2 tablespoons olive oil (use less if desired)
1 tablespoon smoked paprika
2 teaspoons brown sugar
1 teaspoon garlic powder
salt and pepper (to taste)
4 medium boneless pork chops
4-6 medium potatoes, chopped into small 1-inch chunks
1 cup frozen baby carrots
1 cup frozen green beans
2 tablespoons olive oil (use less if desired)
2 teaspoons lemon juice
1 teaspoon garlic powder
2 teaspoons dried parsley (or freshly chopped)
salt and pepper (to taste)
fresh parsley for garnish (if desired)

Steps:

  • Preheat your oven to 400 degrees Fahrenheit.
  • Add the olive oil, paprika, brown sugar, garlic powder, and salt and pepper to a small bowl and mix until it forms a paste.
  • Rub the mixture onto both sides of the pork chops and set aside.
  • Add the chopped potatoes, the baby carrots and green beans to a large sheet pan.
  • Pour the olive oil, lemon juice, garlic powder, parsley and salt and pepper over the top and toss well to coat.
  • Arrange the veggies to lay as flat as possible on the sheet pan and nestle the pork chops on top.
  • Place the sheet pan in your preheated oven and bake for about 20 minutes, or until the pork reaches an internal temperature of 145 degrees Fahrenheit.
  • Serve immediately with a sprinkling of fresh parsley, if desired.

1 tablespoon butter
4 pork loin chops (1/2 inch thick and 7 ounces each)
3 medium red potatoes, cut into small wedges
3 medium carrots, cut into 1/2-inch slices, or 2 cups fresh baby carrots
1 medium onion, cut into wedges
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup water
Optional: Cracked black pepper and chopped fresh parsley

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium heat. Brown pork chops on both sides; remove from pan, reserving drippings., In same pan, saute vegetables in drippings until lightly browned. Whisk together soup and water; stir into vegetables. Bring to a boil. Reduce heat; simmer, covered, just until vegetables are tender, 15-20 minutes. , Add chops; cook, covered, until a thermometer inserted in pork reads 145°, 8-10 minutes. Remove from heat; let stand 5 minutes. If desired, sprinkle with pepper and parsley.

2 (6 ounce) boneless pork chops
1 large onion, sliced
1 (14 1/2 ounce) can stewed tomatoes, we like Italitan flavoured
2 medium potatoes, peeled and quartered
1/2 cup broccoli spear
1/2 cup cauliflower, spears
salt and pepper
vegetable oil cooking spray

Steps:

  • Spray a medium size frypan with veggies cooking spray; heat to medium high.
  • Add pork chops and sear on all side, about 5 minutes.
  • Add onion slices and cook 'til transparent and just turning brown, about 5 minutes.
  • Add stewed tomatoes; bring to a simmer, cover and simmer for 30 minutes.
  • Add potatoes around the outside of the pan; simmer 15 minutes, add broccoli and cauliflower and sprinkle with salt and pepper; simmer a further 15 minutes or 'til the potatoes are cooked through.
  • Serve hot.

1/4 cup olive oil, divided
3 cups diced new potatoes
3 cups cut fresh asparagus (1-inch pieces)
1/4 teaspoon salt
1/4 teaspoon pepper
1 large gala or Honeycrisp apple, peeled and cut into 1-inch wedges
2 teaspoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
4 boneless pork loin chops (1 inch thick and about 6 ounces each)
2 teaspoons Southwest seasoning

Steps:

  • Preheat oven to 425°. Line a 15x10x1-in. baking pan with foil; brush with 2 teaspoons olive oil., In a large bowl, toss potatoes with 1 tablespoon olive oil. Place in 1 section of prepared baking pan. In same bowl, toss asparagus with 1 tablespoon olive oil; place in another section of pan. Sprinkle salt and pepper over potatoes and asparagus., In same bowl, toss apple with 1 teaspoon olive oil.
