PORK CHOPS IN BALSAMIC VINEGAR AND SHALLOT SAUCE

Pork Chops in Balsamic Vinegar and Shallot Sauce image

This is a quick yet tasty dish. The acidity of the balsamic vinegar is balanced by the sweetness of the shallots. I suppose the chops could be broiled rather than pan-fried, but you would lose the lovely drippings for the sauce.

PULLED PORK SANDWICH WITH BLACK PEPPER VINEGAR SAUCE AND GREEN ONION SLAW

Pulled Pork Sandwich with Black Pepper Vinegar Sauce and Green Onion Slaw image

Provided by Bobby Flay

Categories     main-dish

Time 14h15m

Yield 12 servings

Number Of Ingredients 31

1 cup ancho chili powder
1/3 cup Spanish paprika
3 tablespoons ground dried oregano
3 tablespoons ground coriander
3 tablespoons dry mustard
1 tablespoon ground cumin
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
2 teaspoons chile de arbol
1 (6-pound) pork shoulder
Salt and freshly ground black pepper
Salt and freshly ground black pepper
Chicken stock, if needed
1/4 cup rice wine vinegar
2 tablespoons Dijon mustard
2 teaspoons honey
1/2 teaspoon whole black peppercorns
Salt
1/2 cup plus 2 tablespoons canola/olive oil blend
Water, if needed
1 cup coarsely chopped green onions
1/4 cup red wine vinegar
2 serrano chiles
2 tablespoons mayonnaise
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1/2 cup pure olive oil
1 head purple cabbage, finely shredded
1 small red onion, halved and thinly sliced
1/4 cup freshly chopped cilantro leaves
Hamburger buns, for serving

Steps:

  • For the Dry Rub: Add all the dry rub ingredients into a medium-sized bowl and stir until thoroughly combined.
  • For the pork shoulder: Place the pork, fat side up, on a clean baking sheet. Season the pork on all sides with salt and pepper then rub the dry rub all over the pork, pressing into the meat. Cover the pork with plastic wrap and place into the refrigerator for 7 hours.
  • Black Pepper Vinegar Sauce: Place all the ingredients into a blender and blend until emulsified. Add water if the sauce is too thick.
  • Green Onion Slaw: Place the green onions, vinegar, chiles, mayonnaise, salt, pepper and oil into a blender and blend until emulsified. Place the cabbage and red onions in a bowl, add the dressing and stir until combined. Fold in the cilantro and season with salt and pepper, to taste.
  • For the pork shoulder: Remove the pork from the refrigerator 30 minutes prior to cooking. Following manufacturer's instructions and using lump charcoal and 1/2 cup drained wood chips for a smoker, or 1 cup for a barbecue, start fire and bring temperature of smoker or barbecue to 225 degrees F to 250 degrees F. Place the pork on the rack in smoker or barbecue. Cover and cook until an instant-read thermometer inserted into the center of the pork reaches 165 degrees F. Turn pork every 45 minutes, about 6 hours total. If using the smoker, after 2 hours place the pork into the smoker pan and fill halfway with chicken stock. (This is to prevent the shoulder from drying out.) Add more charcoal, as needed, to maintain 225 degrees F to 250 degrees F and more wood drained wood chips (1/2 cup for the smoker or 1 cup for the barbecue with each addition) to maintain smoke level. Transfer pork to a clean rimmed baking sheet. Let stand until cool enough to handle. Shred into bite-size pieces. Mound on platter and toss with most of the Black Pepper Vinegar Sauce, reserving the rest for drizzling the bun. Pour any juice from the baking sheet over the pork.
  • For assembly: Drizzle the sauce on the top and bottom of the bun. Top the bottom bun with the meat, another drizzle of sauce, Green Onion Slaw and finish with the top of the bun.

PORK CHOPS WITH VINEGAR AND SWEET PEPPERS image

Categories     Pork

Yield 4 servings

Number Of Ingredients 15

1 cup Sugar
1/2 cup table salt
2 quarts of water
4 loin pork chops Each 3/4 to 1 inch thick
Course ground black pepper
2 T. olive oil
1 large onion, chopped
1 large red pepper, cut into strips
1 large yellow pepper, cut into strips
1 sprig fresh rosemary
2 medium cloves garlic, minced
3/4 cup water
1/2 cup white wine vinegar
2 Tbsp cold butter
Chopped fresh parsley

Steps:

