PORK CHOPS OVER RICE
If you asked my husband to name his favorite foods, he'd likely mention these chops. I've also served this appealing skillet supper to company. Ever since I clipped the recipe out of the paper many years ago, it's become a standard in my kitchen. We live in a semi-rural area with two horses and six cats!

- 1. In a skillet, melt butter and brown chops over medium/ high heat, salt and black pepper to taste. Transfer to a 13x9x2 casserole dish sprayed with Pam. Combine the remaining ingredients and pour over pork chops. Cover with foil 30 minutes.
- 2. Preheat oven to 300 - 325 degrees F. Bake 1 1/2 hours or until done. Serve over cooked rice or creamed potatoes.
- 3. For a Slow Cooker: Place browned chops in bottom of slow cooker; pour sauce over top. Cover. Cook on high for 4 hours or until chops begin to fall apart.

- Combine water, rice, and 1/2 teaspoon salt in a saucepan; bring to a boil. Reduce heat to low, cover, and cook until rice is tender, about 20 minutes. Remove from heat and add 1 tablespoon butter; stir until rice is fluffy.
- Preheat oven to 350 degrees F (175 degrees C). (If using a countertop induction oven, preheat on the "Combo 1" setting.)
- Place pork chops in a 9-inch baking pan (or grill pan if using the countertop induction oven). Drizzle olive oil on top. Sprinkle Creole seasoning, salt, and pepper over both sides. Arrange green bell pepper and onion slices on and around pork chops.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 20 minutes in the conventional oven and 10 to 15 minutes in the countertop induction oven. Cover with aluminum foil.
- Melt 1/4 cup butter in a large skillet over medium heat. Add mushrooms and chopped onion; cook and stir until onion is translucent, about 5 minutes. Pour in half-and-half. Stir in flour slowly; cook and stir until sauce thickens, about 5 minutes.
- Pour sauce over pork chops; stir to incorporate juices in the pan.
- Return pork chops to the preheated oven and bake until flavors combine, 3 to 5 minutes. Serve over rice. Sprinkle paprika on top.

- Sprinkle pork chops with salt and pepper and dredge in flour, shaking off excess.
- In a large skillet over medium heat, brown pork chops in oil.
- Remove chops from the pan.
- Add the remaining ingredients except for peas, Parmesan cheese and black pepper to skillet. Place pork chops over the rice mixture.
- Bring to a boil.
- Reduce heat; cover and simmer for 20-25 minutes or until rice is tender.
- Remove chops to serving platter.
- Add peas, parmesan cheese and black pepper to rice and stir together until peas are warmed through.

- 1. Gather all ingredients.
- 2. Spray hot cast iron skillet with Crisco oil spray.
- 3. Salt and pepper both sides of pork chops. Brown pork chops on both sides. This will take about 25 minutes total.
- 4. Place uncooked rice in bottom of a casserole dish that has a cover.
- 5. Place browned pork chops over rice.
- 6. Add 1 cup of water to hot skillet and scape off the browned bits.
- 7. Pour undilated beef consomme' and skillet drippings over pork chops and rice.
- 8. Cover and bake 50 minutes at 350 degrees. Times may vary based on thickness of the pork chops.
- 9. Enjoy!
MARINATED PORK CHOPS, OVER VEGGIES & RICE
Steps:
- Place pork chops in a shallow dish with air tight lid or into a sturdy, gallon size zip lock bag.
- Mix together 2 Tbsp. soy sauce, garlic powder, onion powder, brown sugar and red chili sauce.
- Pour sauce mixture over pork chops and marinate in refrigerator for several hours.
- Preheat oven to 400.
- Remove chops from marinade and place on a rack over a foil lined pan.
- Bake in fully preheated oven for 15 minutes.
- Switch oven temp to Broil. Broil chops for five minutes, then flip and broil another five minutes on the other side.
- While pork chops are baking, heat peanut oil and sesame oil in large skillet over medium heat.
- add broccoli slaw, and 1 Tbsp. soy sauce. Stir fry until vegetables wilt.
- Spoon cooked white rice onto a plate then top with stir-fried veggies then top with pork chop.
- Garnish with sliced green onions if desired.

I love this dish!!! My boyfriend of 6 years loves this too! He has to eat this at least once a week! he craves it when I dont make it. My mother had actually taught me how to cook this.. - First. Marinate the pork chops. Take your oyster sauce, onion powder, garlic powder, and soy sauce. Mix all that in a large bowl and add in your pork chops. Make sure that all the pork chops are covered in the marinade. when you finish just put that aside.
- Next, cook the jasmine rice. First get a pot. Make sure its non stick, Pour your rice into the pot.equal parts. Put it on the stove and let it come up to a boil. let it boil for about 3-2 min, then turn down to simmering and let it sit on low COVERED till the rice is cooked.
- After that is cooking. Next you get a non stick skillet on medium high heat. Pour in a little bit of oil.. and kind of oil you perfer. and let it heat up. Then, you add in your pork chops. let it brown up on each side.
- next prep your vegetables. Sliced that tomatoes and the cucumber. while the pork chops are getting cooked.
- after all this is done and the rice is cooked.. and the pork chops also. TIME to PLATE!
- get a plate.. and scoop some rice onto the plate.. then you place a pork chop right on top so all that juicy goodness can drip onto the rice.. If you would like more soy sauce..feel free to add some onto your plate. then add some vegetables onto the side and garnish with some sprinkled green onions on top of everything!!! DELICIOUS! now enjoy!

- Cook bacon in a large skillet over medium heat until crisp, about 10 minutes. Remove the bacon slices to a plate lined with paper towels to cool, retaining bacon drippings in the skillet. Crumble the cooled bacon.
- Lay pork chops into the reserved bacon drippings in the skillet; season with salt and black pepper. Cook pork chops until completely browned, 3 to 5 minutes. Remove pork chops to the paper towel-lined plate.
- Stir rice, onion, and garlic into the drippings remaining in the skillet. Cook and stir until the onions are tender and the rice is slightly browned, 5 to 7 minutes. Pour chicken broth over the rice mixture; add crumbled bacon and cayenne pepper.

- 1. Make rice as pkg. directs. keep warm. Meanwhile, mix flour, 1 tsp. chili powder, salt and pepper in shallow dish; dredge pork chops in flour mixture.
- 2. Heat oil in large nonstick skillet over medium high heat. Add chops, and cook 2 minutes on each side or til golden.

PORK CHOPS OVER RICE
To help reduce clean up, I find it easier to brown pork chops on the side burner on the grill outside. This will reduce the amount of oily cleanup on the stove.
