PORK CHOPS, POTATOES, AND ONION CASSEROLE
This is a very simple pork chop casserole that Mom used to make. The recipe I have from her has no amounts on it, so I estimated what I use.

Steps:
- Preheat oven to 325.
- Heat a skillet with grease, oil, or crisco if using. Lightly brown the chops.
- While the chops are browning, peel and slice the potatoes and put on to boil. Cook about 5 minutes, just so they are not real hard.
- Drain potatoes. Pour into greased round casserole dish. Slice onions on top of the potatoes. You can add a Tbsp or so of water or dot with butter. Add salt and pepper. Top with chops.
- Cover and bake at 325 about 30 to 40 minutes.

I had some fresh potatoes on hand and thought to make things easy it would be great to have a nice casserole - a big hit with the family. I use butter spray to butter the dish. I did not put salt on the potatoes as the soups are salty enough.

Steps:
- 1. Butter 9 x 13 baking dish. Place sliced potatoes evenly on bottom. Dot with thin slices of butter. Grind fresh black pepper to taste.
- 2. Mix cheddar and celery soups together with milk and parsley flakes. Add a few drops of hot sauce if desired. Pour evenly over potatoes.
- 3. Place pork chops on top of potatoes, evenly. Season with the worcestershire sauce and some Greek or other seasoning to taste.
- 4. Bake in 350 degree oven for one hour or until potatoes are done. Pork chops can be turned over halfway through if desired.
