisscross (diamond) pattern in top of loaf. Bake loaf 30 minutes.
- Meanwhile, blend orange marmalade, Dijon mustard and brown sugar in small bowl for glaze.
- Drizzle 1/3 cup glaze over loaf; bake 15 minutes. Drizzle another 1/3 cup glaze over loaf; bake 15 minutes. Drizzle remaining glaze over loaf and bake until thermometer inserted into center of loaf registers 165°F, about 20 minutes longer. Transfer loaf to platter; let stand 10 minutes. Pour pan juices into small bowl; whisk to blend.
- Cut loaf crosswise into 3/4-inch-thick slices. Serve with pan juices.
HOISIN-GLAZED PORK AND TURKEY MEAT LOAF
Meatloaf needs no introduction, but this one gets kicked up a notch with the Chinese-inspired flair of fresh ginger, scallions, and a hoisin sauce glaze. It's delicious and so simple to make.

- Preheat the oven to 350°F. Line a broiler pan rack or wire rack with foil and set it on top of a rimmed baking sheet. Lightly coat the foil with cooking spray, then use a sharp knife to make a few slits in the foil (this will allow the fat from the meatloaf to drip down onto the baking sheet).
- In a large bowl, whisk together the panko, milk, eggs, parsley, basil, scallions, garlic, onion, ginger, sesame oil, salt, and pepper to taste. Add the ground pork and turkey and stir or use your hands to gently combine, being careful not to overwork the meat.
- Shape the meat mixture into a 12-inch long loaf and place it on the foil-lined rack. Flatten the top slightly and square off the ends. In a small bowl, whisk together the hoisin sauce and ketchup. Pour about half the sauce over the meatloaf and use a brush or spoon to generously coat the sides and top.
- Bake for 1 hour to 1 hour 10 minutes, until the internal temperature reads 160°F on an instant-read thermometer, brushing with glaze every 20 minutes or so. Let the meatloaf cool for 10 to 15 minutes, then transfer to a platter, slice, and serve.
- Variation
- For an extra decadent loaf, melt 1 tablespoon unsalted butter in a large skillet over medium-high heat. Add the panko and toast until golden brown, stirring often, 2 to 3 minutes. Continue with the rest of the recipe.
PORK LOAF
This is a new-wave meatloaf! I just purchase a 1-pound piece of smoked ham at the deli department for this and chop it finely on my processor, any brand will do as long as it is a smoke flavor ham, or save some of your cooked leftover ham to make this! I have made it two times in one month, including today, and has become a favorite of my familys. You can use regular saltine crackers for this in place of whole wheat crackers, and red bell pepper can be substituted for green, or use both!

- Set oven to 350 degrees.
- Melt butter in a medium saucepan over medium-low heat.
- Add in onions and bell pepper/s; cook until veggies are tender, stirring occasionally (about 8-10 minutes) then cool the mixture completely.
- In a large bowl mix together ground pork, ham, crushed crackers, milk, eggs, pepper, salt and the cooled onion/pepper mixture; mix well to combine.
- Shape into an approx 9x5-inch loaf, and place onto a shallow greased baking pan.
- Using a long knife, make shallow criss-cross (diamond) pattern in the top of of loaf.
- Bake for 30 minutes.
- Meanwhile for the glaze blend the orange marmalade, Dijon mustard and brown sugar in a small bowl.
- After 30 minutes of baking remove from oven and drizzle about 1/3 cup glaze over loaf and return to oven to bake for another 15 minutes.
- After 15 minutes, drizzle the remaining glaze over loaf and bake for about another 22-25 minutes or until a thermometer inserted in the center of the loaf reads 165°F.
- Transfer the loaf to a platter; let stand for 10 minutes.
- Pour the pan juices into a small bowl and whisk to blend.
- Slice the loaf and serve with the pan juices.

- Heat oven to 350°F. Spray large baking sheet with cooking spray. In large bowl, mix water and Bisquick; knead until dough is smooth. Cover and set aside.
- In 10-inch skillet over medium-high heat, cook and stir pork sausage until no longer pink, about 4 minutes. Add apple and onion; cook about 1 minute. Drain. Return to skillet; stir in cranberries, cinnamon, nutmeg and salt.
- Place Bisquick dough on flat surface; roll the dough to rectangle, 10x14 inches. Spoon sausage mixture onto center of dough; sprinkle with cheese. Pat mixture to within 1-inch of edges of dough. Brush edges with water. Starting with long side, roll dough over sausage mixture forming a loaf. Pinch edges to seal.
- Place loaf on baking sheet. Cut 4 short slits in top of dough. Bake 30 to 35 minutes or until golden brown. Let cool 5 minutes before slicing into 8 slices. Serve with maple syrup, if desired.

- PORK LOAF: Crumble bread into milk in a large bowl.
- Add pork, sausage, egg, apple, celery, wheat germ, parsley, salt, pepper, basil, thyme and nutmeg; stir until well blended.

- 1. Gather all ingredients and preheat oven to 400*. (this pic is only half the ingredients because I was only baking it for 2 of us)
- 2. Mix pork, stuffing mix, milk, eggs,sauce, mushrooms, and onion all together, mixing well. I use my just washed hands. Place in a broiler pan sprayed with Pam or if you don't have one you can use a pizza pan and a foil lined jelly roll pan to catch the grease. Make sure to spray it as well. (see pic)
- 3. Shape into loaf, not too tall coz it takes too long to bake. I cover mine on top completely with ketchup. You can do yours however you want. I think the ketchup just gives it a nicer flavor. Bake for 1 to 1 hour and 15 minutes. Mine takes the longer one. You can also divide into 4 loaves. These probably take 40 - 45 minutes.

- Preheat the oven to 350°. Soak the bread slices in the milk until well saturated. Remove from milk and squeeze dry. In a food processor, pulse the bread, bacon and prosciutto. Add the onion, garlic, sun-dried tomatoes, roasted pepper and eggs; process to a paste. Pulse in the parsley, thyme, crushed red pepper, oregano and 1 teaspoon each of salt and pepper. Transfer to a bowl and knead in the pork.
- Preheat the broiler. Pat the mixture into two 8-inch-long loaves. In a large nonstick roasting pan, heat the 1 tablespoon of oil. Transfer the loaves to the pan and cook over moderate heat until the bottoms are browned, 6 minutes. Brush the tops with oil and broil until slightly browned, 8 minutes. Lower the oven to 350°.
- In a cup, combine the tomato puree, stock and hummus. Pour the mixture into the roasting pan and cook for 30 minutes, or until an instant-read thermometer inserted into the center of one of the loaves registers 180°. Light the broiler.
- Spoon some of the sauce over the loaves and broil for 5 minutes, until browned. Transfer to a platter and serve with the gravy.