  • 1. Dissolve sugar and 1/2 cup table salt in 2 quarts water in large container; add pork chops and refrigerate 30 minutes. Remove chops from brine; thoroughly pat dry with paper towels, season with 3/4 teaspoon pepper, and set aside. 2. Adjust oven rack to middle position; heat oven to 400 degrees. Heat oil in heavy-bottomed ovensafe 12-inch nonreactive skillet over medium-high heat until oil begins to smoke; swirl skillet to coat with oil. Place chops in skillet; cook until well browned, 3 to 4 minutes, using spoon or spatula to press down on center of chops to aid in browning. Using tongs, flip chops and brown lightly on second side, about 1 minute. Transfer chops to large plate; set aside. 3. Set skillet over medium-high heat. Add onion and cook, stirring occasionally, until just beginning to soften, about 2 minutes. Add peppers, anchovies, and rosemary; cook, stirring frequently, until peppers just begin to soften, about 4 minutes. Add garlic; cook, stirring constantly, until fragrant, about 30 seconds. Add water and 1/2 cup vinegar and bring to boil, scraping up browned bits. Reduce heat to medium; simmer until liquid is reduced to about 1/3 cup, 6 to 8 minutes. Off heat, discard rosemary. 4. Return pork chops, browned side up, to skillet; nestle chops in peppers, but do not cover chops with peppers. Add any accumulated juices to skillet; set skillet in oven and cook until center of chops registers 135 to 140 degrees on instant-read thermometer, 8 to 12 minutes (begin checking temperature after 6 minutes). Using potholders, carefully remove skillet from oven (handle will be very hot) and cover skillet with lid or foil; let stand until center of chops registers 145 to 150 degrees, 5 to 7 minutes. Transfer chops to platter. Swirl butter into sauce and peppers in skillet; stir in optional 2 tablespoons vinegar and parsley. Adjust seasonings, then pour or spoon sauce and peppers over chops.

PORK BRAISED IN PORT AND BALSAMIC VINEGAR

Pork Braised in Port and Balsamic Vinegar image

One of my favorite dinner entrees: You can substitute red wine (and any red you can bear cooking with will do) for the port if you can't find any, however: It's miles better with the slightly sweet red. Note: If you have a CostPlus nearby, their chocolate port or hazelnut sherry go beautifully with this dish.

Add more charcoal, as needed, to maintain 225 degrees to 250 degrees and more wood drained wood chips (1/2 cup for the smoker or 1 cup for the barbecue with each addition) to maintain smoke level.

PORK RAVIOLI WITH LIME AND MALT VINEGAR DIPPING SAUCE

Pork Ravioli With Lime and Malt Vinegar Dipping Sauce image

This was my favorite recipe for 2008. It is a delicious, different and very flavorful dish. Just the thought of making this sauce makes my mouth water, but keep in mind, a little of it goes a long way. The ravioli freeze beautifully so are great for a make ahead appetizer. If using frozen, do not defrost. Boil them frozen. Ground chicken or turkey can be substituted for the pork.

Pork Cutlets with Figs and Balsamic Vinegar Recipe image

Pork Cutlets with Figs and Balsamic Vinegar Bon Appétit | October 1998
In this entrée, balsamic vinegar gives tartness to a cream sauce that balances nicely with the pork and figs. Sautéed spinach or chard would go well with the dish.
Yield: Serves 4
8 1/3 -inch-thick slices center-cut pork loin
1 1/2 tablespoons olive oil
1 tablespoon butter
1/4 cup minced shallots
3 tablespoons balsamic vinegar
1 cup canned low-salt chicken broth
6 fresh ripe figs, quartered
1/2 cup whipping cream
1 tablespoon minced parsley

Steps:

  • Preheat oven to 200°F. Sprinkle pork with salt and pepper. Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add 4 pork slices and sauté until brown, about 2 minutes per side. Transfer pork to baking sheet. Add remaining 1/2 tablespoon oil to skillet. Repeat with remaining 4 pork slices. Transfer pork to oven to keep warm. Melt 1 tablespoon butter in same skillet over medium-high heat. Add shallots and sauté until tender, about 2 minutes. Add 2 tablespoons vinegar. Simmer until vinegar evaporates, scraping up any browned bits on bottom of skillet, about 1 minute. Add chicken broth. Simmer until mixture is reduced by half, about 4 minutes. Add figs and whipping cream. Simmer until sauce thickens slightly, about 4 minutes. Add remaining 1 tablespoon vinegar and any accumulated juices from pork. Simmer until sauce thickens enough to coat spoon, about 2 minutes longer. Season sauce to taste with salt and pepper. Arrange pork on plates. Spoon sauce over. Sprinkle with parsley and serve. ROAST PORK WITH SAGE LEAVES AND VINEGAR

Roast Pork With Sage Leaves and Vinegar image

Provided by Moira Hodgson

Categories     dinner, main course

Time 3h

Yield 8 servings

Number Of Ingredients 7

1 2-pound boneless loin of pork, rolled and tied
2 tablespoons vegetable oil
Coarse salt and freshly ground pepper
1/2 cup balsamic vinegar
1 cup fresh sage leaves
Sprigs of sage
Slices of lemon

Steps:

  • Preheat the oven to 350 degrees. Using a heavy dutch oven or enameled casserole just large enough for the pork, brown the meat in the oil on all sides. Remove it from the casserole and season it with salt and pepper.
  • Add the vinegar, scraping up the cooking juices, and the sage, reserving a few leaves to go on top of the pork. Return the pork to the casserole and sprinkle the remaining leaves on top of it. Cover and bake, basting from time to time, for about two and a half hours, or until the temperature on a meat thermometer registers 155 degrees, which is high enough to kill any trichinosis bacteria. Do not overcook the pork or it will be dry and tough.
  • Let the pork cool in its cooking juices. Put the meat on a platter and pour the juices into a small container and put it in a freezer. When the fat on top has congealed, lift it off. The juices can now be heated up as a gravy or swirled into the plum sauce. To serve the pork, slice it thin and arrange it on a serving platter. Decorate it with sprigs of sage and slices of lemon.
