Steps:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • In large bowl, stir together seasoning mix and dressing. Add pasta and remaining ingredients; toss to combine. Serve immediately, or refrigerate.

1/4 teaspoon pepper
3/4 pound boneless skinless chicken breasts, cut into thin strips
1 tablespoon canola oil
DRESSING:
1/2 cup white vinegar
1/3 cup sugar
1 teaspoon dried minced onion
1 teaspoon ground mustard
1/2 teaspoon salt
1 cup canola oil
1 tablespoon poppy seeds
SALAD:
1 package (6 ounces) fresh baby spinach
2 cups sliced fresh strawberries
1 cup fresh sugar snap peas, trimmed
1 small red onion, chopped
1/2 cup pecan halves, toasted

2 1/2 pounds boneless, skinless chicken breasts
4 celery stalks, finely chopped
4 cups seedless grapes, halved
2 cups slivered almonds
2 cups mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons poppy seeds
2 tablespoons dried dill
1 loaf white sandwich bread

Steps:

  • Boil the chicken in a large pot filled with water until done, about 45 minutes. Drain the chicken and set aside to cool. Once the chicken is cooled, dice into small pieces and place in a large mixing bowl. Add the celery, grapes, almonds, mayonnaise, salt, pepper, poppy seeds and dill. Mix until the salad is fully combined. Cut the crusts off of the bread and place a few tablespoons in between each sandwich, pressing to make it easy to pick up. Cut on the diagonal to make 2 triangles to serve.

2 skinless, boneless chicken breast halves
1 head romaine lettuce, chopped
1 green bell pepper, cut into 1/2-inch dice

1/3 cup sugar

  • Place chicken in saucepan and boil until done, about 20-30 minutes. Let cool and cut into bite size pieces. Place chicken pieces in bowl and add curry powder, pepper and lemon juice and toss lightly; refrigerate until cold. Combine grapes, walnuts, ginger, mayonnaise and sour cream and add to cooled chicken and mix well. Refrigerate until ready to serve. 2 (8 ounce) packages ravioli, can substitute boxed but fresh is so much better (Ravioletti)
1/2 red pepper (chopped)
4 ounces pine nuts (substitute slithered almonds)
4 ounces sharp cheddar cheese (cut in small chunks or strips)
8 ounces grilled chicken (cut in chunks or strips)
1/4 cup craisins (optional)
10 ounces poppy seed dressing (to taste)

Steps:

  • Cook mini ravioletti to package directions. Throw in freezer for 10 minutes to chill.
  • In the mean time cut up veggies, cheese & chicken. (please no canned chicken).
  • Add cut up veggies, cheese, chicken & pine nuts to mini ravioli's.
  • Add Poppy Seed Dressing little by little to the desired amount.
  • If you like things real sweet add the craisins.
  • Toss, refrigerate & check again in 2 hours Add more dressing if needed.

4 small boneless skinless chicken planks, cut in bite size pieces
1/2 c raspberry walnut vinaigrette
2 tsp poppy seeds
1/2 c diced red apple, cored but unpeeled
1/2 c red bell pepper, diced
1/4 c chopped almonds or walnuts, optional
1/2 c navel orange segments. diced
1/2 c red grapes, halved
1/2 c pineapple, chunks drained
1 small personal size seedless watermelon, sliced in 1/2
DRESSING:
1/4 c mayonnaise, to taste
1/4 c light honey(dark is to strong)
1/4 c thawed limeade concentrate, undiluted

Steps:

  • 1. Remove rind from melon and slice in 1-inch slices - stack 3 slices high and slice into 8- tri-angles. Stack the tri-angles in a circle like above photo forming a circle with pointed ends out- leaving a center open on a large cake plate; chill until ready to use.
  • 2. Put chicken pieces in raspberry vinaigrette in a ziploc freezer bag. Refrigerate to marinate for 1 hour. Remove chicken from marinade with tongs and discard marinade. Sauté chicken in 1 Tablespoon olive oil until cooked through, Chill.
  • 3. Mix the chicken, and fruit,nuts together in a large bowl. Combine dressing ingredients and blend well - pour over chicken mixture in bowl, stir to coat evenly.
  • 4. To serve. Fill center of melon star, mounding it up. Top with a few slivered almonds, if desired.

1 cup honey teriyaki marinade
1 pound boneless skinless chicken breasts
6 cups torn romaine
3 medium kiwifruit, peeled and sliced
1 can (20 ounces) unsweetened pineapple chunks, drained
1 can (11 ounces) mandarin oranges, drained
2 celery ribs, chopped
1 medium sweet red pepper, chopped
1 medium green pepper, chopped
1 cup fresh raspberries
1 cup sliced fresh strawberries
3 green onions, chopped
1/2 cup salted cashews
1/3 cup reduced-fat poppy seed salad dressing

Steps:

  • Place marinade in a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 8 hours or overnight. Drain and discard marinade., Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 170°., Slice chicken. Divide the romaine, kiwi, pineapple, oranges, celery, peppers, raspberries and strawberries among six plates; top with chicken. Sprinkle with green onions and cashews. Drizzle with salad dressing.
